I'm just gonna tell myself the reason why Jay's mom is just never acknowledged in the show is because she literally just always dipped. This woman probably bought a cool looking outfit for when she was needed, jumped in when there was a battle then immediately left to live her life. The way she was talking about marrying an actor like no one already knew like she probably kept in contact with NO ONE, her referring to the previous elemental master of ice as just "ice" because she has no clue who he was😭. Wu probably say Jay refer to Ed and Edna as his parents and thought "Damn she really dipped on her only kid too💀" and didn't have the heart to tell Jay he was adopted .
