Started out this morning with a walk through my garden. Shishito peppers were ready for harvesting along with some tomatoes and plenty of basil.
I blistered the peppers in a hot pan of sesame oil then added fresh broccoli. At the end I added some of my home grown garlic and shrimp. Coarse salt and soy sauce finished that dish. The appetizer was the tomatoes, basil, and mozzarella topped with balsamic glaze.
We had a bottle of wine and actually sat at the table to eat like real people!
This was so good and only took minutes to prepare.
I’m a hero tonight!
( I made sure that there was enough leftover for her to take for her lunch tomorrow!)
I have a bunch of comics I still need to get through and review so I read some while I used the desk peddler. You may have noticed there are batches of reviews going up and that’s why. I’ve been going through all these books and clearing them out.
Instead of chicken breasts, I sliced up some chicken thighs off the bone and used that for my Itaki today. My bloodwork shows I’m low in calcium so,…
Made zuccini boats for dinner, had a little chicken visitation therapy, went to physical therapy & had traction, and my tulips are coming up that I planted last Fall 🌷🌷🌷
Made coconut chicken "curry" tonight, it was amazing! I also made rice cauliflower for the first time, it was really good. Husband thought it was rice at a glance when I was cooking it. 14yo thought it was couscous until we said otherwise!
We ended our holiday visit with my aunt (Catholic) and her husband (Jewish) with a big turkey dinner and my first-ever attempt at making latkes. They turned out pretty well, and I had the sour cream and applesauce to serve with them. Turkey, gravy, stuffing, green beans, sauerkraut, butternut squash with cranberries, and latkes.
Everybody will be eating leftovers tomorrow - no way am I cooking!!!
The homemaker moment when your brain clicks at 430 in the morning with a question about dinner which leads you down the path of realization that you counted one of your backup freezer meals twice. Really glad my brain worked for once before disaster struck.
