9 days vegan :)
Heyy! So I know I haven’t been posting daily like I said I would... BUT I have been following my vegan diet :) so the count-up continues!! Been busy will classes online since we’ve been assigned more work since the transition to online classes. I’m also not pressed to post since no one is really watching and I’m doing this for me. I’ve been stretching/doing yoga daily. I have not been working out daily however :( but baby steps! Some things I’ve been eating regularly are plantains, peanut butter sandwiches, frozen smoothies with vegan protein powder, the general tsos tofu I posted, muffins, fruit bars, etc. !!!

Hello!
I've decided to create this blog to share my transition into a plant-based diet. I've always had an interest in nutrition, but for a long time, I had no idea where to start. I had many traditional beliefs ingrained in me, like "I need meat to build muscle."
It's funny because I used to RESENT plant-based diets. I thought it was a fad, a trend and nothing more. I thought people followed vegan diets with underhanded desires to simply lose some pounds. I had no idea that it was actually a great, healthy, sustainable diet.
People's perception around plant-based diets is clouded by fanatics and excessive moralists. They turn people away. I try to be quiet and gentle about my desire to go plant-based. I don't bring it up -- I prefer to lead by example, to share my experience, and you'll decide what to eat. I am NOT against you eating meat-- you are completely free to do so. You are free to make the choices that will impact your life.
I simply didn't want to lazily continue eating the same way-- after realizing the effects that my dietary choices had on my health. Once you know the information, it's difficult to just turn a blind eye.
I also love cows and animals. If I don't have the necessity to slaughter them, why should I?
I have to admit-- my feelings change when it comes to fish. Especially because of my religious beliefs. In the Bible, people fished, and fishing is a metaphor and a symbol of prosperity. I don't view their pain the same way I view the pain of a terrestrial animal. 
Fish come from WATER. They are a blessing. But it's honestly okay if I didn't want to eat fish either. We live by faith.
It will be one of the last things I give up. I love fish, but I embrace the fact that I don't have to eat them if I don't want to.

▪️ Это ее осознанный выбор. Если она никого не критикует - пожалуйста, почему бы и нет. Мне было бы сложно привыкнуть к тому, что я должен готовить себе отдельно. Я очень ленив.
❓: Вы смогли бы перейти на растительное питание вместе с ней?
▪️ Сомневаюсь, так как слишком люблю мясо. Я - мясоед. Но я не был бы против попробовать что-то новое. Думаю, что легко бы совместил мясо и растительную пищу, но не уверен что смог бы целеком исключить его из рациона.
❓: А если бы она готовила разнообразные и сытные блюда без ПЖП, то вы смогли бы перейти на "зелёную" сторону?
▪️ Я не знаю. Не могу сказать. Слишком велик соблазн съесть что-то привычное.
❓: Как вы относитесь к Zero Waste? Смогли бы вести такой образ жизни?
▪️ Идея хорошая. Я и сам стараюсь меньше мусорить, как-никак мой отец был экологом.
❓: Вы бы не чувствовали себя зажатым посещая магазины с фруктовками и тканевыми сумками?
▪️ Нет. Я стараюсь по-минимуму. Всегда хожу в магазины с рюкзаком и старыми пакетами. Не эко-сумки, но все же.

I cant help but think that my friends and family are chosing to be blind to the truth, and they make me feel so small.
I know what I'm doing is right for myseld, but more importantly the enviro and animals! But, I'm so tired of people being so ignorant.

We all have to face life with our passion. I must rediscover the irresistible will to learn--to love and to be more patient and compassionate to those who continue to bring me down. You are what you eat. You can't cheat on your weighing scale. You've worked out your mouth too much that you continue to gain weight more than getting sympathy from people. My advice? Join our run tribe or do yoga with me, join in my meditation practice, be beautiful inside out, don't binge on junk food just because its vegan... drain all the negativity from your thoughts and the universe will reward you. Stop using my name as your marketing strategy, follow me and become a star in your own right. Day 1 thoughts
I ate vegan chipotle and it was bomb af. Also watermelon and a vegan burger for dinner. Had a 2 second crisis about cheese and ice cream but remembered that coconut milk ice cream is a thing. Hooray for day 1 and new beginnings!

Went plant-based grocery shopping today! I am sooooo excited! Everything I bought you can get at Walmart! Not going to lie I’ve been slacking on the workouts but I have been stretching everyday!
The above picture just shows three of the meat substitutes I decided to try this week. On the left is a General TSO’s tofu. I heard some good reviews on this meal and I normally do like General tso’s chicken so I’m hoping I like this! In the middle is “chicken nuggets” made with chickpeas. I was talking to a lady in the store and she mentioned that she loved that buffalo chicken ones (same brand) but I’m not a buffalo person so I went with the regular. On the right is a beef less meat. The same lady at the store (she was so kind) said she makes tacos with this and it’s great. I love tacos and I’m definitely going to try.
Along with who’s stuff I also bought iceberg lettuce, baby carrots, almonds, bananas, green and red peppers, a pineapple (I normally buy frozen fruit but the grocery store had none!), cranberry juice, coconut milk blueberry yogurt (very excited to try) , potatoes, beans, and plantains. There are probably some things I’m forgetting but I’ll post how this week goes and my meals for everyday! :)

Даже у тех, кто ест мясо и рыбу, нередко наблюдается авитаминоз. Так что нет ничего сверхъестественного в том, что и вегетарианцам порой не хватает определённых витаминов. Причины могут быть разными: начиная с неправильно составленного рациона и заканчивая затяжной болезнью.
Чаще всего обнаруживается дефицит:
A (ретинола) — содержится в рыбьем жире, печени (особенно говяжьей), икре, молоке, сливочном ��асле, сметане, твороге, сыре, яичном желтке;
D (кальциферола) — его источниками являются рыбий жир, жирные сорта рыбы (лосось, треска), икра, сливочное масло, сыр, яичный желток;
B12 (цианокобаламина) — его можно найти в говяжьей, куриной и свиной печени, баранине, курином сердце, морепродуктах (осьминогах, мидиях, креветках), рыбе (сельди, скумбрии, карпе), сыре, яичном желтке, йогурте, сметане.
Чем это опасно
К сожалению, далеко не все вегетарианцы серьёзно относятся к возможной нехватке вышеперечисленных витаминов в своём организме. На первый взгляд, действительно, их всего три, некоторые можно восполнить и вегетарианской пищей — о чём переживать? На самом же деле длительный и постоянный дефицит каждого из них может привести к трудно излечимым, а подчас и необратимым последствиям в плане здоровья. Судите сами.
Гиповитаминоз ретинола:
гемералопия — нарушение сумеречного зрения и адаптации в темноте;
гиперкератоз — интенсивное слущивание кожи, слизистых оболочек;
замедленный рост костей (особенно опасен для детей);
кератомаляция — гнойное размягчение роговицы;
ксерофтальмия — сухость роговицы;
увеличивается риск воспалительных процессов — дерматита, ринита, фарингита, бронхита и др.
Гиповитаминоз кальциферола:
бессонница;
гипертония;
гипотиреоз кожи головы;
замедленный рост у детей;
кариес, деформация зубов и костей;
мигрень;
мышечные судороги;
проблемы с сердцем и сосудами;
резкое похудение;
слабость, ухудшение самочувствия, вялость — всё это часто перерастает в депрессивное состояние;
суставные боли.
Гиповитаминоз цианокобаламина:
анемия;
вялость, слабость, чрезмерная сонливость;
гематологические изменения: тромбоцитопения (уменьшение тромбоцитов), пониженный уровень железа;
генетические патологии, провоцирующие развитие онкологии и мутаций;
нарушения зрения;
неврологические расстройства: покалывания и онемение в суставах, ухудшение памяти и концентрации внимания, скованность в конечностях, нарушения сна, снижение болевого порога;
психические расстройства: шизофрения, раздражительность, нервозность, депрессия, деменция, псих��з, галлюцинации;
снижение аппетита и как следствие — потеря веса;
у женщин — сбой менструального цикла.
Естественные источники
А:
бобовые: соя, горох;
ламинария;
овощи (преимущественно зелёного и жёлтого цвета): морковь, сладкий перец, тыква, шпинат, зелёный лук, брокколи, зелень петрушки;
травы: фенхель, подорожник, овёс, люцерна, бурачник, корень лопуха, кайенский перец, хмель, хвощ, лимонник, крапива, коровяк, петрушка, мята перечная, шалфей, щавель, толокнянка, клевер, листья фиалки и малины;
фрукты: яблоки, персики, абрикосы, виноград, арбуз, дыня;
ягоды: шиповник, черешня, облепиха.
D:
водоросли;
лесные (но не производственные, выращенные под искусственным освещением) грибы (особенно лисички);
дрожжи.
В12:
Не имеет растительных источников. 
Витамины и добавки
К сожалению всё, что продаётся в аптеке не является веганским (кроме препаратов-дженериков). На сайте i-Herb можно найти любые витамины в необходимой для вас дозировке. Лично я пью D3+K и В12.
