Patates d’Olot, a filling dish consisting on deep fried stuffed potato slices. The name means “potatoes from Olot”, because the dish originates from this city in the Comarques Gironines area of Catalonia.
Recipe under the cut.
Ingredients for 4 people:
1/2 kg lean pork
120 g veal
1 onion
2 tomatoes
1 dl brandy
1 dl red wine
1/2 l meat stock
salt and pepper
potatoes
1/2 l milk
50 g flour
Preparation:
Cut the meat into dice, season with salt and pepper, and roast in the oven.
Make a roux with the finely chopped onion and the grated tomato.
Add the roast meat to the roux and leave to cook for a few minutes.
Prepare a béchamel sauce with the milk and the flour, add to the meat and finely chop all the ingredients together.
Peel and cut the potatoes into 2-3 millimetre slices.
Cook in abundant oil heated to 160°C. They need only to soften, not to change colour.
Fill with the minced meat and squeeze the edges together.
Dip in beaten egg, and then fry in very hot oil.
