I had several slices of eggplant leftover over from the BLTs I had made for my family, and I thought this recipe seemed like a fabulous way to top one of my lunch salads and use them up.
I made about a third of this recipe, skipping step 1, as my sesame seeds were packaged pre-roasted. I will add that admittedly my eggplant rounds were more like 1/8 inch thick rather than 1/2, so there were a lot more of them, but I did run out of olive oil while brushing them and ended up adding a teaspoon or two more.
As my rounds were, again, considerably thinner than the recipe calls for, they took slightly less time in the oven. After only two minutes under the broiler, their brown spots were already turning black, so out they came.
As far as taste goes, this were absolutely delicious, as I expected them to be; you really can’t go wrong with miso in any form or fashion, and the overall combination of flavors here was just fantastic. I usually opt for cubed veggies when I’m looking for roasting recipe, but this recipe was so delicious that I think I’ll have to make a future exception here.

Roasted Roots
It is roasted roots vegetable day, here (by my daughter's request).
One each large beet and onion, smallish sweet potatoes (purple and orange), carrots (red and orange) and potatoes (red and white). I chopped them into bite-sized pieces and they're in a 400 degree oven covered in olive oil, salt, and thyme. Perfect food for a very sudden switch to fall weather.
I also got one very large sweet potato (too nice to chop into pieces!) and a massive beet that I'm going to chop into small pieces for a Hero treat. Possibly also Nutmeg. I'm going to guess that horse slobber after a beet treat will be ungodly hideous. Good nutrients for the old boy, though!

Hey hey. Don’t cry. Roast a bunch of colorful veg (yes NOT boil for the love) with olive oil, salt, pepper, and garlic at 400 F ok? Yes about 40 minutes. Add some sausages. See? Much better.

while i like and will eat all vegetables and cannot think of a single vegetable i will not eat i dont like them all equally and i do not enjoy all preperations as much.. kale salads are evil but kale is the best thing ever in soup or smoothies or baked as chips.. kohlrabi is not all that good mashed but very very good in a faux potato salad.. you get me

I needed a roasted broccoli recipe to serve with the pesto risotto we made the other night and this one, a relatively recent addition, seemed perfect. I thought that the tahini would go really nicely with the risotto, inducing the creaminess of both.
I halved this using a full head of broccoli, which is pretty much my only note; this recipe is super simple and super short, too; I think 10 minutes is the least amount of oven time I’ve ever seen for a roasted veg recipe.
Like I said, this was the perfect compliment to the risotto we made, so simple and yet so incredibly delicious. I will absolutely be returning to this recipe as my go-to for roasting broccoli from here on out; it has no faults and can hardly be rivaled in terms of flavor and simplicity.

Making healthy soup for the week
Base was carrot, ginger and orange soup, but I decided to add a sweet potato and spinach and kale just for added nutrients, I'll be blending it up and I think I'll add a can of chickpeas too, just for a little added protein.
