Springfield-style Cashew Chicken! Poultry week is full effect. Tonight’s meal is a classic where I live and can rarely be found elsewhere. This is the recipe created by @leongsdiner years ago and it’s amazing. People who grow up here and leave often grab this dish while in town visiting friends and relatives. It’s double battered fried chicken breast pieces with a “gravy” made with chicken broth and oyster sauce topped with toasted cashews and green onions. Served with white rice. So. Damn.
