She teaches Palestinian dishes, shares anecdotes and stories about Palestinian culture, and introduces and concludes every episode with a speech about hope and tells us to never stop believing that Palestine will be free and that we'll all celebrate together.

Tasting History is a fun channel and all; the videos are interesting and entertaining, but...my real love right now is Historical Italian Cooking
are their recipes accurate? I have no idea! I don't know anything about ancient roman cuisine! I'm just here to watch this man with sturdy hands cook food over a fire and delicately slice herbs!

and just...look. I lied just then. I do actually know a tiny bit about ancient roman cuisine, and that does come into play here.
garum was this ancient condiment that people made by putting fish and salt in a jar, setting it out in the sun for a few months, and letting the enzymes from the fish guts digest and ferment the fish into an apparently delicious sauce.
but almost every youtuber I've seen try to make it? they just boil some salted fish, strain it, and go, "haha, this tastes weird!"
but that's not what I want! sure maybe that's one variation of the recipe, but I want someone dedicated! I want someone who's willing to leave fish outside for three months and see what the fuck happens!

I want desperately to do this. I need to do this.
there is no way, where I am currently living, it would be possible to do this.

I will think on this for a later date. I will make plans, ask questions, and think about the future.
someday, the mysterious fish sauce will be mine
and until then, I will listen to this person's wonderful accent and watch them make food, wishing that I could hang out with them in their kitchen ♥

Due to some family Trauma and Drama, i can't access my Mother's recipe note cards anymore, so i will have to start to recreate my childhood flavors from scratch. While i don't have the physical materials to do this, i have a blog. So my family issues are your problem now! :D
Fried Chicken
You'll need:
Chicken Flour Salt Garlic Onion Parsley Some kind of oil to cook in.
Total time: about an hour ish?
A cup of flour should cover about 8 average sized pieces of chicken.
Put the flour in a bowl, and literally just add seasonings to taste. It doesn't even have to be what I listed, just throw in whatever you have. I like to go really heavy on the garlic powder, but this last time i did paprika too. Just keeping adding to taste.
And when I say "to taste" i mean that once you mix all the dry ingredients, taste your seasoned flour. You'll want it to have the flavor balance you want in your finished product. If it's too floury, add more salt and other seasonings, if it's too strong, add more flour.
Cook covered on low medium heat in a frying pan with your chosen oil (i like using butter), turning the chicken every five minute. If your chicken starts to stick to the pan, add more oil and/or start flipping it more often or reduce the heat.
I know it will seem like it's taking forever, but it's okay you're not doing anything wrong! It has to cook this slow, or it will burn on the outside and be raw on the inside.
Once the skin starts to turn to a good brown, use a knife to cut into your biggest pieces of chicken to see if they're done. There should be NO pink inside.
Don't feel bad if it takes you a few tries before you get the hang of it, this isn't a beginner meal.

I'm gonna sound like a fucking conspiracy theorist but I think it's very weird that the narrative around eating healthier on English speaking Western online spaces somehow always ends up as "it's just not for common people".
Like on one hand, all the diet culture and "clean eating" bullshit online tends to promote a lifestyle that is unattainable or unsustainable for someone without prior education - like it's always pushing for trendy expensive fresh food every day. I can't have tuna and pasta, the staple food or broken italian students everywhere, I have to have an avocado tuna sandwich. I can't have a bag of frozen spinach, I need baby spinach. Protein smoothies only need powder and a liquid but if you look up online they need twenty ingredients of random assorted bullshit. Add more fruit in your diet BY HAVING FRESH BERRIES EVERY DAY.
On the other hand, most criticism of diet culture and "clean eating" seems to boil down to "see this is bland and boring, don't worry your pretty little head around it and keep eating junk food. No don't learn how to cook, that's just too hard. Just give up entirely". They even had that whole scandal of companies paying influencers under the table and so many headlines screaming "DIETS DON'T WORK" knowing full well no one is gonna click on the article to read the "fad diets don't work and diets don't work because it's supposed to be a lifestyle change not something you do for six months and then give up forever" thing written at the end of it.
Like eating well plays a very important role in everything in your life and you basically have to fight so much advertisement and bullshit trying to convince you that you can't and you shouldn't and btw now we are also turning cooking into a trend, so instead of teaching people to make tuna pasta we need you to believe that it's not cooking unless it can go on instagram.
Nevermind the fact that food tends to be homogenoised and we tend to lose all particularities of local cuisines.
