Quite true.
He dances well and he practices "savate" and "chausson". I tried looking up their differences but I keep finding the same results for both words. It's not boxing, it's also called French boxing but it's much more similar to kick-boxing. It originated in Parisian and Marseillais slums but it later got popular among aristocracy as well. You use kicks and slaps, punches were introduced around 1830.
According to the brick, Grantaire is very good in stick fighting too. I always found interesting he is the only one among Les Amis (as far as we know) who is actually trained to fight and he is the one who doesn't lift a finger. It's emblematic of how he has the potential to serve the revolution, he doesn't apply it deliberately.
It's said he also sings constantly, even if I don't think it's very good since it's drunk singing.
He's very knowledgeable in history, he reads english mortality statistics, he has a classical education from what we know but he randomly talks about acids in a drunken rant and once I read (I don't remember where so it may not be reliable info) that what he said was correct and academic knowledge in 1832.
Indeed a super varied range of interests.

One thing that baffles me about the more martial arts-minded Miraculous Ladybug fanfic writers is how they utterly fail to take advantage of the location being Paris. Paris is where Savate went from a sailor’s martial art to a full street fighting system, that included multiple weapons, throws, and even Le Parkour, and then to a sport, and they still have gyms that teach the full thing, plus Parkous gyms and ones that teach La Canne (the French way to murder someone with a walking stick). It’s the martial art one would expect there... But no Savate. It doesn’t matter it was actually in the original PV (Ladybug herself uses La Savate against the Mime, and both her and Chat Noir use Parkour skills), in fanfiction no Savate. It doesn’t matter there’s a scene where it may actually have been used in the show (season 3, episode 1 “Chameleon”: the titular Akuma uses a kick that is present in both Savate, Karate, and Taekwondo), in fanction no Savate. You get Muay Thai (though this one gets a pass, given it’s already in the show thanks to Nora), you get Karate, you get Penkak Silat, but no Savate. Why?

Thomas Bangalter on if he still has his magic Savate powers:
(Apparently Thomas knew Savate at some point irl. It's basically French kickboxing. But I just took it and ran with the idea. Magic lightning powers too because lore.)
"Hey, Thomas! Do you still know Savate?"
Thomas grinned bashfully. "Oh... Well, not really... its been a while." He explained.
"Would you mind showing us some moves?"
A little sheepish, but still happy to oblige, Thomas approached the punching bag they had set up.
Thomas paused to stretch his neck and shoulders for a moment.
Before his face became set and stern. He wondered if he was still as skilled as he had been.
Taking a breath and stepping back into stance, he pulled back his fist. Time seemed to slow.
Thomas' fist struck with the weight of a truck behind it.
Then, as they looked on, Thomas suddenly seemed to blink in and out of sight. It was like he had moved from one side of the room to the other in a spilt second. With no time register that he had even moved.
He just... appeared. To literally blink in and out of existence.
Suddenly, he was now on the opposite side of the bag. His face is a mask of focused concentration.
Seemingly without thought, as though his body moved of its own accord, his leg slammed up into the bag. His entire being seemed to radiate with pure, masterful skill.
The bag immediately flew upwards, towards the ceiling, the force of his kick deceptively strong.
Thomas suddenly straighted up, calmly catching hold of the bag as it swung back down towards him. Replacing it back in its original position.
Turning to smile sheepishly at them, Thomas calmly and casually resumed his seat. Ready for his next question. Seemingly unfazed at the level of strength and skill he had demonstrated.
Fin.
