Tzatziki

This refreshing and fragrant Tzatziki will help you deliciously cool off in the heat, whether you have it as an appetizer or as a condiment! Happy Thursday!
Ingredients (makes a cup): 
1/2 cup Greek Yoghurt
1/3 cucumber, rinsed
a small garlic clove, minced
a pinch of salt and freshly cracked black pepper
half a dozen large fresh mint leaves (or a dozen smaller ones)
2 sprigs fresh Parsley
2 sprigs Cilantro
1 tablespoon olive oil
Fit cheesecloth or a coffee filter into a small funnel. Set over a glass, so it is stable. Spoon Greek Yoghurt into the coffee filter. Place in the refrigerator, and allow to strain, at least a couple of hours.
Halve cucumber, and remove its seeds in the middle with a sharp knife. Cut into small dices. 
In a bowl, combine strained Greek Yoghurt, diced cucumber, minced garlic, salt and black pepper.
Finely chop mint, Garden Parsley and Garden Cilantro, and add to the bowl as well, along with olive oil. Give a good stir, until well-mixed.
Chill in the refrigerator, at least a couple of hours more.
Serve Tzatziki very cold, with warm Flatbreads, Beef Koftas or Lamb Chops.

Ramos Tzatziki !
Ingredients:
3 Cucumber Wheels
2 sprigs Mint
2 sprigs Dill
1 Pinch of Salt
1/2 oz Lemon Juice
2 oz Alcohol Free Gin Sobrii 0-Gin used here
2/3 oz Simple Syrup
1 Egg White
1.5 tbsp Greek Yogurt (Plain Flavour)
2 Cucumber Ribbons for Garnish
1/2 oz Club Soda
Instructions:
While preparing your cocktail, line inside of glass with cucumber ribbons and place into freezer.
In a shaker, muddle your cucumber well with 1 sprig each of Dill and Mint, and a pinch of salt.
Add your lemon juice, Alcohol Free Gin, Simple Syrup, Greek Yogurt and egg white and give this a vigorous dry shake (without ice).
Add ice to your shaker and shake vigorously again until the shaker is almost too cold to hold.
Grab your glassware from the fridge and add a few cubes of ice. Strain your cocktail.
Let it settle for 1 minute before adding your club soda slowly. Garnish with remaining mint and dill.
