I'll be honest in that Fi hasn't gotten very fleshed out yet because my AU has her still mostly dormant within her sword. The only appearance of her so far has been when Link is struggling in Roostburrow and needs someone to talk to, but she's unresponsive.
As for what she is and how she was created, she is extremely similar to what Ghirahim is in this AU - born a mortal, but then bound to a sword later on.
I've mentioned in the Magicka and Musicka lore post that one can bind a soul to a conduit to increase it and the soul's power. But it's an incredibly painful and difficult process, both to bind or to unbind oneself to a conduit. Though on the surface one may recover, there can be permanent damage done to a person who undergoes this.
The Goddess Sword is one such conduit, and Fi was soulbound to it in the distant past when in her early-mid teens. Before doing so, I imagine she was an Apprentice Priestess in service to Hylia (and I'm leaning Sheikah for her). I think she would have been extremely book smart in her previous life, given her intelligence in the game - maybe that's why she was a good candidate as a guide for the Chosen Hero. Giving her life to the sword to aid Hylia in fulfilling that prophecy would have been seen as a divine duty and great honor. But undergoing that process may have drastically changed her ability to express emotions.
Ghirahim feels sorry for her, but in a superior sort of way. He thinks his side of this ancient feud is much more noble and moral than Hylia's. He expresses that a bit here in Ch07, where he mentions thinking of her as a child soldier.

He can't fathom someone as young as Fi undergoing the ritual by choice, but fails to see that his choice to do the same in allegiance to Demise is just as ethically complicated.
