Happy National Martini Day!   James Bond may have liked his martinis shaken, but many bartenders suggest stirring them for a more velvety drink. The first official mention of Martini was in The New and Improved Illustrated Bartending Manual in 1888. Harry Craddock, author of the Savoy Cocktail Book popularized the martini with his dry martini recipe in the 1930s. The martini glass was used for other drinks before the actual martini became popular. It was originally known as a cocktail glass. National Black-eyed Peas Day Cultivated since pre-historic times in China and India, they are related to the mung bean. The ancient Greeks and Romans preferred them to chickpeas.   In the American South, eating black-eyed peas and greens (such as collards) on New Year’s Day is considered good luck: the peas symbolize coins and the greens symbolize paper money.   They are a key ingredient in Hoppin’ John (peas, rice and pork) and part of African-American “soul food.”   Originally called mogette (French for nun). National Bouillabaisse Day The name #Bouillabaisse comes from the method of the preparation — the ingredients are not added all at once. The broth is first boiled, then the different kinds of fish are added one by one, and each time the broth comes to a boil, the heat is lowered.   The dish known today as #Bouillabaisse was created by Marseille fishermen who wanted to make a meal when they returned to port. Rather than using the more expensive fish, they cooked the common rockfish and shellfish that they pulled up with their nets and lines, usually fish that were too bony to serve in restaurants, cooking them in a cauldron of sea water on a wood fire and seasoning them with garlic and fennel. Tomatoes were added to the recipe in the 17th century, after their introduction from America. According to tradition, the origins of the dish date back to the time of the Phoceans, an Ancient Greek people who founded Marseille in 600 BC. Happy National Pepper Pot Day! This unique combination of tripe and vegetables seasoned with pepper and other spices is a vintage American soup.   During the Revolutionary War, the Continental Army was fighting for the newly formed country of the United States of America. They camped at Valley Forge during the cold and harsh winter of 1777-1778. In the battle of Valley Forge, the army was feeling an unusually severe winter.   They were unable to get proper food as the farmers in that region sold all their stocks to the British Army for cash. The farmers have refused to sell their goods to the Continental soldiers as they paid only a few currencies for their crops.   A baker general of the Continental Army named Christopher Ludwick had prepared food with items he gathered to feed the cold and fragile soldiers. The chef had found some peppercorn, small bits of meat, tripe and other ingredients.   Everything was mixed with other seasonings till it attained hot, thick, and spicy soup. The soup is also called Philadelphia #PepperPot. According to a report in a 1953 article in The Philadelphia Bulletin, the hoagie was started by Italians working at WWI-era shipyards in Philadelphia.
