Today I was lucky enough to have some time in the field 🌲 for a project my company is working on! . . I remember when I used to love field work mainly because I knew meals 🥘 were on the company dollar 💵! . . I would look forward to lunch so much because I knew I didn't have to pay for it! I would pay for it in other ways though.... . . Because it was a treat for me I would get whatever I wanted on the menu 🍟, which was usually an unhealthy option and I would feel like 💩 for the rest of the day. . . Now, thanks to the wonderful healthy lifestyle journey coaching has taken me on, I make sure to pack my lunch 🍴! Guess what, it is way healthier and I don't feel like crap afterwards! . . After completing an amazing person development book (Mastering Your Mean Girl), I have decided to eliminate the word busy from my vocabulary. . . In America we are brought up in a culture that lives to work, but I encourage you to work to live! The way we spend our time is what matters. . . Quality time with loved ones leads to a higher quality of life. I urge you, from the bottom of my heart, to slow down. To eradicate the word “busy” from your vocabulary. . . When your friend reaches out for coffee or your mother wants to have a lunch date or you want to indulge in a glass of wine with your sister – you must cease to be “too busy” for these things. . . These are the things that do not feed your bank account, do not make your sales higher for the month, or make that number on the scale lower. These are the things that you will treasure. The things that feed your soul, bring peace to your mind. Connecting with people that matter, knowing your family better than you know your coworkers, hearing stories of the past from your grandparents, and dreams of the future from your children – these are the things that improve quality of life. . . We must work, of course. We must make a living, of course. A few years back I was suffering from intense digestive issues. I was so uncomfortable all the time and no doctor could help me. . . I finally decided to take matters into my own hands and started eating healthy and working out daily! . . After lots of research and lots of trial and error I finally found a diet and routine that worked with my busy schedule! . . This past month I was totally slacking with my nutrition and boy did my body let me know! . . The holidays are upon us 🎄!! You know what that means - all the temptation to eat all the holiday goodies 🍰 🍪 🍨!!! . . I don’t know about you, but I can already predict that I am going to need a real kick in the booty 🍑 once the New Year 🎉 begins! . . When you find the most delicious recipe for clean, vegan, chocolate covered cookie dough bars! . . I love cold treats for dessert and this hit just the spot! It was super easy to make as well, which is a total plus! . . You'll Need... For the bars: - 1 and 1/4 cup Bob's Red Mill Almond Flour - 5 Tbsp. coconut flour - pinch of salt - 1/2 cup + 2 Tbsp. maple syrup - 2 and 1/2 Tbsp. coconut oil, melted - 5 Tbsp. nut butter - 1/2 tsp vanilla extract - 3/4 cup vegan dark chocolate chips . . For the topping: - 1 cup vegan dark chocolate chips - 2 Tbsp. nut butter - 1/2 Tbsp. coconut oil . . Directions 1. Mix almond flour, coconut flour, and salt in a large mixing bowl. Set aside. . . 2. Mix maple syrup, melted coconut oil, nut butter, and vanilla in a medium bowl. . . 3. Pour your wet ingredients into your dry ingredients, and mix to combine. Add your chocolate chips, and mix. . . 4. Line a 8" square pan with parchment paper. Press your dough into the pan, and flatten with your hands or with the back of a measuring cup. Place in the freezer to chill for 20 minutes. . . 5. Meanwhile, make the topping. Melt your chocolate chips, nut butter, and coconut oil in a microwave-safe bowl in 30-second intervals or over a double boiler on the stove. Mix to combine. . . 6. Pour your chocolate topping over your cookie dough, and place in the fridge to set, 1-2 hours. . . 7. Cut into squares, and store in an air-tight container in the fridge. . . Imagine living a life you don’t have to take a vacation from. A life that doesn't make you live for the weekend. Where you wake up living your dream life. No boss to tell you where to be, no schedule that says you can’t take the day off, no dress code, no rules but the ones you make for yourself. . . That is the life I have always wanted to live and I knew I had to start somewhere, so when the online fitness coaching opportunity presented itself I jumped right in. When I started coaching I was in grad school and working 3 jobs. I had limited time on my hands, but I knew I had to make this thing work to reach my goals. . . Fresh out of grad school I landed a full time corporate job, working 55 hours a week. Some people may be totally content with that, and that is totally fine, but for me it was not enough. I knew I had to continue to work at my coaching side hustle to really live up to my potential. . . Now I am working part time at my corporate job and part time as an online fitness coach and I am LOVING it. I finally have the time to live my life by design and I can see my dream life coming into focus. . . Life is made up by the choices you make. One day I decided I was done having an ordinary life . Today my fiancé and I went to one of the biggest malls in the state and speed shopped through it! . . Coming home to a peaceful yoga session was much needed after being in crowds all day. Who else works a desk job!? 📚 . . Guys, I have something I NEED to share. Most days I sit on my butt about 23 hours a day, and the sad part is I am not even exaggerating 😅. . . I work a desk job and am really only allowed to get up to go to the bathroom. . . I commute 3 hours a day and when I get home I am mainly working at a desk, and the rest of the time I am sleeping 💤 . . . The only time I do get up and move is when I work-out. . . Do I work out for an hour? No. I usually workout for about 30 minutes and the rest of the time I am standing merely to shower/cook. . . People always ask me how I stay in shape while working a desk job. . . Simple. I do at home-workout 🏋🏻‍♀️ programs, drink a superfood shake, and eat clean 🍎(for the most 😉). . . I know that sounds simple, but it’s TOUGH! It is so hard to convince myself to workout every day and it is so hard to eat clean. . . I’m not perfect - I crave chocolate and ice cream and pizza 🍕 and sometimes I give in! . . Thank goodness I have such an amazing team 💁🏻 who supports me and encourages me to treat my body like the temple it is! . . This journey has never been and probably will never be easy, but let me tell you something - IT IS WORTH IT. . . If you are struggling to find balance with your nutrition, if you are ready to give your body the movement it craves for just 30 minutes a day, if you are ready to take control of your health and wellness, and if you are ready to surround yourself with amazing people who lift you up – please drop your favorite emoji 💩 below! . . Had an awesome workout with @beakersandbugs yesterday evening!! . . This is the main reason I love what I do! Without coaching I would have never met Lori, let alone workout 💪🏼 with her in my apartment! . . We even went to a Christmas 🎄 celebration in our city afterwards where we got totally rained ☔️ on, but it was so much fun! . .
