I think Dracula’s destruction of the crew of the Demeter is for more reason than just him wanting a snack. I think, for whatever reason, he wants to arrive in England with no witnesses. He’s in one of the boxes; his weight would be noticed when they were unloaded. It would be difficult to be sure of conveniently getting off the boat separate from the boxes, both because he can’t leave it as a man (there was no passenger) and because he can’t cross running water. The death of the crew lets him crash the boat directly into the shore, so it is in physical contact with land, and then depart it as a wolf.
He’s not miscalculating. He’s causing the mist on purpose. He’s getting rid of the crew on purpose. He’s crashing the ship on purpose.

The Last Voyage of the Demeter
...is some excellent cinematic Dracula fan fiction.
It's also a pretty good adaptation of Dracula in general, in the sense that it gives a miniaturized version of the overall plot within the confines of the Demeter. I would much rather rewatch Last Voyage than, say, Coppola's travesty.

One thing I will give Voyage of the Demeter: it’s not afraid to show you the monster.
I’m not a big watcher of horror movies, but I have seen a few in the last couple of years, and kept getting disappointed that the monster got like two minutes of screen time, usually right at the end. (It was doubly annoying because I was watching those movies because of the actor playing those monsters.) VoD, however, really wants you to see its monster. There’s a some build up, and takes a bit for a full reveal, but Dracula gets to be on screen a lot. And they’ve gone for a monstrous, Nosferatu-esque design, which is cool.
