Analyzing the Complex Relationships of Aroma Perception
Prof Verstrepen explained that beer, like most food products, contains hundreds of different aroma molecules that are detected by our taste buds and nose. Unraveling the Chemical Makeup of Belgian Beers
The researchers analyzed the chemical composition of 250 commercial Belgian beers, representing 22 different styles, including lagers, fruit beers, blonds, West Flanders ales, and non-alcoholic beers. They examined properties such as alcohol content, pH, sugar concentration, and the presence and concentration of over 200 flavor compounds, including esters produced by yeasts and terpenoids from hops, which contribute to fruity notes.
Tasting Panel and Consumer Reviews
A tasting panel of 16 participants sampled and scored each of the 250 beers for 50 different attributes, such as hop flavors, sweetness, and acidity. This meticulous process took three years to complete. The researchers also collected 180,000 reviews of different beers from the online consumer review platform RateBeer.
While the ratings from the tasting panel and consumer reviews differed due to factors like price, the ratings and comments related to key features, such as bitterness, sweetness, alcohol, and malt aroma, correlated well.
Enhancing Beers with AI
Using the collected data, the team developed machine learning models to predict the taste and appreciation of a beer based on its composition. To test the effectiveness of the models, the researchers enhanced an existing commercial beer by adding substances flagged by the AI models as important predictors of overall appreciation. These substances included lactic acid and glycerol.
The results from the tasting panel showed improved ratings for both alcoholic and non-alcoholic beers, including metrics like sweetness, body, and overall appreciation.
