The tugging feeling never stops in my bladder. I feel like every single moment, I’m going to suddenly use the restroom. At the time I thought I couldn’t live my life like this. I thought a huge contribution to the feeling might in fact be the amount of stress that my job caused me.
In mid May 2019, my job received word that we would officially be closing down for good. Corporate had decided we weren’t worth keeping open. A lot of children and their families were heartbroken, and in a sense I was too. That job had been 7, almost 8 years of my life. The stress of it had finally started baring down on me, and especially my bladder. But it seemed like a sign in the end. I reached out to my long distance boyfriend, and we had decided it would be best for me to take a step forward in life and move to Florida. So I quit my job before it officially closed down, and prepared for my move. In the time frame of moving, and settling down in my new place in Florida, I suddenly felt better. My bladder symptoms seemed like they had completely gone away. In that same time frame, I had made the decision to change my lifestyle. I started clean eating, where I completely eliminated sugar, and stuck to plain and simple dishes with spices. No dairy, very little bread/carbs, and a cheat meal of my choice maybe once every week or two depending on my self control. I ate lots of meats, and complex carbs like rice or sweet potatoes. I had lost 37lbs by the time I completed my move entirely.
I was feeling real good about myself by that point. I finally went from a 1x size in women’s clothing, down to a medium depending on the type of clothes, although it typically stayed around a large in most clothing items. My body felt so healthy. And not to mention, I’d reduced a lot of stress in my life. I moved away from stress in Washington - a stressful job, and some times stressful home life. I’d gained freedom and took a giant leap forward in my life by moving to Florida. It all seemed like I was getting a grasp on myself. I started a new job in Florida, and it felt a new beginning. No one knew me, so it was a chance to potentially make friends and make a secondary home for myself. I learned new skills, and worked harder than i’ve ever worked in my entire life so far. That goes for both physically and mentally. The holidays put a true test to my patience and my newfound skills. When the holidays passed, I was heavily praised by customers and coworkers for all my hard work, and even offered promotions of various kinds. I climbed my way up in my new job. I felt so appreciated, and on top of the world.
And then suddenly that tugging feeling came back. I distinctly remember standing at the register at my job, waiting to take a customers order, and I just couldn’t hold my bladder back. I felt like any second I was going to burst in my pants and embarrassingly wet myself. I couldn’t let that happen. I quickly flagged down a coworker to take over my position, and I ran to the restroom. I suddenly felt a burning sensation after relieving myself, and I started to cry from the embarrassment and pain of it all. My manager was so kind when I had returned from the restroom, and she had made an emergency run to a nearby pharmacy to get me UTI medication and a test kit. I was sent home early that day to test myself and rest. My test came back positive for a UTI, and I was immediately sent to Urgent Care. I hadn’t been to a doctor in years by that point and was very nervous about cost. Luckily, I had insurance coverage, and my family’s help. I decided to come off of the antibiotics a little early, and saw the doctor again. They ran urine tests and cultures, and my UTI was gone, but my symptoms remained. The doctor was baffled - and referred me to a urologist. My job became insistent and urgent that I seek care, and so I did. For the following months, I suffered with constant bathroom useage that hindered every aspect of my life. My time at work was always interrupted by the call for the toilet, and even outside of work I was spending more time in the bathroom than doing hobbies. Trying to walk at the park meant searching for the nearest bathroom every couple of feet. Going on trips, especially long car rides, meant pulling over every 10 miles or so, if I could make it that far, and using a gas station bathroom or a rest stop. My life was getting sucked away from me.
I finally saw the urologist after many appointments beforehand, and after a few weeks of waiting. It was determined that I had IC, interstitial cystitis, a lifelong bladder disease that would never be cured. The urologist refused to treat me until I completed some tests and procedures that would require some hospital time. It wasn’t long after that the coronavirus pandemic started, so I had to hold off my hospital visit and testing required by the urologist. In the time during the lockdown from the pandemic, I’ve learned a lot of things about my body.
I wish I had known much sooner how important it is to take care of the human body, and to listen to it. My body had been telling me for such a long time that things had been irritating it, and yet I’d continued forward with a lot of what my body was hurting from. A major cause for my IC is stress, which is something I found therapy was helping me to work with. 8:30 a.m. Breakfast: Another protein shake, greens, coconut butter and 1/2 a banana on my way to my office
9 a.m.-2 p.m. Work It Start the work day, seeing new clients and writing or creating my next online project or book.
2 p.m.-3:30 p.m. Workout #2. Hit the gym again for a break in the middle of the work day to burn off energy and clear my head.
3:30 p.m. Lunch. Chicken, avocado, greens, beets.
4 pm-7:30 p.m. Work It. Back to the grind.
7:30 or 8 p.m. Group Meeting. Mixing, mingling and talking more about business.
9:30 p.m. Workout. Force myself to hit the gym again after a long afternoon of sitting to work out pent up energy for 40-60 minutes.
10:30 p.m. Dinner. Dinner at home: Turkey burger patty, sweet potato, coconut butter, greens sautéed in ghee.
11 p.m.-1 a.m. Work. Finish my work for the day (e-mails, admin, etc.).
1 or 1:30 a.m. Bed. Hit the sack and sleep like a rock for about 5 hours.

Although I thought I was made of “steel”—immune of stress wreaking havoc on my health—my body had other plans in mind.
Before I realized it, various (silent) health issues began to arise including:
Health Issues Arise (2016-2017)
IBS
SIBO (small intestinal bacterial overgrowth)
Unwanted weight loss (losing about 10 pounds over the course of about 3 years due to malabsorption and gut issues)
Bloating after eating
Chronic constipation
Shortness of breath if I slept less than 5 hours multiple days in a row
Gym performance decline (loss of strength, endurance, gains in the gym)
Hormone imbalances (losing my period)
However, despite all these “new” symptoms, I was completely checked out from my body—laser focused on checking off to-do lists, getting further ahead in business and growing a company.
In addition to not feeling on “top of my A-game,” other things in my life began to shift too, such as:
Lifestyle Imbalance (2016-2017)
Isolation from friendships (in place of work)
Working on weekends and evenings instead of spending time with people or taking breaks
Lack of interests and activities outside of work
Disconnection from my “source”—time spent in Word, prayer
Disconnection from the great outdoors (staying inside most of the days)
Over-screen exposure (upwards of 10-12 hours per day in front of a computer)
Loss of “who I am” or what I like to do (outside work)
Running towards a goal with no end in sight
To say the least, I became more like a robot, and less like “Lauryn”—the well rounded individual I am in my core.
I could talk and write all day about living a health lifestyle, and I knew WHAT to do, but when it came to my own health and life, there wasn’t time to do all the things I preached about!
As a busy entrepreneur, trying to save the world, who had time to do things like sleep 7-8 hours, or mix up my workouts, or eat a variety of nutrient dense foods, or make time for hobbies and passions and relationships?!
This schedule and pace continued for a good 3 years before my body really began to speak—letting me know that something was up.
Getting Out of Balance: SIBO, Leaky Gut, IBS & Beyond (September 2017)
Come September 2017, I was hit with a severe case of SIBO—Small Intestinal Bacterial Overgrowth—in which my body, under high amounts of physical and mental stress, developed a gut condition where unhealthy bacteria overpopulated my small intestine.
The result?
Rapid weight loss and IBS.
Although I have struggled with “gut stuff” (constipation and IBS) most of my life, things really kicked up.
Seemingly overnight, I went from just feeling bloated after most meals to having to run to the bathroom after most meals with loose watery stools, or the opposite, waking up super constipated—unable to go at all.
This conundrum continued for a good 4 months before I decided to dig deeper and consider what else may be going on under the hood.
Thanks to my functional medicine background and training program at the time, we were actually learning about SIBO at the same time, and come to find out, SIBO is exactly what I had—triggering unwanted weight loss, malabsorption, bloating, constipation, tummy cramps, and the inability to tolerate most FODMAP foods.
At the turn of the New Year (January 2018), I was treating SIBO at home with a strict supplement protocol, courtesy of my functional medicine training, and by the end of February, I was feeling much better on the gut front—except about 10 pounds lighter than I’d want to be.
“What’s wrong with Lauryn?” I could sense others saying with their eyes, and it appeared I was “back” into my eating disorder that I had struggled with from ages 10-24.
I could hardly look in the mirror myself, and sitting at barely 100 pounds (on a “good day”), for my 5’4’’ frame, I felt it—felt weaker, and more discouraged, despite being more at peace with eating, feeding my body well and even giving up cardio in place of more muscle building workouts.
However, despite my efforts to gain weight—it wasn’t happening. Eating approximately 2400 calories each day wasn’t doing it. “Carbing up” wasn’t doing it. Working out a little bit less wasn’t doing it.
By March 2018, I found myself in a Gastrointestinal Doctor’s office to try to “get to the bottom” of things to see what—if anything—in my gut was still keeping me from putting on some weight that I wanted, and the conventional medicine “rabbit hole” began.”
The Plot Thickens: The Triggering Event (My Colonoscopy) (March 2018)
To start, the doctor ordered a CT scan of my intestines to start, finding a presentation of a “Megacolon” and “Autoimmune bowel,” and advising we do a colonoscopy to do some deeper digging to see what, if any, autoimmune diseases were present as well as any blockage or structural issues preventing me from absorbing nutrients and restoring bowel function.
In addition, I had a full blood panel done and hormone panel, and the results revealed:
Iron Overload
Low Thyroid Function
Low Vitamin D

Colonscopies: More Harm Than Good
Colonoscopies have become one of the most prescribed outpatient procedures in America with more than 15-million performed each year (1) (CDC, 2016), and are only growing in prevalence.

Me: Post Colonoscopy (April-May 2018)
My colonoscopy was the “straw” that broke the camel’s back —accumulating the past 3 years of stress in one fatal swoop on “C-Day” (colonoscopy day).
The “prep diet” was too much for my already-weakened body to handle (i.e. clear liquid fasting). Couple NOT eating all day with a full bottle of Miralax laxative powder, laxative tablets and all afternoon on the toilet, and by midnight that night, I was “far gone.”
Walking up the stairs to go to bed, I blacked out—passing out on the floor, and eliminating more bowels.
It took me about a minute to come to, as I don’t remember what happened, and strewn on the floor, my body started convulsing and trembling, my teeth chattering, and all I remember is asking my mom for a banana—some potassium.
Ten minutes later, the ambulance was there, and I was hooked up to IV fluids, EKG monitor and  a blood pressure cuff on my way to Dell Seton Medical.
“Electrolyte imbalance,” the ER doc diagnosed, and by 4 a.m., my mom and I were back out the door to prepare for my 5 a.m. colonoscopy arrival time.
I went through with the procedure, but little did I realize the “health issues” were not over, as my body spent the next 5-6 weeks trying to recover from the stressful event, inclusive to:
2 more ER visits (for “electrolyte imbalances” and hypoglycemia)
3 urgent care visits for more fluids and blood work
A GI Doctor office that would not return my phone calls post-procedure
A severe acute allergic reaction to a cat that moved in with a new roommate
Blood sugar highs and crashes
And more than a handful of diagnoses, speculations and prescriptions from docs trying to figure out what was going on, including: Asthma, Type I Diabetes, obstructed respiratory system, low sodium, iron overload, and…adrenal insufficiency (aka: “adrenal fatigue” or “HPA Axis Dysfunction”). 
Adrenal Insufficiency (aka: HPA Axis Dysfunction)
Adrenal insufficiency (aka adrenal fatigue—or “HPA Axis Dysfunction”)  IS real, and although our bodies are resilient to handle stress, if TOO MUCH stress happens at once, or a SUPER STRESSFUL event sets you over the edge, then HPA Axis Dysfunction is a byproduct.
The result?
Complete body imbalance. 
The news was really no new news to me. It was more like an “A ha!” moment.
A ha! This is EXACTLY what I had been experiencing all along, I thought.
I could talk about adrenal insufficiency or HPA Axis Dysfunction ALL DAY LONG. I could write about it and educate others about it.
However, when it came to looking at myself in the mirror and facing the facts that I had NOT been taking myself…easier said than done. (It is like the nail salon technician that paints everyone else’s nails—but their own).
Flat on my back, in a hospital bed in the ER after an emergency trip due to a 3 a.m. hypoglycemic blood crash after a friend’s wedding in Dallas was the wakeup call I needed.
For the past two years, (ever since my symptoms of SIBO, gut dysfunction and other health maladies had begun), my prayers had been:
“Lord, be Lord over my body,” 
“Lord, bring the manna and balance to my life,” and,
“God, help restore my body to health and help me put on healthy weight.”
Be careful what you pray for.
Never in a million years did I think that my “answer” to my prayer would be in the form of a blood sugar crash, but it was the wake up call I needed.
It was as if God was saying: “Lauryn, you DON’T have to save the world…I have already done enough.” And, “Instead of trying to bring glory to yourself, bring glory to me. Live out the gifts I’ve created and let me provide the rest.”
Mic drop.
I spent the rest of the weekend, praying, thinking and broken. I didn’t want to go back to my hamster wheel ways.
And you know what…I didn’t have to. I don’t have to. And whatever plates you are spinning or race you are running too…You don’t have to either.
How HPA Axis Dysfunction Happens
So…how did my body get SO out of whack in the first place?! How does HPA Axis Dysfunction REALLY happen?

What's more, it's especially important to make sure your diet is well-planned when you're eating keto-style, because the foods you can choose from are limited. In addition to checking in with a dietitian if you're able, Stefanski recommends that you "talk to your doctor and make sure she or he is aware that you'll be starting a diet that completely changes how your body metabolizes energy." You might also want to check your most recent bloodwork levels for things such as cholesterol, vitamin D, and other indicators of health because these can change while on keto. That's because for some people, a prolonged keto diet can result in certain nutritional deficiencies or even high cholesterol. But most experts will tell you that the ketogenic diet is not a permanent lifestyle change (as could be the case for something like the 80/20 approach to eating or a Mediterranean eating style).
When and How Much to Eat
One thing many people love about keto diet meal plans is that tracking your food is optional. "One of the biggest benefits of the ketogenic diet is that there's no need to meticulously track your calories like you may in other diets," notes Dr. Josh Axe, D.N.M., C.N.S., D.C., founder of DrAxe.com, best-selling author of Eat Dirt, and cofounder of Ancient Nutrition. "Because you're filling up on fat and protein, you're more likely to feel satisfied and energized all day long, which causes you to naturally eat less." This isn't to say that food tracking on keto is discouraged. "Some people may find calorie counting a useful tool to be more mindful and aware of what they're eating, but it's not necessary on the ketogenic diet," says Dr. Axe, but there's no need to get too stressed about hitting a certain caloric goal, especially if you're not trying to lose weight. One area where food tracking can be especially helpful, though, is ensuring that you're hitting the right ratios of macronutrients-protein, carbs, and fat. "The most researched version of the ketogenic diet derives 70 percent of calories from healthy fats, 20 percent from protein, and only 10 percent from carbs," explains Charles Passler, D.C., nutritionist, and founder of Pure Change. "In the ideal world, each keto meal and snack should have that same (70/20/10) ratio of macronutrients, but studies have shown that you'll still achieve great results even if each meal varies slightly from that ratio, just as long as you don't exceed 50 grams per day of carbs, or eat those carbs in one sitting," says Passler. In order to achieve these ratios without a preset meal plan from a dietitian or doctor, some food tracking is probably going to be necessary. But once you get the hang of things, you may not need it anymore.
How often you eat is also up to your personal preference. "For most people, I recommend three to four meals per day with a few healthy keto snacks in between," says Dr. Axe. "This ensures that you're getting a good mix of protein and fat all day long to keep you feeling energized and satisfied." That being said, he encourages people to listen to their bodies and tune in to when they're truly hungry. "If you find that you feel better eating five to six smaller meals spread throughout the day, do what works best for you."
Lastly, if you're active, you might need to make some adjustments to take that into account. "For the first one to two weeks, temporarily reducing your exercise load can be helpful as your body adjusts to being in ketosis," he says. "Additionally, for those who have an intense workout schedule, carb cycling may be a good option." Carb cycling essentially means you'll increase your carb intake on the days you're doing exercise, ideally just two to three days per week. "While low-carb days may be around 20 to 30 grams of net carbs daily, high-carb days can range all the way up to 100 grams, although it can vary based on your size and activity level," says Dr. Axe. I’ve wondered before if it’d be better to make Maggie’s food right at home.

Basic Instructions

Tips for Doing Keto Without Dairy
I love dairy. As a man of primarily Northern European descent, my ancestors have been consuming the stuff for thousands of years. It doesn’t give me any issues. You won’t find me chugging tall glasses of straight milk these days, but I’m a big believer in cream, cheese, yogurt, and kefir. Very nutrient-dense food if you can handle it. Lactase persistence? I practically have lactase insistence.
My favorable response to dairy makes keto especially easy. High-fat and fermented dairy is high in nutrients and low in digestible carbs (the bacteria consume most of the lactose). Cheese, cream, kefir, and yogurt all happen to be the most nutritious forms of dairy and the most keto-friendly. Many others getting into keto lean heavily on dairy. It just makes keto easier, especially if you’ve grown up eating dairy.
But globally my reaction to dairy is pretty rare, and that changes the keto landscape for most people.
Most of the world has some degree of lactose intolerance, meaning once weaned from breast milk they no longer retain the digestive enzyme required to comfortably break down the milk sugar lactose. A smaller but still significant chunk of people have dairy protein intolerance; they get an inflammatory or allergic response to the proteins found in dairy, most commonly casein. And there’s also the problem of A1 casein, a relatively novel form of dairy casein that has been shown to cause inflammatory issues in the guts of susceptible people, whereas the more “ancestral” form of casein—A2 casein—does not. A1 casein is far more common these days, and not everyone can handle it or find access to A2 casein-producing dairy animals.
In other words, there are many people reading this blog interested in going keto who either cannot or don’t want to consume dairy. They need tips for doing it dairy-free. And today, I’m going to give them some.
Before anything, make sure you actually are dairy or lactose-intolerant. I wrote a post explaining how to determine whether you truly are intolerant of dairy, as well as some suggestions for overcoming it (if possible).
If you know you’re dairy intolerant or choose to avoid dairy for other reasons, here are a few tips for keto eating dairy-free.
Explore Cream Alternatives
If you prefer cream in your coffee, it doesn’t have to be heavy whipping cream. Other options exist.
Coconut milk/cream: Pretty simple stuff. Coconut cream is richer and heavier.
Coconut butter: Just add a spoonful or two and blend to combine.
Coconut milk powder: This is another option. I use it in my Primal Fuel and Collagen Fuel products.
MCT oil powder: I’ve never been a big fan of the straight-up MCT oils. They’re fine if you like adding oil to your coffee, but I really prefer using the powdered MCT oil. The way I do it is mix a scoop or two with a little liquid—milk (although not if you’re avoiding dairy), coconut milk, water, etc—and then add the resulting slurry to the coffee.
Cashews: Cashews are a great creamer replacement because they have a natural sweetness to them. They’re also very rich in fat and low in fiber for a nut, so they promote extreme creaminess when blended. Some of my favorite Indian curries use cashews blended into water as the base instead of heavy cream or yogurt.
Tahini: A fantastic alternative to heavy cream is to blend tahini (sesame seed butter) with coconut milk and a teaspoon of blackstrap molasses. I normally blend the tahini into a bit of heavy cream, but coconut milk or cream also work. Don’t fear the few carbs in that teaspoon of blackstrap molasses; it’s key. You’ll find a nice coffee recipe using tahini here.
Macadamia cream: Blend macadamia butter (make by throwing mac nuts into a food processor) with a bit of water. Mac nuts are almost pure fat, so they make a fantastic creamer base.
Hemp: As I mentioned in one of my recent Sunday With Sisson emails (subscribe to the newsletter to receive those if you’re interested), one of my latest favorites is using 2-3 TB whole hemp hearts, a scoop of Vanilla Collagen Fuel, a dash of salt and cinnamon, and blending it all together until frothy and creamy. The hemp provides a ton of magnesium and creaminess, the Fuel gives collagen and rounds it out, and the salt and cinnamon provide flavor, sodium, and a little extra barrier against insulin resistance. All told, it’s a great way to enhance your coffee and provide many of the nutrients you need while ketogenic.
Eggs: Primal egg coffee. Egg yolks are also great thickeners for sauces where you’d normally use cream or butter.
Non-dairy milks: Read all about the relative benefits and drawbacks of the various non-dairy milks, then make your choice.
Get Enough Calcium
Yeah, yeah, conventional wisdom sources are obsessed with people missing out on calcium if they choose to eschew dairy, and they get so much about nutrition so wrong that it’s easy to ignore that one, too. They’re not wrong though. Dairy is a good source of calcium, perhaps the best, and definitely the easiest and most available. And although one reason why people feel they need so much calcium for good bone health is that they’re walking around with vitamin D deficiency—which impairs calcium metabolism—you do need calcium.
How do you get calcium on a dairy-free keto diet?
Eat bone-in fish. Canned sardines are a really easy, really delicious way to do it. An average can provides about 20% of your daily calcium requirements. Trader Joe’s has a great bone-in, skin-on wild pink salmon in a BPA-free can. If you eat all 7 servings in the can, you’ll hit 70% of your calcium requirements plus 35 grams of fat, much of which is omega-3, and 90 grams of protein. You could even slow cook whole bone-in fish until the bones soften enough to eat.
Cook bones or bone-in meat in acidic liquid. The old practice of adding a splash or two of apple cider vinegar to your bone broth pot doesn’t actually extract any measurable calcium from the bones. To really extract calcium, you need lots of acidity. An old Chinese postnatal meal was spare ribs cooked in vinegar (and sugar, but you can leave that out); the vinegar extracted huge amounts of calcium from the bones, giving the mother a much-needed source of calcium as she nursed her child. Cook ribs, shanks, or make bone broth using an acidic liquid like red wine or a high vinegar:water ratio. The Chinese vinegar sauce had a pH of 3.2, so you’ll want to aim for something in that realm of acidity. Red wine runs between 3.3 and 3.5 pH.
Eat collard greens. Some of the other calcium plant sources are also quite high in oxalates, which can bind to calcium and inhibit its absorption. Collard greens have less oxalate than most others and plenty of calcium. They’re also delicious cooked in some bacon fat, bone broth (maybe the high-calcium bone broth from the last section, even), and vinegar.
Focus On Whole Foods Rather Than Isolated Fats
Lots of keto people use dairy as a crutch. They drink cream by the cupful. They eat blocks of cheese like apples (not a bad thing, necessarily). They eat bowls and bowls of stevia-sweetened whip cream. They throw sticks of butter in their coffee. All of this in a quest to “get more fat.” These are good foods, to be sure (it’s a great crutch), but I don’t think they should form the basis of your caloric intake. They should enhance a meal, not replace it.
What if instead of subbing in buckets of coconut cream, cashew cheese, and MCT oil, you ate more eggs, meat, and salads? You don’t need to drink shots of olive oil or avocado oil. You can add them to your salad along with some olives and avocado. You can eat actual foods. Actual meals.
This applies to people eating dairy, too. But if you’re dropping dairy and are interested in 1-to-1 isolated fat sources, perhaps use this opportunity to switch over to a whole foods-focus.
Be Prepared
A big reason keto folks rely on dairy so much is that it’s easy. It’s right there, ready to be poured (kefir, cream), sliced up (cheese), spread (butter), or scooped out (yogurt, cottage cheese).
If you’re like most people, and you don’t have unlimited time to whip up amazing meals at the drop of a hat, you need to be prepared. You need to go shopping and get easy-to-prepare and prepared foods.
Charcuterie/cured meats, boiled eggs, cooked bacon, olives, nuts, seeds, canned fish, smoked oysters.
Cook meals ahead of time, or make enough for leftovers. A cold chicken leg or cold NY strip steak sliced up are some of my favorite “easy” meals.
Salad makings prepared and on hand (veggies, lettuces, dressings).
Coconut butter on hand for those times you just need a spoonful.

Most of all, don’t sweat it too much. Dairy isn’t essential. Dairy isn’t necessary. You’ll do just fine with or without dairy.

Some of my favorite Indian curries use cashews blended into water as the base instead of heavy cream or yogurt.
Tahini: A fantastic alternative to heavy cream is to blend tahini (sesame seed butter) with coconut milk and a teaspoon of blackstrap molasses. I normally blend the tahini into a bit of heavy cream, but coconut milk or cream also work. Don’t fear the few carbs in that teaspoon of blackstrap molasses; it’s key. You’ll find a nice coffee recipe using tahini here.
Macadamia cream: Blend macadamia butter (make by throwing mac nuts into a food processor) with a bit of water. Mac nuts are almost pure fat, so they make a fantastic creamer base.
Hemp: As I mentioned in one of my recent Sunday With Sisson emails (subscribe to the newsletter to receive those if you’re interested), one of my latest favorites is using 2-3 TB whole hemp hearts, a scoop of Vanilla Collagen Fuel, a dash of salt and cinnamon, and blending it all together until frothy and creamy. The hemp provides a ton of magnesium and creaminess, the Fuel gives collagen and rounds it out, and the salt and cinnamon provide flavor, sodium, and a little extra barrier against insulin resistance. All told, it’s a great way to enhance your coffee and provide many of the nutrients you need while ketogenic.
Eggs: Primal egg coffee. Egg yolks are also great thickeners for sauces where you’d normally use cream or butter.
Non-dairy milks: Read all about the relative benefits and drawbacks of the various non-dairy milks, then make your choice.
Get Enough Calcium
Yeah, yeah, conventional wisdom sources are obsessed with people missing out on calcium if they choose to eschew dairy, and they get so much about nutrition so wrong that it’s easy to ignore that one, too. They’re not wrong though. Dairy is a good source of calcium, perhaps the best, and definitely the easiest and most available. And although one reason why people feel they need so much calcium for good bone health is that they’re walking around with vitamin D deficiency—which impairs calcium metabolism—you do need calcium.
How do you get calcium on a dairy-free keto diet?
Eat bone-in fish. Canned sardines are a really easy, really delicious way to do it. An average can provides about 20% of your daily calcium requirements. Trader Joe’s has a great bone-in, skin-on wild pink salmon in a BPA-free can. If you eat all 7 servings in the can, you’ll hit 70% of your calcium requirements plus 35 grams of fat, much of which is omega-3, and 90 grams of protein. You could even slow cook whole bone-in fish until the bones soften enough to eat.
Cook bones or bone-in meat in acidic liquid. The old practice of adding a splash or two of apple cider vinegar to your bone broth pot doesn’t actually extract any measurable calcium from the bones. To really extract calcium, you need lots of acidity. An old Chinese postnatal meal was spare ribs cooked in vinegar (and sugar, but you can leave that out); the vinegar extracted huge amounts of calcium from the bones, giving the mother a much-needed source of calcium as she nursed her child. Cook ribs, shanks, or make bone broth using an acidic liquid like red wine or a high vinegar:water ratio. The Chinese vinegar sauce had a pH of 3.2, so you’ll want to aim for something in that realm of acidity. Red wine runs between 3.3 and 3.5 pH.
Eat collard greens. Some of the other calcium plant sources are also quite high in oxalates, which can bind to calcium and inhibit its absorption. Collard greens have less oxalate than most others and plenty of calcium. They’re also delicious cooked in some bacon fat, bone broth (maybe the high-calcium bone broth from the last section, even), and vinegar.
Focus On Whole Foods Rather Than Isolated Fats
Lots of keto people use dairy as a crutch. They drink cream by the cupful. They eat blocks of cheese like apples (not a bad thing, necessarily). They eat bowls and bowls of stevia-sweetened whip cream. They throw sticks of butter in their coffee. All of this in a quest to “get more fat.” These are good foods, to be sure (it’s a great crutch), but I don’t think they should form the basis of your caloric intake. They should enhance a meal, not replace it.
What if instead of subbing in buckets of coconut cream, cashew cheese, and MCT oil, you ate more eggs, meat, and salads? You don’t need to drink shots of olive oil or avocado oil. You can add them to your salad along with some olives and avocado. You can eat actual foods. Actual meals.
This applies to people eating dairy, too. But if you’re dropping dairy and are interested in 1-to-1 isolated fat sources, perhaps use this opportunity to switch over to a whole foods-focus.
Be Prepared
A big reason keto folks rely on dairy so much is that it’s easy. It’s right there, ready to be poured (kefir, cream), sliced up (cheese), spread (butter), or scooped out (yogurt, cottage cheese).
If you’re like most people, and you don’t have unlimited time to whip up amazing meals at the drop of a hat, you need to be prepared. You need to go shopping and get easy-to-prepare and prepared foods.
Charcuterie/cured meats, boiled eggs, cooked bacon, olives, nuts, seeds, canned fish, smoked oysters.
Cook meals ahead of time, or make enough for leftovers. A cold chicken leg or cold NY strip steak sliced up are some of my favorite “easy” meals.
Salad makings prepared and on hand (veggies, lettuces, dressings).
Coconut butter on hand for those times you just need a spoonful.

Most of all, don’t sweat it too much. Dairy isn’t essential. Dairy isn’t necessary. You’ll do just fine with or without dairy.
