i love cooking a big batch of meatballs to eat in sandwiches, over rice, or with cheese and veggies throughout the week. they’re also super convenient to pack my husband for lunch. i don’t love pasta too much but i’ll fuck up some meatballs any day.

if there is orange juice in my fridge im making this damn near daily (i always have tofu and soy sauce on hand - they’re essential like water). literally it’s too easy to make and so fucking good. orange juice, soy sauce, maple syrup, a splash of vinegar. you’re doing yourself an injustice if you don’t try this.
popcorn chicken salad

my favorite way to utilize seasonal vegetables is to chop them real small, oil/season them, and throw them in the air fryer until the toasty. then dump them over various dark greens with some popcorn chicken, a creamy dressing, and maybe some nuts or chopped apples and goat cheese. so filling, easy af way to get a variety of veg in one meal.

my husband wakes up for work at about 5 every morning, so i get up with him and make us breakfast. neither of us eat until much later but having it ready makes the morning go by so much smoother and having a guaranteed breakfast is a lifesaver. this is protein filled and always tasty. i just do eggs, tons of spinach, potatoes, sausage, and bell pepper. the key is to dice everything super small so every bite has everything! i don’t add cheese (the pic is from pinterest), i add sriracha to mine

i try to always have what i call a “breakfast sweet” (although they’re really midday snacks for us) on hand or else we get peckish and make poor snacking choices. our current faves are chocolate chip muffins and apple cinnamon muffins. everything from scratch, always!

Breakfast: Strawberry Greek Yogurt cup + Apple
I wasn’t too hungry this morning, so just something simple. Also had a couple coffees for caffeine 😮‍💨
Total Cals: 265
Lunch: Half Sandwich + Veggie Soup
I made an open face sandwich with sliced chicken, lite mayo, and sriracha. Paired with a can of Progresso Lite Veggie soup.
It was actually really good and will probably be a safe meal for me. Also had a Diet Coke 🤤
Total Cals: 375
Snacks: Macaroon + Popcorn
I had a strawberry macaroon before lunch with a coffee. And a bit after lunch I had a serving of White Cheddar Skinny Pop popcorn.
Total Cals: 210
Dinner: Veggie + Egg Scramble
I got home late from work and was super hungry. I made a 3 egg scramble with cabbage, mushrooms, onions, garlic, soy sauce, avocado, and of course some kewpie mayo 😏
This was sooo filling and really hit the spot! ☺️

Mental health wise, it was a good day and I feel motivated still. Official day #2 counting calories down 🥳

I straight up forgot I was doing this so days 6-12 under the cut!!
Day 6: yeah, I literally have BED. It’s mostly cuz I was never allowed to eat what I wanted so anytime I got to have food I actually liked I would just eat as much as I could bc I never knew when I’d be allowed to eat it again. And now that I’m older and can make my own decisions I don’t need to worry abt the next time I can have it but I still do it bc it’s all I’ve known.
Day 7: I’m grown so my parents don’t really know what I’m up to. My dad doesn’t gaf but my mom will probably be really pleased the next time she sees me even though she pretends like she doesn’t care
Day 8: I usually do weights targeting diff areas of my body every day plus a core circuit, depending on how much energy I have whether it’s 1 set or more. And then I’ll do a treadmill workout usually between 45 mins to an hour, and just try to burn as much as I can walking on an incline. I use the rowing machine sometimes too because I used to row.
Day 9: all the time ever since I was old enough to remember. I’ve always been bigger just naturally, and I’ve been bullied about it by my classmates and my family and my doctors for my whole life. Im never ever ever going to be able to heal from how much everyone has hurt me ever in my life.
Day 10: I guess just eating whatever I want during the week? I don’t really cut foods out other than just staying under a limit/f4sting. I try not to eat a lot of carbs just bc ik they’re not as filling. Luckily I really enjoy vegetables so it’s not too hard.
Day 11: uhhh I don’t rly have one favorite one I just follow a bunch of people!!
Day 12: when I’m r3str!ct!ng it’s usually a lot of salad/veggies and lean proteins like chicken or fish or shrimp, and yogurt bowls and overnight oats. Current fav is half a can of salmon mixed w a spoonful of plant based greek yogurt and sriracha, some chopped green onion, dried dill, black pepper, and garlic powder, tossed w chopped romaine. It’s high vol and high protein so it’s filling and it’s rly yummy. And it’s only like 125-150 cal!
I’ve also gotten into green juice recently and I actually rly like it. One of my fav safe foods is popcorn, it’s so low cal and high volume and satisfying and really helps curb binges. Normally I really love noodles and rice, any Asian food in general. I love cooking so it’s hard to eat healthy when I have all these dishes I know how to make.
