For one, he wouldn't be such a warped, cruel, vindictive bastard. At least not to the extreme extent we've seen out of him.
Kazuya is a product of his environment, largely moulded by Heihachi. For the longest while Kazuya was frozen in time almost. Stuck at the moment he confronted Heihachi on the cliff, trapped in a hopeless situation, a struggle for survival. Everything about him - personality, beliefs, fears, desires, motivations - is about the obsessive need for control, power, and revenge against his father. It stems from an need for personal freedom and maintaining it no matter the cost. Kazuya looks out for number one and kills any who gets in his way for power. He's never grown much into a person beyond Heihachi's influence. Even with Heihachi gone for real (hopefully), he's too set in his ways to renege on everything he's fought for until now. There are those who would still try to control and defy him and a chance of that happening cannot be allowed to stand. Once he has control of the world no one will ever be able to dictate his life again.
Regarding Kazumi, the whole reason she was with the Mishima family was to end Heihachi one way or another as part of her duty. The Hachijo clan worked use their devil to safeguard the world in their own way by eliminating those who were deemed a global threat and he was one of them. I can't imagine Kazumi being complicit to Heihachi's crimes and staying with him when her purpose was protecting the world. Either she takes Kazuya and escapes, abandoning her duty and going into hiding, or she deals with Heihachi like she was supposed to, despite the difficulties of such a challenge and how much it hurts her. I do in fact have a verse where Kazumi survived. She beats Heihachi, but she can't bring herself to deal the final blow. What she does instead is she severely cripples him, forcing him into a coma. With him in that state, he's not a present danger. Afterwards she takes Kazuya and Lee back with her to the Hachijo clan, raising them there. I'm basing this theoretical personality on this scenario.
I believe Kazuya would a standoffish, pragmatic individual that can be calculating, but he's still prideful and arrogant, especially when it comes to his fighting skills. Confrontational and direct but has an overall quiet, if not indifferent attitude towards other people. He is big on loyalty and respect. He doesn't take kindly to having his trust breached, and is merciless to those who betray him. He retains his interest in biological studies, his own personal code of honour, some of his slightly erratic tendencies from the early Tekken days, and his traits of amassing things like his shoe collection. He harbours a hatred for Heihachi for what he did - the man's actions have irrevocably changed him from the boy he once was and shattered that illusion of childhood innocence forever - but with Kazumi around in his life instead of him, he has a chance to to deal with it in a healthier outlet. His father's imperialistic teachings isn't being imparted to him, he isn't constantly exposed to cruelty and abuse, and he's not fuelled by hate and rage at a situation he can't escape. Heihachi is out of the picture for now, so there's no one to foster those feelings of revenge towards and his obsessive need for power isn't as overt in this life since he has more control over it. He's still wary, but he's more capable of trusting others and allowing himself to take in positive influences.
Kazuya would at least be a better person. Maybe not heroic or conventionally "good" or the type to make the world a better place, but he is better.

If there is one thing Kazuya could admit to himself about Nina, it's that he generally views her as efficient and competent at her job. You give her a task she can likely see it through. But that's about it. I will also not deny that he doesn't trust her in any sense of the word, given she's attempted to kill him multiple times and then fact he very much prefers Anna (they are close despite anything he says).
From what I understand, as of T8 and after the death of Heihachi, Kazuya seized the chance to overthrow the opposing side, intensifying the attacks on the Zaibatsu until the remaining leadership was forced to surrender. It was a swift, decisive end. Kazuya has essentially assumed control of the Zaibatsu. I seems to have happened rather quickly - a month, maybe even within two weeks - so Nina may have still been the commander of the Tekken Force and been one of those said leadership positions. When it looked like she'd be unable to recover a still MIA Jin and Kazuya moving in to take over, this may be when she decided to cut her losses and become a freelance assassin.
So with all these factors in mind, I think... he's using Nina on a three fold scale. One, he needs someone to manage his forces as he escalates his push to take over the world. Nina has proved proficient enough in doing so with the Zaibatsu and already has experience with the Tekken forces he's probably integrated into his war effort. His normal pick is out of the picture so he'll make use of her instead. A threat he can effectively wield against enemies and make them think twice, and an asset ultimately expendable to him. Two, it removes Nina from the enemy pool temporarily and restricts her movements. She was a thorn in his side for a good while. She's very slippery and it can be hard to pin her down. If she's working for him as a direct subordinate, there's a much lower chance of someone else taking the plunge to hire her to assassinate him again. He gets to keep an eye on her and he's a position to deal with her himself if she gets any ideas. Three, Anna. I want believe this has something to do with her and until new material comes out I'll be making pure assumptions.
With my iteration of Kazuya there definitely is an Anna aspect to his decision to hire Nina. With Kazuya, Nina's... like a spare to use in the meantime? He's looking for Anna. Before T7, he allowed her to retire without any fuss in order to marry but clearly things have changed. There is no way he does not know about Anna's fiance being assassinated and he knows Anna well enough to know she will seek out revenge. I think she dropped off the grid after failing to get back at Nina in the heat of the moment, plotting on how to end her for good. It's hard to locate Nina even on your best day if she doesn't want to be found I imagine. With her current position, it's always hush hush about who's calling shots at the top brass but these things have a way of... leaking. With Nina kept in a very convenient position next to him in the event Anna does decide to return to G Corp, it sure saves the time of hunting her down, doesn't it? And if Anna wants to exact her revenge then and there? Well, Kazuya won't be the one to stop her. Unfortunately as of yet, Anna has yet to appear.
As for the cryogenic sleep, Kazuya was big on biological experimentation back then. While Lee leaned toward the cold and mechanical working of machinery, Kazuya drifted toward the understanding the heated evolution of living flesh. And he had a plan: create enhanced animal soldiers to utilize in his building army. Now what do we have here? An assassin fell into his hands? Sounds like a perfect test subject to try out these brand new very experimental machines on. I think Kazuya would have kept her in there for a few years to test the preservation efficacy of the machines before letting her out, maybe less since Anna decided to join her. So, he didn't have big plans for Nina per se. Didn't have time beyond testing out the pods. If he had… It started with animals, but I think he was on track to move onto humans after enough time (see Gigas a la T7). He was certainly willing subject himself to experimentation. With Nina still in his grasp he might have attempted to have Nina biologically altered in some way or another in his efforts to create a perfect weapon. Nothing that would kill her (probably), but she would be...changed. Maybe for the "better".

I have now seen all the scenes in t8. I still need to get my thoughts in order but here's a quick rundown of a tentative headcanon in regards what I think happened with Jun since before t3 to t8 in light of the new info. Heads up that I like to sprinkle in bits of the tag tournament games since bits and pieces of them are clearly canon to an extent.
Seven years ago Jun fought Ogre in Yakushima and lost but she survived by escaping to her family's sanctum. It's not just an underground cave hideout. It's a gateway of sorts to a more spiritual via consciousness. The good news? She can survive a prolonged coma here as long as her spirit resides here. The bad news? It's a spiritual gateway and not all spirits are good. Years down the line a wolf spirit manages to nab her vacant comatose body. While she is being plagued by scenes of the struggle between Kazuya and Jin (sometimes she thinks she can get through to them for just a moment), it uses her as a vessel to puppet the body around as an unknown entity. Whether she's aware of what's going on is up for debate. I myself think probably not since she's not in possession of her body and she's focused on Kazuya and Jin. Eventually some time before t7, Kazuya catches wind of this so called demon and wants to acquire it's power for himself. It looks vaguely familiar when he finally encounters it but he brushes of the feeling and defeats it, absorbing it's power and unlocking the form seen at the end of t7. It's then, after revelling in the newfound power, that he sees who is lying at his feet. He picks up Jun and flies her back to G Corp. Try as they might though they can't awaken her and Kazuya keeps the whole thing tightly under wraps. During T8, she finally awakens from her long nightmare, her spirit making it's way back once the body recovered enough and realizing her visions were reality. She leaves the G corp facility she's being held in and set off for Italy with hopes to end to the fighting. In a way she did, using her spiritual awareness to help Jin during the game. At the end of it all, she finds a defeated Kazuya.

whether it’s the way you bare your teeth when backed in a corner, your loyalty, or your tendency to act on instinct, your reoccurring theme is the dog. like mitski said “i get mean when im nervous, like a bad dog” or how halsey said “i won’t smile but i’ll show you my teeth” even when migos said “dance with my dogs in the night time” the essence of the dog runs through you. you’re tough and a quick draw on the outside, but if we got down to it we’d see you’re acting the only way you’ve ever known how. it doesn’t make you bad, survival is natural, your loyalty and determination is commendable. i don’t blame you for the way you act when your back is against a wall, but please remember to not bite the hand that feeds.

(likely) concept: theory goes that she's a mishima as in an illegitimate kid of heihachi and boy, i'm kinda sick of secret siblings rising up from heihachi's past like zombies. we already had lars plotline but you decided we'll reuse and remix that idea and have an evil little sister this time. maybe a cousin would squeak past and get an okay from me but i'm not vibing with reina 4/?th child of heihachi, 1.5/10

A bit of time ago I saw on my dash the thing about Heihachi having like 20 kids out there somewhere and let me tell you Kazuya will not see them as siblings whatsoever.
He already grew up with Chaolan as his brother and despite it all - whether Kazuya likes to admit it or not - that's the way his view of Chaolan will stay. When Lars showed up it was on the thinnest fucking ice imaginable, but after fighting him Kazuya can see ( just a bit ) how they're related and has acknowledged that he does exist. He will never call Lars brother and does not see him as such, but he does point out that Lars seems to be a Mishima so he is thus also susceptible to the family feud curse and the hell of infighting plaguing them across generations. If you want to be generous about Kauzya's intentions, it can even be taken as a warning of what becomes of all Mishima and what Lars is getting into if he continues to involve himself further.
Any conversation beyond those two in particular is a non starter and will lead nowhere. The idea of more kids of Heihachi teeming out of the woodwork to take issue with him really is just more fuel to resent the dead old man.
