Chicken Adobo Round 1
Chicken Adobo made with this recipe:
Ingredients
For the Chicken Adobo:
2 tablespoons cooking oil (I use coconut oil)
1 small onion, cut in half and thinly sliced
5 garlic cloves, peeled and thinly sliced
3 inches fresh ginger, peeled and thinly sliced lengthwise
2 pounds boneless skinless chicken thighs
⅓ cup tamari or soy sauce
⅓ cup apple cider vinegar (white vinegar or rice vinegar will work too)
2 teaspoons maple syrup or honey
½ cup water
Finely chopped green onions
For the rice:
1½ cups white rice (thai jasmine or basmati), rinsed several times
1 cup coconut milk (the canned variety, not the watery tetra pak stuff)
2 cups cold water
2 small pinches sea salt
Instructions
For the chicken adobo:
Heat the oil in a heavy pot (I use my dutch oven) set over medium high heat.
Add the onion, garlic and ginger and sautee for a couple of minutes until they start to soften.
Add the chicken, tamari or soy sauce, vinegar, maple syrup and water. Stir everything around a bit, and bring to a boil.
Turn the heat to low, cover and let the chicken cook for about 30 minutes.
Remove the lid and let it simmer another 15-20 minutes or until the sauce begins to reduce and thicken up a little bit (you don't want the mixture to boil vigorously).
Check the chicken for doneness, then remove the pot from the heat, sprinkle with green onions, and serve with the rice, spooning the sauce over top for extra flavour.
For the rice:
While the adobo is cooking, combine the rinsed rice, coconut milk water and salt in a small pot, and put the lid on.
Set it over medium-high heat and bring to a boil.
Turn the heat to low and steam (don't take the cover off!) until the liquid is all absorbed, about 15 minutes.
I used boneless, skinless chicken breasts, instead of thighs-- HORRIBLE MISTAKE. Very dry. The sauce is delicious enough that it is edible, but damn, it does not fall apart like adobo should. This recipe doesn’t call for bone or skin on the chicken, which should have been a red flag. The skin and bone help create and trap moisture in the meat. I also switched over to breasts instead of thighs, which is a dryer part of the chicken in general. So, next time I’m stickin’ to thigh pieces with the SKIN and BONE-- v crucial. I am also going to marinate the chicken prior to cooking to ensure maximum moisture and flavor.
Making the rice with watery coconut milk (not thick can, but not coconut water) and water. I thought I had a can, but I didn’t. Darn. Zack could taste the coconut, but I couldn’t. Gonna try the can next time. 
Making baby greens (spinach, kale, chard) with this recipe:
Ingredients
1 tablespoon canola oil (sub. 1/2 sesame oil, 1/2 coconut oil)
2 garlic cloves, minced
1/2-inch piece ginger, peeled and minced
1 small box of greens, such as collards, kale, Swiss chard, bok choy, spinach or arugula, washed with water still clinging and chopped
1 tablespoon oyster sauce (sub. fish sauce)
2 teaspoons soy sauce
2 teaspoons rice vinegar (sub. sake, white wine vinegar)
1 teaspoon sugar
2 tablespoons sesame seeds (optional)
Directions
In a large skillet, heat oil over medium high heat. Add garlic and ginger; sauté for 30 seconds stiring constantly so they don't burn.
Add greens and sauté until wilted, 5 - 10 minutes (delicate greens will cook in a shorter amount of time vs. heartier greens.)
While greens cook, whisk together oyster sauce, soy sauce, vinegar and sugar in small bowl.
Add sauce to greens and cook another 2 minutes. Remove from heat.
Sprinkle with sesame seeds and serve
These greens turned out really nice. The small box was enough for 4 people. 
Over all, these recipes were on point flavor wise, and perfect for 4 people, with no left overs. Next time gonna use this foundation and incorporate the recipe below, with the key being chicken thighs with the bone and skin, and marinating before. Possibly look into a dutch oven. They look cool.
Next time I want to try this Chicken Adobo recipe:
4 pounds chicken thighs (with bones and skin)
1½ cups distilled white vinegar
½ cup soy sauce
2 tablespoons olive oil or other cooking oil
1 medium onion, halved and thinly sliced (1½ cups)
1 head of garlic, cloves separated, flattened, peeled, and roughly chopped. (about 6 tablespoons chopped)
1 tablespoon plus 1 teaspoon Thai fish sauce or Filipino fish sauce
1 teaspoon freshly ground black pepper
2 dried bay leaves
ADD: Ginger 
INSTRUCTIONS
Marinate Chicken: Put chicken in a non-reactive bowl or casserole. Combine the vinegar and 1 tablespoon of the chopped garlic. Pour over chicken and turn to coat. Marinate in the fridge or in a cool place for 30 minutes. Remove chicken from the marinade, allowing excess to drip back into the bowl and transfer chicken to a clean plate. Reserve the marinade.
Brown Chicken & Aromatics: Heat oil over medium heat in a large dutch oven or another heavy pot with a lid. Pat chicken lightly with a paper towel to dry. Brown in batches (4-5 pieces at a time), starting skin side down for 3-4 minutes. Turn and brown for just a minute on the other side. Transfer to a clean plate. Repeat with all the chicken. Pour out all but 2 tablespoons fat from the pot. (hint: It's easier if you pour it all out, into a small bowl or coffee cup, and then add back the 2 tablespoons) Set the heat to medium-low, add onions and the rest of the garlic to the pot and sauté, stirring occasionally, for about 10 minutes, until the onions are softened.
Simmer Chicken: Return the chicken to the pot along with any accumulated juices, vinegar-garlic marinade, soy sauce, fish sauce, black pepper, bay leaves and ¼ cup of water. Toss chicken with onions and sauce to coat. Bring to a boil. Lower to a simmer. Cover and cook at a low steady simmer for 30 minutes.
De-fat the sauce before continuing (I don't like a lot of unnecessary fat in my food so this is a step I often do when I'm cooking a soup or stew, though it's not required.) Turn off heat for 5 minutes to let the fat rise to the surface. Use a teaspoon to carefully skim off several spoonfuls of fat. The fat will be clear vs the sauce, which is brown. No need to get all the fat. You can always skim more when the dish is done, if you like.
Finish: Return the pot to a simmer. Toss chicken to coat with sauce. Cover and simmer gently for 30 more minutes, until the chicken is tender and the sauce is a rich brown color. Serve over rice.

You swing by Ayala Terraces and plan to eat each stage of your four-course meal at different restaurants when you see the appetizers served at TGIFridays and got to really contemplate if you could even extend your appetite up until desserts when all you really wanted was also to taste the oriental soup at Big Mao, some Vietnamese favorites at Lemon Grass and some cheesecakes paired with iced coffee at Bo’s.
Well I guess I’ve convinced you not to push through with your trip. Even the King of Sinulog thinks that a food trip in Cebu is a bad idea because once you’ve experienced it, you wouldn’t want to look elsewhere.
