Brazilian Carrot Cake

2 cups all-purpose flour
1 1/2 cups cane sugar
2 tsp baking powder
1/2 tsp salt
2 cups grated carrots
1 cup coconut milk yogurt
2/3 cup vegetable oil
1 tbsp vanilla extract
Preheat oven to 350 degrees F. Grease and flour a bundt pan.
In a large glass mixing bowl, sift together the; AP flour, cane sugar, baking powder, and sea salt. Set aside.
Place the; grated carrots, coconut milk yogurt, vegetable oil, and vanilla extract in a high speed blender. Blend until smooth and creamy.
Pour the wet ingredients into the dry ingredients and stir until fully combined. Pour into prepared bundt pan.
Bake in preheated oven for 50 minutes. Remove from oven and allow to cool for about 15 minutes.
Flip onto a cake platter. Pour chocolate glaze evenly overtop.
Brigadeiro-style Chocolate Glaze
1 can (175 ml) sweetened condensed coconut milk
1/2 cup vegan chocolate chips
1 tbsp vegan butter
1/4 tsp salt
Place the; sweetened condensed coconut milk, chocolate chips, vegan butter, and sea salt in a small glass mixing. Place in microwave. Heat several times, in 30 second increments, stirring between each, until chocolate chips are fully melted and mixture is thick, but pourable. Pour over cake.
