I'm opening a high-end, late night, delivery only restaurant in DC because I noticed it's really hard to find quality food past 10pm. Despite being a mid-tier, expensive city to live in, everything closes after 10pm. Whats left is junk, like pizza and convenience shops, McDonalds, and Subway.I want to get your opinions on what I need to do in order to be successful and whether you think I'm crazy.Set opening, Nov 20, 2019Time: 7pm-6amKitchen lab with all appropriate licenses. I only have to pay $900 per to gain access to the kitchen from 6pm to 6am. An extra $400 grants me 24 hour access everyday.Target market. I am targeting-hospitals, nurses order out a lot and want better options. Hospital workers will get a discount.-congress: bunch of people slave away late at night-working professions (consultants, lawyers, etc). If your a lawyer, the client pays for food if your still working past 8pm so you care less about price.-hotel guests: a lot of hotels close their kitchens at 10pm on the dot, if not earlier.-airport travelers: people flying into DC or who are stuck, often run into the issue of having no good food options-college students: many are poor but many are loaded. Georgetown has a bunch of rich kids, next is George Washington University, and American U. Howard U is also in play but not as much.-clubers, smokers, night owls: these people are generally pretty cheap but I'm hoping a small enough fraction ball out.Economicstarget sale price: $40 per orderfree delivery for orders within DC.$5 delivery fee for orders going to Arlington, Bethesda, and National Harbor MD.$10-20 for deliveries further than that.If you order directly from me (phone, website), you get 10% automatic discount.If you order from 3rd party apps, you get the privilege of paying extra to cover their extortion fees:)I talked to an owner/investor of restuarants, his business is near the National Mall.He said he can get me quality Sous chefs for $60k a year. Apparently that's market rate in DC after talking to multiple people.Ideally I want 2 sous chefs and assistants. One of each would work half the week together, while the other covers the rest. I can't cook for shit. The assistant would probably cost $40k per year.Ideally I want to contract out deliveries to disgruntled Uber/Lyft drivers and pay them a flat $7 per delivery fee.Realistically, I would start with one sous chef and assistant. Maybe just the chef to further cut down on costs. I would also do deliveries myself.Doing the math, I think I only need an average of about 30 direct orders per night to make money. I don't know how realistic this is though.Menu & PricesThis seems to be the hardest so far. I first asked a 60 year old women what she thought about paying $30 for just a burger, fries and drinks sold separately for $7. She said she paid $20 for tea at her hotel so $30 for a burger seemed reasonable. That's the thing with DC, you never know who's rich and who's not. I ultimately begrudgingly include fries and drop the price to $25. I paid $20 for my burger and fries downtown around that time. I decided to model my prices on the restaurant Black Tap NYC's prices. I know I need to scale down the menu but I don't know what to keep and get rid of. Everything will be order in small batches, and will not be made until the order is placed.
