I just realized, that Lord of the Dungeon in Dungeon Meshi does not refer only to the owner of the dungeon, but literally DM of any party going into the dungeon. Thistle literally was controlling everything , in some way or another and ordering monsters to attack trespassers(a.k.a. party).

So like, imagine you are playing DnD and your last quest is literally to beat up your DM, steal their Dungeon masters guide and become a new DM of the group.
