fingers crossed i picked the right thing to fix so the prickly pear mead isn’t as acidic as the black raspberry mead i made over the summer (too many tannins)
tho i just tasted the black raspberry mead and it’s way less acidic now than i remember it being when i bottled it 2 months ago so hopefully even that will wind up v tasty in a few more months? and i tasted the shorter bottle that has a lot more particulate so i know it’s not gonna taste as good as the other bottle (also it’s...definitely still fermenting. there were bubbles. i. did not plan for this nor expect it so it’s probs a good thing i tasted it bc they’re not in bottles with corks that breathe so burping is needed so i don’t explode things. that would be MESSY and unfortunate)
also fingers crossed that i picked remotely close to a correct ratio of prickly pear juice to honey
also also fingers crossed that i found all the dang glochids in my dang fingers from prepping the prickly pears bc goddamn did they do a number on me prepping them! my attempts to use a brush and washcloth were Insufficient and i absolutely should have held off until i went to the store to get rubber gloves so this didn’t happen
