Ramsay-fication of Authenticity

I was casually scrolling through instagram when I came upon a post regarding Gordon Ramsay opening up his own “Authentic Asian Restaurant.” Hearing this news, I was bewildered and was upset knowing that one of my favorite celebrity chefs was appropriating Asian culture (whatever this singular Asian culture is).
Before I start this post, I just want to make something clear. It’s not just food. I’m not blowing things out of proportion because it is “just food.” Food carries meaning. Yong Chen, a professor of history at University of California, Irvine, emphasizes the importance of food as embodying political, socioeconomic, and cultural identities within its existence (Chen 2012, 1). Food isn’t just ingredients concocted and consumed as just food. Food is instrumental in understanding cultures and the way of life of cultural societies in a digestible form; it’s existence bridges the synapse between individual and culture, creating an ephemeral but meaningful connection between man and culture through food.

Back to Gordon Ramsay and his “Authentic Asian Cuisine.”
His restaurant group describes this endeavour of his as:
A revolutionary new venture and concept for the group, the restaurant is set to be an authentic Asian Eating House and vibrant late-night lounge, inspired by the drinking dens of 1930s Tokyo and the Far East.
Ramsay discusses of his most recent endeavour in food, stating:
"I can't wait to open the doors at Lucky Cat and bring a new flavor of Asian food and culture to Mayfair. I can honestly say there will not be a bad seat in the house—every table will have a unique view and each guest will come away having experienced something sensational—whether it be the phenomenal menu, the amazing service or the stunning look and feel."
I take issue with how Ramsay describes his restaurant. First and foremost, he encapsulates the entirety of Asian cuisine into a singular culture. His encapsulation of the entirety of Asia into one is a modern form of orientalism in which he others and exoticizes Asia. Orientalism, as explained by Edward Said, is a European invention in which it exoticizes and romanticizes the people, the culture, and the land (Said 1978, 2); not only that but Ramsay’s commodification of culture exemplifies an assertion of colonialist ideologies and cultural appropriation.
Cultural appropriation. A term familiar and commonly used in contemporary times is the decontextualization of cultural history, expressions or artifacts that belong to a culture that is not their own and recontextualizing the culture into a new cultural sphere (Vasalou et al. 2014, 1). Having commodified “Asian culture” into his world of expertise (gastronomy and restauranteurship), Ramsay exploits the culture to further business.
Yes, I understand that he also wants to introduce culture to Mayfair, but his introduction of culture through food is biased. His perception of Asia food culture is vast, but it lacks the history, meaning, and expression due to his already recontextualized understanding. Though he does create and introduce the food to Mayfair, he introduces foods with his own biased flavors and accords; even if he has a mastery of foods, he lacks the cultural experience embodied within the foods.
This is not to say that Ramsay cannot open his own Asian restaurant; he can do that, no problem. But to label it as authentic is polarizing as authenticity holds a multiplicity of meanings and conveys an ownership of cultural heritage.
Renato Rosaldo, a famed anthropologist for his research on the Ilongot people of the Philippines, discusses the significance of life experience, and how it garners a sense of security but its dangers as well (Rosaldo 1993, 8). This is relative to Ramsay’s prowess as a chef. He has succeeded in a multiplicity of cooking styles evident in the multitude of Michelin stars he’s acquired and the numerous successful TV shows he’s aired. However, his success though rampant is not necessarily a badge for him to label things he has not lived-in as authentic. His definition of authentic is driven by the falsehood of his ego of expertise and knowledgeability. Though this does provide a sense of agency for his culinary prowess, the criterium for authenticity is vastly different.
Though I don’t doubt that his food is spectacular, but to say it is authentic is a fickle thing to do. It is probably best to say that his food is inspired rather than authentic. As him using the latter in addition to his identity creates a narrative in which he has taken from the culture.
So Gordon, please be mindful of the notions of authenticity.
