They are, at base, human. So unlike wolves they likely can actually sweat; but they are also canines, so the instinct is to pant. So both, the answer is both.

That is, of course, if you aren't using the ones that can only be harmed by magic or silver, at which point they do neither because it can't actually harm them in any way.

I believe I explained this in different post, but to reiterate:

There are three ways to become a werewolf: the first is to be cursed by some form of magic user, this being how werewolves started out. The second is to be infected, which entails having werewolf saliva enter an open wound on your body (I.E. Because it bit you). The final one is being the biological child of a werewolf.

These are the only ways to become a werewolf, even something like a blood transfusion wouldn't pass it on. It is, fundamentally, a magical effect, tied to the soul.

(The biting thing only works while in werewolf form, so Steven can still heal people in human form).

so when did greg first turn? he looks a little older than steven is. did this happen soon after he was bitten? was he a late bloomer? how does werewolfishness pass on genetically?

Greg was bitten on a night after a rock show, a time just before he met Rose, by some out-of-town stranger. so, he's in his very early twenties here. about an hour or so after the bite is when the first shifting begins.

as for the genetics thing, i think @stevenuniversewerewolfau might have a more in-depth answer? but basically: once you've been infected by a werewolf bite, any descendants you have afterwards will have the same infected blood.
