Il pane di Cerchiara.

Il Pane di Cerchiara si riconosce perché è compatto, rotondo e con una sorta di gobba, cioè di rigonfiamento laterale, la cosiddetta “rasella”, data dalla chiusura che viene fatta ripiegando la pasta su stessa, proprio come una volta. La grossa forma e il lento raffreddamento del forno conferiscono alla pasta la giusta cottura e le fanno mantenere tutto il profumo e gli aromi. La lunga lievitazione, di almeno sei ore, in larghi cassettoni di legno, è responsabile della sua leggerezza e digeribilità, oltre a fare sì che questo pane duri molto di più degli altri nel tempo, anche fino a 10 – 15 giorni.
