Iron golems can walk up a full blocks height, meaning that they can at least move their legs 3 feet up, and when going off the model if we assume they can lift their legs at least 3 pixels, it would be enough to step on a coconut (one pixel is about 2.5 inches or 6.25cm), also, iron golems are able to move their arms from resting state to above their heads in just a few ticks, which with the mass iron, as well as the speed of the arms, should easily be able break a coconut.

Doing the math, one iron golem arm is 4 pixels by 6 pixels by 30 pixels, giving it the size of .17 cubic meters, or 6 cubic feet, with the density of iron, this puts one iron golem arm at a little under 1400kg or about 3000lbs. The distance that the arm can go is from about straight down, to about parallel to the ground in one tick, but we will give a margin of error and just say it is 2 ticks (.1 second), this gives the speed of the arm moving to be about 26.5 METERS PER SECOND or just under 60 MILES PER HOUR. This would be the same as a car hitting a coconut at highway speeds.

If you are thinking "Oh how could steve survive being hit?" Well steve is ungodly amounts of strong. At his best he could carry a full inventory of shulkers of stacks of god apples, which we know have 8 gold blocks, giving him the ability to carry over 11 tons of material while still being able to jump a meter in vertical distance.

so i thought about this a little bit too much and made a list of which mobs could either open a coconut, possibly open a coconut, or could not open a coconut, containing every single mob that has ever been in the game.
