Jook 죽, a Korean rice porridge, is a popular dish that can be eaten as a light meal or when one is sick because it is easy to digest. This creamy porridge is one of the best comfort foods commonly served to the sick, elderly, and babies. Jook is commonly used as baby’s first foods, known as "Iyushik" 이유식 in Korea. Now that my baby has started to transition into more thicker consistency foods, it is a perfect way to add more texture and to introduce different proteins.

There are many different variations on this Korean porridge recipe made with different grains, proteins, and vegetables. This vegetarian jook recipe is a healthier twist using lentils and brown rice. You can also use chicken or beef broth, as well as add different meats & seafood for different flavors and textures. Also, try saving some of the stock and using it to make different Asian soups for more flavor!

Brown Rice Vegetable Porridge 채소 현미죽

Ingredients:

1 ½ cups of brown rice

¼ cup of lentils (I use green)

1 tbsp of sesame oil

1 medium carrot

2 cups of spinach

1 cup of broccoli

For the stock

1 yellow onion (cut in ½)

⅓ of daikon radish (cut in ½)

8-10 dried anchovies

6-8 garlic gloves

5-6 green onion stems

6 pieces of dried kelp about 2 inch squares

10-12 cups of water

Directions:

1. Wash & Soak the rice and lentils for about 120 minutes.

2. Place all the ingredients for the stock in a large pot. Cover the ingredients with water.

3. Bring to a boil then reduce heat to medium high for about 90-120 minutes.

4. Strain the broth & discard the solids.

5. In a separate pan, heat the sesame oil over medium heat.

6. Saute the carrots, spinach, and broccoli for 2 minutes until it is slighty soft.

7. In a separate pot, heat the sesame oil over medium heat and add the rice and stir fry everything together for another minute.

8. Add the vegetables to the pot and stir fry everything together for another minute.

9. Add the soup stock so that it covers about ½ an inch above the ingredients. Bring it up to a boil.

10. Reduce the heat to a simmer, give it a stir, and cook at low heat for about 30 minutes.

어엿하다: respectable, decent 태도가 아주 번듯하고 당당하다. Decent and dignified in one's attitude.

우여곡절 (迂餘曲折): complications; ups and downs 복잡하고 어려운 사정. Circumstances which are complicated, not smooth.

진부하다: old-fashioned, typical 낡아서 새롭지 못하다. Old and unoriginal.

고사하다 (固辭하다): refuse 권유나 요청을 굳이 거절하다. To decline someone's suggestion or request.

짓궂다: provoking, perverse, nasty 장난스럽게 남을 괴롭히고 귀찮게 굴어 미운 느낌이 있다. Someone or something being annoying because he/she or it bothers or harasses one in a wicked or playful manner.

이유식: weaning food, baby food 젖을 떼는 시기의 아이에게 먹이기 위해 부드럽게 만든 음식. Soft food made to feed a baby in the weaning process.

올곧다: upright, square, right-minded 마음이나 정신, 행동 등이 바르고 곧다. One's mind, behavior, etc., being right and honest.

개선: improvement 부족한 점, 잘못된 점, 나쁜 점 등을 고쳐서 더 좋아지게 함. The act of reforming shortcomings, wrong or bad sides to character and making them better.

작심삼일 (作心三日): short-lived plan, short-lived resolution 단단히 먹은 마음이 사흘을 못 간다는 뜻으로, 결심이 강하고 단단하지 못함. A word meaning that one cannot keep one's resolution longer than three days, namely that one's resolution is not strong and firm.

동기 부여 (動機附與): motivation 자극을 주어 생활체로 하여금 행동을 하게 만드는 일. the act of stimulating a living body into action.

윽박지르다: bully, browbeat 심하게 마구 눌러 기를 꺾다. To suppress severely and dampen the spirits of others.

백해무익 (百害無益): doing more harm than good/good for nothing 나쁘기만 하고 도움되는 것이 전혀 없음. A state in which something is solely bad without doing any good.

돌파: vanquishment, conquest 어려움이나 위기를 극복함. The act of overcoming a difficulty or crisis.

돌파: breakthrough 정해진 목표나 이전의 기록을 넘어섬. The act of surpassing a set goal or previous record.

박진감: excitement 힘차고 빠르게 전개되어 생동감이 있는 느낌. A feeling of being lively due to the energetic and quick development of something.

적재적소 (適材適所): right job, right work 알맞은 인재를 알맞은 자리에 씀. 또는 그런 자리. The act of using the right person for the right position, or such a position.

금요일부터 주말까지 같이 있어서 좋았다. 당근 폭발해서 꽤 거래를 많이 했고, 스타필드도 가서 처음으로 세 가족 앉아 밥도 먹고 커피도 마셨다. 감개무량. 토요일에는 조카가 오랜만에 와서 시간을 보냈고 일요일에는 나들이 잠깐, 2차 집 정리. 집 정리는 아마 10차 정도까지 할 듯 하다.

C와는 조금씩 인간적으로 친해지는 것처럼 보인다. 특히 분유 먹일 때보다 이유식 먹일 때 교감하는 기분이 든다. 더 인간 같다고 할까. 우리가 식탁에서 밥을 먹거나 간식을 먹을 때 자기도 달라고 이제 입을 벌린다. 그저 배고픔에 울부짓는 다람쥐였는데 이제 먹는 기쁨에 대해 배우고 있다.

제3의 방을 놀이방으로 만들자는 제안에 이제 집 정리를 추가로 해야 한다. 이거를 이쪽으로 치우면 이쪽에 있던 건 저쪽으로 가는 연쇄 반응이 일어나서 온 집 안정리로 확전됐다. 덕분에 한바탕 뒤집으면서 팔거 팔고 나름의 미니멀리즘을 실천 중. 하지만 완전한 완성 후의 그림은 아직 미지수다. 일단 치우고 보는거다.

새벽에 3-4시쯤 매번 깨서 운다. 일어나보니 주변에 아무도 없도 혼자 남은 거 같은 쓸쓸함에 엄마 부르는 것 같은 울음. 먼 발치 방에서 그 울음을 듣고 있노라면 “좀 이따 혼자 자지 않을까?”하는 기대에 잠을 이어보지만 자지러지는 울음소리에 기어코 가서 쪽쪽이를 물리거나 옆에서 같이 잠을 잔다. B가 옆에서 많이 자게 되는데 피곤의 한 이유인듯 하다. 잘 자주길 매일 자기 전에 기도하지만, 아기니까. 지금은 잘 달래줘야지.

"초딩 입맛"

어릴 때 밀크쉐이크가 먹고 싶은데 용돈이 부족할 때, 동네 친구와 돈을 합해 콜라와 아이스크림콘을 각각 사서 둘을 섞어 먹곤 했다. (콘은 따로 먹고 아이스크림만 활용.) 그러면 화학 반응을 일으키며 콜라도 아이스크림도 아닌 밀크쉐이크 비스므리한 맛이 났거든... 이 싸구려 음식은 달고나, 쫀드기, 라면땅(=자야) 등등과 함께 내 '초딩 입맛'을 형성한 원천 중 하나다. 지금은 단 거를 별로 안 좋아하는 나이가 됐고, 더구나 콜라 + 아이스크림은 딱 봐도 칼로리 폭탄이라 이렇게 먹을 이유는 없다. 작년부터 제로 콜라가 유행하던데 문득 그 시절 생각이 나서 시험 삼아 우유 + 제로콜라를 섞어 보니 잠재돼 있던 초딩 입맛이 되살아 난 듯... 뭣보다 칼로리 걱정이 없어서, 밀롱가에서 놀고 집에 왔더니 약간 출출할 때 이유식 먹는 느낌으로. 내 입맛엔 펩시, 코카 콜라중에선 펩시가 좋았고, 우유 : 제로콜라 비율은 6 : 4 또는 7 : 3으로.
