Super Easy Banana Oatmeal Pancakes (gluten free)
This recipe is the perfect breakfast pancake you will want to make again and again. These flourless banana oat pancakes are fluffy and naturally sweet.:) 
 Ingredients: 
2 ripe bananas 
2 eggs 
162 gm oats ( 2 cups) 
118ml milk ( use any milk you prefer) (1/2 cup) 
2 1/2 teaspoon baking powder 
1 teaspoon vanilla 
1/4 teaspoon salt 
Method: 
Add all of the ingredients to a blender or food processor. Blend on high until completely smooth. Let the batter rest for 5 minutes. This allows the oats to soften and the batter to thicken. 
 Heat a pan on medium heat. Once warmed, grease with cooking spray, oil, or butter. Scoop the batter and pour the batter onto the greased pan or skillet. Cook the pancakes for 2-3 minutes. Serve with your fave toppings :)

Super Healthy Oatmeal Chocolate Chip Muffins (Gluten Free, Sugar Free)
Healthy chocolate chip muffins made with old fashioned oats, cocoa powder and chocolate chips :) Moist and fluffy, they are made with no flour (flourless!), no butter and no sugar for me :)
Ingredients:  9-12 muffins (large) 
1 egg 
351gm oats ( 2 1/4 cups) 
4 tablespoon cocoa powder 
100gm low carb sugar ( 1 cup) use any sugar you like 
118ml milk  (1/2 cup) use any milk you like 
118ml oil (1/2 cup) any vegetable oil 
1/2 teaspoon salt 
1 teaspoon vanilla sugar or essence 
1 teaspoon baking powder 
chocolate chips 
3 tablespoon water use if batter too dry 
Method: 
Preheat the oven to 180C/350F. Line a 12-count muffin tin with muffin liners and set aside. 
 In a high-speed blender or food processor, combine all your ingredients except for your chocolate chips, and blend/pulse until all the ingredients are combined and the batter is smooth. 
Using a rubber spatula, fold in your chocolate chips Distribute the batter amongst the muffin liners. 
Top with extra chocolate chips and bake for 18-20 minutes, or until a skewer comes out clean.

Flourless Banana Chocolate Oat Cake
This Flourless Chocolate Banana cake is so fudgy and perfectly tender that you’d never believe it is made without any flour, oil, or butter. Unbelievably delicious! This delicious flourless banana cake is made in a mixer with oats instead of flour. 
The oats are blended with the other ingredients and when the blended batter is baked, it turns out just like a good, moist yet tender banana chocolate cake. So yummy and easy :) 
Ingredients: 
3 medium sized bananas 
3 eggs 
80 gm oats ( 1 cup) 
2 teaspoon baking powder 
3 tablespoon cocoa powder 
1/4 teaspoon salt 
1 teaspoon vanilla 
3 tablespoon sugar 
3 tablespoon coconut flakes 
Method: 
Heat oven 180C/350F. In a mixer, add all ingredients and mix well .Topped with coconut flakes. Bake for 16-18 minutes. Enjoy :)

Easy Pandan Coconut Muffins
Pandan is a tropical plant whose leaves are commonly used for flavoring in South Asian dishes and desserts. The extract of pandan has been called "Asian vanilla," which is an apt description; 
The aroma of pandan is distinctive, almost nutty, with a floral undertone--- really like nothing else. It's intoxicating, wafting from a batch of freshly baked goods. For these muffins, I decided to pair pandan extract and coconut milk-- two flavors that just seemed made for each other. I also added shredded coconut sprinkled on the top the buns to toast in the oven. 
Ingredients : Serving 12 Muffins 
170gm Plain flour ( 1 1/2 cups) 
1 egg 
2 teaspoon baking powder 
1 teaspoon pandan extract 
1/4 teaspoon salt 
100gm brown sugar ( 1/2 cup) 
70 ml coconut milk ( 2.38oz) 
70 ml oil ( 2.38oz) 
150ml water (2/3 cup) 
1 teaspoon green colour (optional) 
Shredded coconut (optional) 
Muffin pan & liners 
Method: 
Heat oven 180C/356 F and line/grease a 12-cup muffin pan.In a large mixing bowl, combine the flour, baking powder and salt. Set aside. In another bowl, In a bowl, add flour, baking powder and salt. 
 Add egg, oil, coconut milk, brown sugar,  water, pandan extract and green colour and whisk mixture. Add wet ingredients to the flour mixture, folding until well incorporated (be careful not to overmix; a few lumps are fine). Divide batter among prepared muffin cups, then sprinkle the top with the remaining shredded coconut. 
 Bake in pre-heated oven until a toothpick inserted in the middle comes out clean, about 18-20 minutes. Allow muffins to cool before removing from pan and transferring to a rack. Enjoy :)

Crispy Sriracha Chicken
Sweet and spicy Crispy Sriracha Chicken – better tasting and healthier than take out! perfect with some rice or noodles, you will want to make this again :) 
Ingredients: 
300 gm chicken breast cut into small pieces ( 2-3 chicken breast) 
1 whole shallot thinly sliced 
2 garlic clove sliced 
salt & pepper season for chicken
60gm corn flour/corn starch ( 1/2 cup) 
oil for frying 
Sesame seeds (optional) 
Sauce:
3 tablespoon sriracha 
2 tablespoon ketchup 
2 tablespoon soy sauce 
1 tablespoon soy sauce 
4 tablespoon water 
Method: 
Add chicken, salt and pepper into a medium bowl and stir well, until well combined, set aside. Next add Sriracha, ketchup, soy sauce & honey combine well and set aside.
Pour enough vegetable oil into a large wok or deep skillet, until it reaches about 1 to 1 and 1/2 inches in height. Heat over high heat, until hot (about 375°F). In the meantime, add cornstarch and flour to the chicken and toss well, so that every chicken piece is coated with the flour mixture on all sides.
Deep fry chicken pieces in batches (do not overcrowd the pan), until golden and crisp (3 to 4 minutes). Drain on a paper towel lined platter and repeat process until all chicken is done. In the same pan, add onion and garlic and fry for 1 minutes. .
Add in all the cooked chicken toss for 30 seconds. Next, add in the sauce and water. Mix well and cook for 1 min and serve immediately. Remove from heat and garnish with sesame seeds.

Ground beef stir fry is an easy and delicious weeknight dinner. It's made with ground beef and a tasty spicy sauce. This is one of my go-to quick and healthy recipes!This stir fry is delicious served over basmati rice or cauliflower rice. It also goes well with noodles or on top of roasted spaghetti squash.
Ingredients: 
400gm ground meat ( 1 pound )
1 whole onion sliced
2-3 garlic cloves chopped
4 tablespoon soy sauce
2 tablespoon sesame oil
1 teaspoon ginger powder or 1 inch chopped ginger
1 teaspoon sugar
1 teaspoon black pepper 
sesame seeds sprinkle (optional)
1-2 teaspoon chili flakes 
2 tablespoon cooking oil
Method:
In a pan heat oil and add onion. Cook the onion for 1-2 mins on medium heat. Next, add in the garlic and fry for another 30 seconds. Add the beef to a large skillet over medium-high heat. 
Cook the meat, stirring it to break up the pieces occasionally, until it is mostly brown, about 5 minutes. Mix soy sauce, sesame oil, sugar, ginger powder and chili flakes. 
Mix the sauce well and pour into the ground meat. Combine well and cook for another 2 mins and serve immediately . Sprinkle on some sesame seeds and enjoy :)

Korean Inspired Gochujang Meatballs
I’m obsessed with gochujang, a thick, spicy red chili paste and one of the backbone ingredients of Korean cooking. I love the kick and depth of flavor that it adds to everything you stir it into — a little goes a long way. This dish is excellent as an appetizer served with toothpicks, or make it a main dish for dinner over rice, it's so delicious you will want to make it often as possible :) 
Meatballs:
500gm ground beef ( 1 pound) 
2 teaspoon onion powder 
1 teaspoon garlic powder 
1 tablespoon soy sauce 
1 tablespoon sesame oil 
1 egg ( beaten) 
1 teaspoon sugar 
Black pepper to taste ( 1 teaspoon) 
Sauce:
2 tablespoon gochujang paste 
1 whole onion sliced 
2 garlic clove chopped 
2 tablespoon soy sauce 
1 tablespoon sesame oil
2 tablespoon ketchup 
sesame seeds to sprinkle 
Method: 
Preheat oven 200C/400f. In a bowl, combine meat, onion powder, garlic powder, beaten egg, soy sauce, sesame oil and sugar in a bowl.  Mix thoroughly. 
Using your hands, form into 20 round meatballs, about 1 oz each. Place the meatballs, evenly spaced, on the prepared sheet pan. Baked for 20 minutes in the center of the oven. Heat pan, add onion and fry for 2 mins. Next, add in the garlic and stir for 30 seconds. 
Add in the cooked meatballs, toss in the gochujang paste, soy sauce, sesame oil and ketchup and mix well. Sprinkle sesame seeds and serve immediately.

This keto raspberry cake is loaded with flavor and makes the perfect cake anytime of the year It’s a sugar-free, gluten-free raspberry cake recipe that everyone will welcome. 
Ingredients: 12 slices 
190gm Almond Flour (2 cups) 
4 eggs 
2 tablespoon oil 
1 teaspoon baking powder 
1/4 teaspoon salt 
1 teaspoon vanilla 
100gm low carb sugar (1/2 cup) 
123 gm frozen raspberries ( 1 cup) 
Cream cheese Frosting: 
90 gm cream cheese  (1/3 cup) 
3 tablespoon low carb sugar 
1 teaspoon vanilla 
2 tablespoon butter (25 gm) 
Method: 
Heat oven 160 C/320F.  Add all dry ingredients (almond flour, baking powder, and salt ) and mix well, set aside.Whisk egg for 2 minutes. 
Beat together the eggs,  oil, vanilla and sweetener, until glossy and combined. Next, add in the dry ingredients and beat for 1 min. Lastly, fold in the raspberries. Bake for 25 mins until golden brown. 
Once baked let it cool down completely  and set aside. Beat the cream cheese, low carb sugar, vanilla and butter together for 1 min and add frosting to the cake.

This Scandinavian Smoked Salmon Dip truly tastes of smoked salmon, it’s soft and creamy with a subtle tang from cream cheese and lemon, and the freshness of dill. This is a dip to impress everyone :) 
200gm (7 oz)smoked salmon cream cheese or plain cream cheese 
55g Turkish Yogurt ( 1/2 cup) 
2 teaspoon dill 
1 tablespoon lemon juice 
1 whole shallot chopped 
1/4 teaspoon salt 
Pepper to taste 
200gm (7oz) Smoked Salmon chopped (added if unable to find cream cheese flavor with salmon) 
Method: Place all ingredients in a bowl. Give it all a good mix .Transfer into bowl, garnish with lemon slices and more dill if desired. Serve at room temperature with crackers and enjoy :)

Coffee Lovers Keto Vanilla Latte Cake
This vanilla latte Cake  is the perfect cake for you coffee lovers :) Deliciously topped with a creamy coffee buttercream frosting and taste like the popular coffee shop espresso drink. Made with low carb ingredients, they are also healthy sugar-free, gluten-free and grain-free treat. 
Ingredients: 
192 gm almond flour (2 cups) 
1 teaspoon baking powder 
100gm low carb sugar (1/2 cup)
 4 large eggs room temperature
 2 tablespoon oil ( using grapeseed oil) 
2 teaspoon vanilla 
1/4 teaspoon salt 
For the frosting :
150 gm butter (2/3 cup) 
100gm low carb sugar (1/2 cup) 
2 teaspoon instant coffee 
2 tablespoon milk (choose any milk) 
Method: 
Preheat the oven to 180C/350F. Grease a 9-inch cake pan and line with parchment paper. Set aside. In a small bowl, whisk together the almond flour and baking powder and set aside. 
In a mixing bowl, whisk together the rest of the ingredients until completely combined. Gently add in the dry ingredients and mix well. Transfer the batter into the lined cake pan and bake for 25 minutes, or until a skewer comes out clean. Let the cake cool completely before frosting. 
For the frosting: -In a bowl, add in butter and beat for 2-3 mins. -Add in powdered sugar in 3 batches ( 3 parts) and beat 1 min for each part. - Lastly, mix coffee and milk. Now add it to the mixture, and beat for another minute.Texture should be smooth and easy to spread on the cake. Enjoy :)

Almond flour should be slightly brown and add sugar & butter. Stir well to break up any lumps in the almond flour. Using a spoon press down flat into the bottom of the glass or mug.Chill in the fridge for 30 mins. Add strawberries to a small pot and cook for 2-3 mins. Next, add in the low carb sugar mix well for another min and set aside. Let the jam mixture cool down completely. Make the strawberry cheesecake:In a large mixing bowl, beat cream, sugar and vanilla until form soft peaks. Add in cream cheese beat until smooth. Stir together strawberry jam until well combined. Keto Carrot Cake Made Easy
This deliciously soft and moist carrot cake is the only keto carrot cake recipe you will ever need. Keto carrot cake with cream cheese frosting! Super easy to make, gluten and sugar free, PLUS it's only 3.5 net carbs per slice! One of my new favourite desserts :) 
Ingredients: 
1 1/2 carrots shredded 
192 gm Almond Flour (2 cups) 
100gm low carb sugar ( 1/2 cup) 
1 teaspoon vanilla 
1 teaspoon cinnamon 
2 eggs 
2 tsp baking powder 
Cream cheese Frosting: 
90 gm cream cheese  (1/3 cup) 
3 tablespoon low carb sugar 
1 teaspoon vanilla 
2 tablespoon butter (25 gm)
Method: 
Heat oven 175 C/350F.  Add all dry ingredients (almond flour, baking powder, salt and cinnamon) and mix well, set aside. In a bowl add eggs and sugar and whisk. Next, add in the shredded carrots and vanilla, mix well. Lastly, add in the dry ingredients and give it a good mix. 
Transfer to a baking form and bake for 30-35 mins. One baked let it cool down for 40 mins - 1 hour. Beat the cream cheese, low carb sugar, vanilla and butter together for 1 min and add frosting to the cake. Cut into small bite size and enjoy :)

If you Love Spicy Food Try this Malaysian FIsh Sambal (AIr Fryer Version)
A great traditional Malay dish that is easy to prepare: Crispy fried fish cooked in sambal sauce. The spicy sauce, or sambal in Malay, is excellent not just with fish but also with other seafood, meats, and even hard-boiled eggs. 
Make a whole tub and freeze extra portions for later use – then get the neighborhood talking when you serve this memorable dish at your next dinner party. 
FIsh: 
300gm white fish cut into small chunks (use any fish you like) 
2 teaspoon turmeric powder 
1 teaspoon chili powder 
1 teaspoon salt 
1 tablespoon oil ( i used olive oil) 
Sambal Sauce: 
1 large onion 
2 shallot 
2 garlic cloves 
1 inch ginger 
1 lemongrass 
3-4 lime leaves 
2 teaspoon tamarind paste/juice 
2 teaspoon low carb sugar (normal sugar non keto) 
1 teaspoon shrimp paste (belacan) 
3-4 tablespoon chili paste (spicy) 
1/2 onion sliced (Garnish) 
Fried onion (Garnish) 
118ml water (1/2 cup ) 
Oil for cooking 2-3 tablespoon ( i used olive oil) 
Method: 
In a bowl, add  fish  and season with salt, turmeric and chili powder. Combine well and transfer to air fryer set to cook for 13 mins 180C/350F. Set aside once cooked. Blend onion, shallot, garlic and ginger in a blender until smooth paste. Next, heat up pan and add oil. 
Add in the blended ingredients and cook on medium heat for 2-3 mins. Next, add in lemongrass & lime leaves and cook for 2 mins. Add in spicy chili paste and cook for another 3-5 mins on low heat stirring continuously. 
Add in the shrimp paste, tamarind paste, sugar  and water. Let it simmer for another 5 mins on low heat.Lastly, add in the fried fish and stir in the sliced onions and serve immediately. Enjoy with warm rice :)

Allow the fluff to chill in the refrigerator for 3 hours before serving.  Top with a few blueberries, optional but delicious before serving. Store in the refrigerator for up to 5 days. Enjoy :)

Use your leftover bolognese sauce into a super quick & easy keto Lasagna. This fathead lasagna is delicious and very filling! A low carb and high fat alternative to the classic Italian dish.

Keto Lasagna: Serving 3 
Fat head dough : 
100gm almond flour (1 cup) 
83 gram shredded cheese ( 1 cup) 
1 large egg (beaten)

Transfer the dough to a baking sheet and roll out the dough. Cut the dough into 3 slices . Bake the lasagna sheets for 5-6 mins. To construct the lasagna, start with a small spoonful of meat sauce on the base of a baking dish (mine was 9x6"). 
Place one of the dough pieces over the top, then half the remaining meat sauce, followed by shredded cheese.Next, add on another lasagna sheet, sauce, cheese and lastly the final lasagna sheet, meat sauce , Italian herbs and finally the cheese.
Bake for 25-30 minutes or until the top starts to turn golden brown.My cheese took sometime to actually brown so adjust to your own cheese, enjoy :)

Turn Leftover Pound Cake Into A Quick Dessert ( No bake, Keto)
Take some leftover cake, add cream, coffee and cocoa powder - et voila! Normally, a cake doesn’t last five minutes in my house, but every now again, for some reason or other –  I find ourselves with more cake than I fancy eating. Rather than let it go to waste, I made a very easy recipe  that will upcycle old cake into a dessert that’s even more special than its former glory. :) 
If you have leftover cake of any kind, from brownie to a simple sponge, this is a quick and easy way to convert it into a scrumptious dessert. Be inventive with whatever ingredients you have available . Enjoy :) 
Keto Cake Mousse In a cup : serving 4-6 persons 
 Ingredient: 200ml whipped cream ( 2 cups) 
1 tablespoon hot espresso coffee or instant coffee 
1 teaspoon vanilla 
100gm dark melted chocolate Lindt 90% dark (1/4 cup) 
1/4 teaspoon salt 
1 teaspoon cocoa powder 
100gm low carb sugar (1/2 cup) 
4 slices leftover pound cake cut into small chunks 
Method:
In a bowl add cream, low carb sugar & vanilla and beat for 1 min. Next, add in  coffee, cocoa powder, salt and melted chocolate. Beat until form soft peaks. Set aside. 
Add the chunks of pound cake into the glasses, next pour the mousse into glasses and set in the fridge for 3 hours or overnight. Serve topped with shaved dark chocolate or any berries you prefer :)
