A baker’s quest for the best never ends! I read a different way to mix butter into scone dough in a post by @cooking.w.class. It’s actually an @joannebchang Maple-Blueberry Scone recipe printed in @nytcooking by @doriegreenspan —how’s that for name dropping😂. All are such skilled bakers I jumped right up to bake these scones. The difference from most scone recipes is that half the cold cubed butter is completely blended in with the flour, the remaining butter barely mixed in leaving small chunks of butter. Swipe to see that in my dough. The result is a tender crumb from the fully mixed in butter and a little flaky/crumbly texture from the butter chunks. The technique works exceptionally well with a part whole wheat dough, which I always like for the added grain flavor and nutrition. These scones are lightly sweetened with maple syrup and really shine with the added maple glaze—don’t skip it! PS- I used frozen mixed berries instead of fresh blueberries. Turkey any way you like it! Making these birds will keep kids or grownups busy until the big bird is sliced. Happy Thanksgiving! #cornbreadmuffins #driedfruit #raisins #homebaking #reciperose #whatsinrosieskitchen Ingredients * 1 pkg 8.5oz cornbread mix (or your favorite recipe) * 1/4 cup raisins * fresh or dried apples * dried apricots, prunes, raisins, currants * peanut butter for ‘glue’ * toothpicks for attaching fruit Instructions * Prepare cornbread batter as package directs.

Stir 1/4 cup raisins into batter. Fill muffin cups 3/4 full.

Bake muffins according to package directions. Cool.
 To decorate: * Make two slits in the muffin, one slightly larger for the feathers. For tail feathers, cut strips of apricots and prunes. Pinch ends together. Insert into the larger slit and arrange fan-like, using toothpicks if needed for support. Use a dab of peanut butter to stick a raisin or currant to a fresh or dried apple slice. This is what happens when I clean out my pantry drawer and find extra cocoa powder! My favorite cookie CHOCOLATE-COCOA NIB SHORTBREAD Original recipe by Cindy Mushet, as posted in @food_gal_carolyn I’ve doubled the recipe for you. You’re welcome! Makes 36 cookies Ingredients * 1/2 cup granulated sugar * 1 cup (2 sticks) unsalted butter * 1-3/4 cups (9.5oz/270g) unbleached all-purpose flour * 6 Tbsp. 3oz/85g) * 1/4 tsp salt * 1/2 cup (2oz/56g) roasted cocoa nibs * 4-5 Tbsp. sanding or raw sugar crystals Instructions abbreviated here. Full instructions link in my bio.
 * Place granulated sugar, butter, flour, cocoa and salt in a food processor fitted with the metal blade. Process for about 45 seconds. Scrape down bowl and break up any large clumps with rubber or silicone spatula. Process for another 15 to 30 seconds, until dough looks uniformly dark and forms large, shaggy clumps. Add cocoa nibs and pulse 4 or 5 times to mix into the dough….
 * Squeeze dough into a log about 24 inches long and about 1-1/2 inches in diameter, and gently roll it back and forth until smooth. (Rosie rolls it on parchment paper, which can them be used to wrap the dough for the freezer). Don’t add flour if the dough is sticky — simply refrigerate dough for 15 to 20 minutes to firm up the butter, then try again.
 * Preheat oven to 300F and position and oven rack in the center. Line baking sheet with parchment paper.
* Slice into 3/8-inch-thick rounds. Bake 30min until cookies look dry on top and crisp on bottom. WHOLE-BANANA BANANA BREAD (recipe below) I’d never thought of using bananas AND the peel in banana bread! Posted by @joeyonan in the Washington Post, the trick is to freeze then thaw overripe bananas. Then blend in a food processor (or blender) and make the banana bread as usual. The peel adds a little extra potassium, magnesium and fiber but the big deal is no waste. And added banana flavor. I made a few changes to Joe’s recipe, that he adapted from @zingermansbakehouse My variations: Less sugar and butter, and my tasters would probably reduce even more. Added walnuts and dates (Joe Yonan added black sesame seeds which I’m sure is yum). Chocolate chips or cacao nibs would be good add-ins too! #bananabread #homebaking #ripebananas #reducewaste #whatsinrosieskitchen #reciperose WHOLE-BANANA, BANANA BREAD 2 large very ripe bananas, unpeeled, washed well (about 12 oz/340g) 5 Tbsp. (70g) unsalted butter, melted 3/4 cup (150g) granulated sugar (or ½ cup to your preference) 2 large eggs 1 tsp. vanilla 6 large medjool dates, pitted and halved 1-½ cups (180g) all-purpose flour 1/2 cup (60)g whole wheat flour 1 tsp. baking soda 3/4 tsp. Fine table salt 1 cup chopped walnuts, toasted optional 1) Cut the tips off both ends of the bananas. Freeze the washed bananas at least 8 hours or until completely frozen. Then defrost at room temperature for about 2 hours. The skin will turn dark. 2) Preheat oven to 375F. Butter or coat with cooking spray an 8 or 9-inch loaf pan. If desired, line the pan with parchment paper leaving at least 1-inch overhand on the long sides. 3) In a food processor, puree the unpeeled bananas until smooth. Blend in the butter, sugar, eggs, and vanilla. 4) Add the dates; pulse to chop into small pieces. Add the flours, baking soda, and salt. Pulse, then whirl briefly just to blend. Do not over-blend. Stir in walnuts. 5) Pour into the prepared pan. Bake 60-75 minutes until a toothpick inserted in center comes out clean. The top will be well browned.
