In Xenoblade 2, Pyrha, on top of the first round-off back handspring she does in her first fight, does some more acrobatics in same fight when fighting the main antagonist, including a handstand on top of her own sword and some more tumbling whilst avoiding his attacks.
Uhh... Xenoblade series is on my list of games to play, yes. I am currently digging through the backlog from 1999, unfortunately (Literally. FF8 done, Legend of Dragoon current, FF9 next, Chrono Cross next), so...
How did you even get this far without ever mentioning Air Master? If we get past the artstyle, Maki is one of the best gymnasts in all of animated fiction and definitely deserves a spot here.

Granblue Versus (both games), Ferry has a lot of acrobatic movements, including cartwheels and such, as does Yuel, who is a dancer. There might be more, but those are the two that come closest to mind.
I checked them, but, unfortunately, with so much of the screen covered by FX on hit, I most of the time can barely see what the characters are supposed to be doing :-(

Wow! An oldie, but definitely a goldie, this one. Granted, animation's but crude, but then it's 1989... Oh my, I would love a remake of this series.
And, actually, there _is_ a new Hani movie due out this year, titled 나쁜계집애 / Nappeungyejibae, but it seems to be based on the first season, where Hani does track and field rather than gymnastics... A shame.
I don't know if we've covered this already, but the episode "The Final Flight of the Osiris" in The Animatrix has a sparring scene with some risqué tumbling as well as a parkour scene through an eletrical power plant.
If I remember correctly, Nazuna from Call of the Night has a few moments in the anime where she performs some acrobatic moves. The opening most definitely, but I think she does some more in the fight scenes.
Just checked the opening, and it's definitely implied, but the cuts are too fast to show anything properly. In the opening, at least; I admit I kinda lost interest in the series by the time fighting started, and can't check right now.
There's a game called "Aether Gazer" probably you can find. There are plenty of modifiers do that and one of them that I noticed first is Zenkibo (Surefire - Zenkibo Tengu). Check the animation on her "Basic Attack" involving rollerskates as well..
