BACKGROUND
 harlow grew up everywhere and nowhere all at once -- her father does international banking and investment while her mom is a famous actress/model who was always traveling for shoots so she stayed with her dad more often than not. but even he moved around a ton so she lived all over the world - milan, seoul, tokyo, sydney, paris. you name it. most of her childhood was spent being homeschooled by her nanny and chasing after her brother in their new hometowns.
around when she turned 14, her dad bought a family house in atlas city along the bay. her and her brother jason were able to finally put down roots in a city and make friends that they could actually keep. this is when she first met adrien, possibly her first best friend beyond her brother.
she went through high school and just kept her walls up -- figuring it was easier since it was only a matter of time before their dad decided to move them again. 
when jason went on to college (university of kyoto), harlow was absolutely crushed because he left her behind and she didn’t have anyone left in atlas city. she begged her dad to move them back to japan, but she was stuck in atlas city.
while traveling and moving around so much, harlow fell in love with food. she’s eaten so much street food, it’s insane. each place they lived, their father would hire a cook to keep the kids alive and they would each teach harlow how to cook in their local styles. this would inspire everything she would cook.
when she graduated high school, she didn’t go to college, but instead managed to get a job at a michelin star restaurant that gave her the training she would need to crack the food scene. during this time, she was living with adrien and she found herself falling in love -- something she didn’t expect at all. but he was her best friend and knew her better than anyone so everything made sense. so when she got pregnant, she was unbearably happy.
but then work became more demanding and she found herself missing out on both leo and adrien’s lives and that filled her with so much guilt and dread. rather than just continuing to hurt them, she decided it was best to remove herself from the equation entirely and moved to france to complete her formal culinary training.
now she’s back in atlas city to be close to her son. she opened a casual bakery/brunch/cafe place called beacon last year and it’s extremely successful. her donuts? insane. try the honeycomb one. but this year she has opened a more formal, fancy restaurant called hearth in the orchard district. she’s also looking to open a pizza place with roger so keep an eye out!
end of the day, harlow is a little competitive, mean, sharp, and cold. but she’s fiercely protective and passionate about what she does. sometimes you can spot the crack in her armor when she lets herself relax and be free.

The various stations you can have in a commercial kitchen
The success of any restaurant or commercial food catering business depends considerably on the back-of-house part of the establishment. How smoothly it runs and how it performs, is mostly determined by the level of organization of the cooking area and the expertise of the chefs and other staff who prepare and serve the food.

A commercial cooking space typically has multiple parts or divisions stocked with different commercial kitchen equipment but the whole layout of the cooking area often depends on the size, budget, and expected production volume. Different sections basically divide the cooking area into separate parts or segments according to the type of cooking activity performed in the area.
The Kitchen Brigade
Historically, the station-concept in large kitchens were adopted from the army or navy, where jobs were typically broken down into structured subdivisions to perform it with high efficiency in minimum time. This system of dividing the designated cooking area is known as the Kitchen Brigade System.
With the advancement of technology and easy availability of fine benchtop catering equipment, the full kitchen brigade systems have been compressed considerably and often more than one segment is combined to fit the space and budget. Most of the fine commercial cookeries now run on a modified version but often retains the traditional names.  
Instead of going into the exact and detailed kitchen brigade system, here we will be discussing the various sections most seen in fine cooking areas running at a commercial scale today. You can have these different platforms in your cooking area depending on the requirements of your business.

The arrangement
The combination of segments in a commercial kitchen mostly depends on two factors,
1.       The cuisine
The cuisine served in a restaurant or hotel naturally dictates the arrangement. An upscale cooking unit that specializes in fish-based dishes does not need to have a detailed Rotisseur section, which handles the meat-based culinary.
2.       The size
While grand hotels and big establishments might run a full brigade system, for pantries of comparatively smaller size and budget multiple sections are often combined.  
The different stations
·         The Saucier or sauté station
One of the most vital sections in every professional cooking unit, this segment is particularly responsible for preparing the sauces that make an essential part of different cuisines. The saucier segment is in a big way responsible for creating a restaurant’s signature tastes.  
Apart from the sauces, pan fried, and sautéed items are also prepared in this part, and in many fine cookeries, this is one of the most elaborate segments manned by a highly experienced and adept chef. To run this platform efficiently equip it with the best commercial catering equipment.
·         The Poissonnier or the fish station

Poissonnier is the division of a cooking space where all types of fish, seafood-related dishes, and accompanying sauces are prepared.
If your restaurant specializes in seafood or fishes, this is the segment you should be most concerned about. For proper functioning, this part should be equipped with quality tools from the top commercial kitchen equipment supplier, just like the other sections of the cooking area.
·         The Rotisseur or the meat station
This is the place where all kinds of meat-based foods are processed and prepared including the marinades. While roasting is the primary process to be carried out in this segment, all types of meat preparations, including grilling and frying are also done by the chef in command of this section. ·         The Patissier or pastry station
It might look like a haven for the ‘dessert lovers’ by the name of it but actually, in most of the cookeries, except the premium ones, this section is not dedicated only to pastries and desserts. Along with desserts, pasta, bread, and other baking-based items are prepared here.    
Icing and embellishment of desserts are also carried out in this section and it is essentially equipped with commercial refrigeration systems.
So, now you know the different segments of a fine-dining cookery as per the kitchen brigade system. While having all these sections is best for a big-budget establishment serving to many customers every day, if your business is not on that large scale till now, you can customize the segments as mentioned below to fit into your requirements and budget.
Stations for a smaller commercial kitchen
·         The sauté station – This is a must have one. If you are into catering business, we recommend, your cooking area should have this section.
·         The grill station – All types of grilling, including both meat and fish are performed here.
·         The fry station – Dedicated to any and every frying task. This area should be equipped with proper commercial fryers.  
·         The pizza or dessert station – Pizza, pasta, deserts all can be prepared in this section. You can have a separate salad area depending on the cuisine or you can prepare it here as well.

Apart from all the above, there is one more vital section in cookeries of every size, and it is the kitchen line. This is the area from where the prepared foods are picked up by the servers.  
You should decide the number and type of divisions in your cooking area depending on your budget, cuisine, and the maximum number of customers you will serve on any given day. To ensure the best functioning of every cooking space, sourcing proper tools and appliances from the commercial kitchen supplier is important.

RECIPE: EASY 4-INGREDIENTS NO-YEAST PIZZA CRUST
The art of kneading (masa in Filipino) dough has been an essential part of my life as a pastry chef. In my previous job in “Oliveto”, an Italian Fine Dining Restaurant in Sydney, I make at least 20 kgs of Ciabatta Dough everyday and every Friday, I make about 70 to 100 pieces of Herbed Focaccia Bread. This has been my ritual every 10:00 AM before lunch service. Kneading has been my best friend more than piping or decorating dainty Italian Pastries. When I relocated by the beach, I found a new job at a pastry shop at Bondi (where I lived in Sydney). They served almost everything, from a variation of muffins and cakes to bagels and sandwiches. I thought I graduated from the kneading part, but guess what? I’m back to kneading… and the funny part? I start my kneading job at 4:00 in the morning before the shop opens at 6:00 AM. It just moved to an earlier schedule! This time, it’s not Ciabatta and Focaccia anymore. I make Brioche Breads, Sourdough, Baguettes, Hand-Crafted Donuts, Cinnamon Sticky Buns and Nutella Rolls. I also make Croissants, Danish, and some other pastries made of laminated dough, which also requires a more complicated kneading technique. But why am I blabbering about kneading anyway?
This is a quick and easy pizza recipe, but though it only has 4 simple ingredients, it still requires you to knead the dough. It’s not just a simple mix-all-ingredients kind of thing. Flour and water when mixed together creates gluten. The kneading process will add the strength and volume to your dough to form just the right amount of gluten to make your pizza crust. Don’t worry, I will assist you step-by-step and just like my previous Cabbage Rolls recipe, I have provided photos to make it easier for all of us. Let’s start unleashing the baker in you! So… Let’s go!
Preparation Time: 20 minutes
Serves: Double Recipe makes 3, 8 inches thin crust pizzas. Single Recipe makes 2, 6 inches thin crust pizzas
Baking Time: BLIND BAKE AT 15-20 mins; FINAL BAKE AT 20-30 mins
INGREDIENTS:
FOR THE PIZZA DOUGH (Double Recipe: Makes 3, 8″ inches thin crust pizza)
4 cups All-Purpose Flour * (prepare additional 1 cup for dusting)
2 cups warm water*
4 tbsp. vegetable oil
1 tsp. salt
FOR THE PIZZA DOUGH (Single Recipe: Makes 2, 6″ inches thin crust pizza)
2 cups All-Purpose Flour* (prepare additional 1 cup for dusting)
1 cup warm water*
2 tbsp. vegetable oil
1/2 tsp. salt
* Chef’s Notes: Your pizza crust texture will depend on the kind of flour you will use. I have specified here All-Purpose Flour because it is the easiest to find in Supermarkets. But, if you want your crust to be more glutenous (springy), you can use Bread Flour or a mix of Bread Flour and All-Purpose Flour in a 1:1 ratio. Bread Flour has more protein content, thus producing more gluten when you knead your dough. Also, make sure you are using WARM WATER. Not boiling, and not too hot, just warm. We need warm water because this recipe does not have any leavening agent like yeast or baking soda or baking powder. The warm water will act as the “natural glue” when we combine all ingredients together. Remember, we are using vegetable oil. We don’t want the oil to solidify while we are mixing everything together, thus the warm water. 
PROCEDURE:
FIRST OF, PRE-HEAT YOUR OVEN AT 200*C or 180*C (if you’re using a convection oven)
1. In a mixing bowl, put together all the pizza dough ingredients. Mix them together with a spatula or spoon until there are no flour lumps. The mixture will be sticky at first, but don’t panic. Just keep on mixing. If you have a stand mixer, mix everything using the hook attachment.
Chef’s Notes: If the mixture is still sticky after everything is incorporated together, add a bit of flour little by little about a tablespoon at a time. This dough recipe will tell you straight-forward what it needs. If it’s too sticky, it needs a bit more flour, if it’s too dry it needs a bit more water. Work (knead) the dough until you reach a consistency that doesn’t stick to your fingers or to the bowl anymore. But also making sure that it is still soft to touch. Do not attempt to knead the dough more if you feel like it’s a bit dry already. This might result into an “overworked” pizza dough, making your pizza crust really hard when it’s baked.
2. If you have reached the soft dough stage, weigh your final product. If you are using the double recipe, the final product will weigh more or less 1098 g. Divide the dough by three and knead it into round balls, 366 g each ball to make 8″ pizza crust. The weight may vary depending on how much flour or water you have added into the mixture. After this stage, rest the pizza dough for about 10 to 15 minutes to allow the gluten to relax.
  3. While your dough is resting, prepare your toppings.
  4. After the dough has rested, dust a flat surface with flour to make sure the dough does not stick on the surface. With a rolling pin, roll the dough  into 8″ flat round (or 6″ if you’re using Single Recipe), about 1/2 inch in thickness. The thickness will depend on your preference, but for this particular recipe, it is meant to be thin-crust as it will not rise up with the absence of yeast or any leavening agent.
  5. Dust an aluminum pan with flour and carefully transfer your pizza dough into the dusted pan. With a dough docker, or a fork, or toothpick, dock the pizza dough. Docking is the process of poking small holes into a dough. This prevents the dough from puffing up by parts during blind baking. This is a very essential process if you are working with a dough that was kneaded with yeast, but it’s best to apply this practice even without the yeast.
Chef’s Notes: BLIND BAKING is the process of pre-baking the dough without the filling or toppings. This is usually done when your filling or toppings take a shorter time to bake than your crust. You blind bake your crust to make sure it is fully baked before you put the toppings on. Moreover, this gives the extra strength/stability for the crust to be able to hold all your toppings and sauces without the crust getting soggy. Blind baking doesn’t only apply to pizza dough. It is an important step when making pies with pre-cooked fillings like Apple Pie or a quiche.
!!! Blind bake your pizza dough in the oven for about 15 mins. at 200*C or 20 mins. at 180*C. After blind baking, take out your pizza crust to be topped with pizza sauce and your toppings.
6. You can use any Pizza Sauce of your choice. You can make your own pizza sauce from Tomato Sauce, herbs like basil, rosemary, thyme, marjoram, and salt and pepper, or with whatever herbs or spices you would like to add. Or you can use a pre-made one like what I have used. 115 g of pizza sauce can exactly cover an 8″ round pizza crust.
  This Pizza Seasoning always comes in handy. *winks*
  7. Place the pizza sauce in the middle of the crust. Start from the center and spread cleanly up to the sides.
  8. You can do this with a small palette knife/off-set spatula or with the back of a spoon.
  9. After adding on your toppings, bake your pizza for about 20 minutes at 200*C or 30 minutes at 180*C.

ZEIT Online | Selbstständigkeit: Ich habe Angst vor dem Urlaub
"Schön, dass ich dich noch erreiche! Ich habe einen großartigen neuen Auftrag. Losgehen soll es ab sofort", sagte die enthusiastische Stimme am anderen Ende der Leitung, während ich in der Schlange stand, um meinen Koffer für den Flug nach Australien einzuchecken.
Um mich selbst ein bisschen zu quälen, fragte ich sie, ob sie mir mehr von dem Job erzählen könnte, und natürlich hörte sich alles perfekt an: flexible Zeiteinteilung, sehr gute Bezahlung und ein Kunde, für den ich schon seit Jahren arbeiten wollte.
"Ich bin gerade auf dem Weg nach Sydney – aber danach hätte ich Zeit …", sagte ich, und die Frau am Telefon verlor sofort das Interesse. "Ach, schade, so lange können die leider nicht warten. Dann versuch ich’s bei jemand anderem", antwortete sie und legte auf. Beim Boarding grübelte ich, ob es richtig war, den Urlaub trotz des Auftrags durchzuziehen. Ich arbeite als freiberufliche Werbetexterin, und es war nicht das erste Mal, dass Angebote dieser Art dann ihren Weg zu mir fanden, wenn ich entweder auf dem Weg in den Urlaub oder bereits dort gelandet war. Es ist auch schon mehrmals vorgekommen, dass ich wegen Aufträgen Flüge verschoben habe oder im Urlaub den Laptop aufklappte. Doch diesmal war meine letzte Auszeit schon über ein Jahr her und meine dunkelblauen Augenringe suggerierten, dass es wirklich dringend an der Zeit war, kürzerzutreten. Außerdem wartete mein Urlaubspartner bereits im sonnigen Sydney auf mich. Trotzdem: Als das Flugzeug abhob, vermischte sich die Vorfreude auf die Reise mit Schuldgefühlen über den verpassten Auftrag.
Urlaub auf Stand-by
Viele glauben, dass Freiberufliche das große Los gezogen haben, wenn es um Urlaub geht. Schließlich müssen sie ihre Ferien nicht vom Chef genehmigen lassen oder mit den Kollegen abstimmen. Sie können theoretisch sogar selbst beschließen, wie lange sie eine Auszeit nehmen, und ihren Urlaub nach günstigen Flügen ausrichten. In der Praxis sind solche Reisen wie die vier Wochen in Sydney bei mir und meinen freiberuflichen Freunden eine absolute Ausnahme. Oft können wir uns den Urlaub einfach nicht leisten. Um sich eine Auszeit zu gönnen, müssen wir nicht nur Geld für Flüge und Unterkunft sparen, sondern auch, um die verdienstfreie Zeit zu überbrücken. Und natürlich müssen wir auch hoffen, dass bis dahin alle Kunden ihre Rechnungen pünktlich bezahlt haben, damit man sich bei seinem Trip nach New York nicht plötzlich von Ein-Dollar-Pizza ernähren muss.
Oft geht Urlaub bei Selbstständigen daher mit einem schlechten Gewissen einher – und der Angst vor dem Kontostand danach. Eine Freundin, die seit Jahren als freie Grafikdesignerin in London arbeitet, ist in einen lang geplanten, neuntägigen Urlaub gefahren – zu einer Zeit, in der sie sich kaum vor Aufträgen retten konnte. Es mag ein Zufall sein, dass danach eine viermonatige Flaute folgte, die sie im Alter von 35 Jahren darüber nachdenken ließ, ob sie temporär bei ihren Eltern einziehen sollte. Bevor es richtig ernst wurde, bekam sie zwar wieder Aufträge, aber die Angst, dass ein Urlaub existenzbedrohend sein könnte, sitzt bei ihr noch so tief, dass sie seitdem nie länger als eine Woche verreist. Der Laptop ist sicherheitshalber immer dabei, man weiß ja nie.
Natürlich spüren nicht nur Freiberufliche den Druck, im Urlaub zu arbeiten oder zumindest erreichbar zu sein: Jeder dritte Arbeitnehmer in Deutschland lässt Urlaubstage verfallen – sei es aufgrund des hohen Arbeitsdrucks oder aus der Angst heraus, den Job zu verlieren. Das fand eine Umfrage des Deutschen Gewerkschaftsbundes heraus. Laut des Instituts für Wirtschaftsforschung fallen durchschnittlich mehr als drei Urlaubstage pro Jahr der Arbeit zum Opfer, und eine Studie von Bitkomergab, dass immerhin 67 Prozent der Deutschen ihren Urlaub unterbrechen, um zu arbeiten.
"Selbst wenn ich in ein paradiesisches Örtchen entfliehe, beantworte ich dort oft Telefonate oder E-Mails und Slack-Nachrichten.

Wie viel Auszeit Selbstständige nehmen, dazu gibt es keine zuverlässigen Zahlen. Aber wenn ich mir den Alltag von mir und meinen freiberuflichen Freunden ansehe, sind es sicherlich weniger als die gesetzlich vorgeschriebenen 24 Werktage im Jahr. Wer selbst aussuchen kann, wann und wie viel Auszeit er nimmt, macht paradoxerweise oft sogar weniger Urlaub: Eine Befragung von HR Mythbusters unter 125.000 Arbeitnehmern in den USA zeigt zum Beispiel: In Unternehmen, die ihren Mitarbeitern unbegrenzten Urlaub anbieten, werden sogar weniger freie Tage genommen als in solchen mit geregelten Auszeiten. Ich erwische mich oft dabei, dass die freien Tage zwischen den Aufträgen, in denen ich mich eigentlich erholen wollte, mit Organisationsaufgaben, Jobakquise oder der Buchhaltung verbringe. Und selbst wenn ich in ein paradiesisches Örtchen entfliehe, beantworte ich dort oft Telefonate oder E-Mails und Slack-Nachrichten.

Den eigenen Urlaub ernst nehmen
Aber ist es wirklich so schlimm, am Strand ein paar Nachrichten zu lesen? Das frage ich den Psychologen Stefan Poppelreuter, der mehrere Bücher zum Thema Arbeitssucht veröffentlicht hat. "Der Organismus braucht eine Weile, bis Entspannung eintritt", sagt Poppelreuter. "Man sollte also generell zwei bis drei Wochen Urlaub am Stück nehmen." Unterbrechungen dieser Entspannungszeiten sieht er kritisch: "Wenn ich zwar im Urlaub bin, aber trotzdem auf jede Mail, SMS und WhatsApp-Nachricht reagiere, dann bin ich in einem Zustand der permanenten Alarmbereitschaft. Das ist wie bei einer freiwilligen Feuerwehr, die ständig rufbereit sein muss."

Laut Poppelreuter bringt die Selbstständigkeit viel Potenzial zur Überarbeitung mit sich: "Freiberufler mit einer Veranlagung zur Arbeitssucht sind besonders in Gefahr, da es immer das Argument gibt: Ich weiß ja nicht, wie es in sechs Monaten, in einem Monat oder nächste Woche aussieht." Menschen in helfenden Berufen, also Psychologen und Ärzte, aber auch Wissenschaftler und Medienschaffende, haben laut Poppelreuter eine gewisse Affinität zu arbeitssüchtigen Verhaltensmustern. "Wenn der Beruf zur Berufung wird, trifft man häufig auf Menschen mit einem hohen Maß an Selbstausbeutung."
Dass Freiberufler ständig ihre Arbeitsmails checken, hat aber nicht nur mit ihrer hohen Motivation zu tun – sondern auch mit Angst. "Je unsicherer die Beschäftigung ist, desto eher ist man geneigt, alles zu tun, um sie zu behalten", sagt Anette Wahl-Wachendorf, Vizepräsidentin des Verbands Deutscher Betriebs- und Werksärzte. Sie beobachtet mit Sorge, wie die Grenzen zwischen Privat- und Berufsleben aufgeweicht werden, etwa durch Workations  – also der Mischung aus Arbeiten und Reisen – oder dadurch, dass heute kaum jemand ohne sein Smartphone verreist. Wahl-Wachendorf geht davon aus, dass der Trend sich verstärken werde: "In Zukunft werden wir neue Konzepte im Gesundheitsschutz anwenden und entwickeln müssen", sagt sie. "Gerade bei jüngeren Menschen verschwimmt aufgrund ihres Medienverhaltens und der Notwendigkeit zur Selbstvermarktung die Trennung zwischen Arbeit und Freizeit sehr stark." Ich kenne dieses Phänomen aus eigener Erfahrung. In der Kreativbranche kommt es schon heute nicht selten vor, dass Kandidaten beim Bewerbungsgespräch nach ihren Usernamen bei Facebook und Instagram gefragt werden. Das macht es noch schwieriger, das Smartphone im Urlaub wegzulegen. Wer schon keine E-Mails beantwortet, nutzt die Zeit häufig, um sein digitales Image zu pflegen – und sich vor Sonnenuntergängen zu inszenieren.
Hilft nur noch Digital Detox?
Beide Experten, Poppelreuter und Wahl-Wachendorf, raten daher zu Digital Detox – also einer Art Internetdiät im Urlaub. Das muss aber nicht notwendig heißen, dass man während des ganzen Urlaubs nicht in sein E-Mail-Postfach gucken darf. Wenn der Gedanke an eine Flut von unbeantworteten Anfragen bereits im Urlaub ein Stressfaktor ist, mache es durchaus Sinn, ein Zeitfenster für Telefonate und E-Mails auszuwählen. Je kleiner dieses Fenster ist, desto besser: "Wichtig ist, das Smartphone für 23 Stunden pro Tag wegzulegen – oder im Hotelsafe einzusperren", so Poppelreuter.
Auch sei es wichtig, Aufgaben an Kollegen zu delegieren: Wenn klar ist, wer während des Urlaubs die Verantwortung trägt, ist es auch nicht nötig, ständig über alles informiert zu sein. Und das geht nicht nur in einer Festanstellung: Selbstständige, die Angst haben, Aufträge zu verpassen, können sich mit anderen Freiberuflern absprechen und füreinander einspringen, wenn der oder die andere nicht verfügbar ist.
Oft fällt es Selbstständigen aber trotz aller guten Vorsätze und Tricks schwer, ihren eigenen Urlaub ernst zu nehmen. Denn ihre Auftraggeber sehen sie tatsächlich oft als die freiwillige Feuerwehr, von der Poppelreuter spricht, die immer verfügbar ist, wenn es beim Kunden brennt. Da gilt es nun, standhaft zu bleiben.

Die Frau, die mir in der Check-in-Schlange nach Sydney einen Traumauftrag angeboten hat, war natürlich nicht die Einzige, die sich bei mir meldete. Außer ihr rief noch eine Agentur an, für die ich vorher als freie Werbetexterin gearbeitet hatte. In einem offensichtlichen Anflug der Verzweiflung fragte mein Auftraggeber, wie viel er mir bezahlen müsse, damit ich meinen Urlaub verkürze. Die Verlockung, sein Angebot anzunehmen und einen absurd hohen Tagessatz zu verlangen, war kurz da. Aber genau dieser Auftraggeber hatte auch eine Mitschuld daran, dass vor dem Australien-Urlaub jeder, dem ich zufällig begegnete, mir mitteilte, wie übermüdet ich aussah.
Als Kompromiss einigte ich mich mit der Agentur darauf, dass ich in der ersten und letzten Urlaubswoche für eine Stunde pro Tag verfügbar sein würde – und nach dem Urlaub wieder Vollzeit. Natürlich war es nicht ideal, den weiten Weg nach Sydney zu fliegen, um dort vor dem Rechner zu sitzen. Aber eine feste Stunde am Tag konnte ich in meinen Urlaub einbauen, ohne aus dem Freizeitmodus zu kommen. Außerdem bedeutete der Auftrag auch, dass ich den Urlaub mehr genießen konnte, da ich nicht ständig an das schwarze Loch denken musste, das er auf meinem Konto hinterlassen würde. Ich machte mir kurz Sorgen, dass mein Urlaubspartner, ebenfalls ein Freelancer, deswegen sauer sein könnte. Aber auch er bekam einen Anruf. Und so saßen wir Laptop an Laptop gemeinsam im Strandcafé.

Drinking and Not Eating in Adelaide: The Crisis of the Outshone City
I’m a hospitality guy. I am in love with my job and my industry. Being able to have fun while I work and share my passion for great booze with strangers is what I live for. Working at Biggies at Bertram has been the great experience of my life so far. I’ve met new and interesting people, some who I now call some of my dearest friends, all from working behind the bar. And after spending this past year travelling the country, enjoying amazing food and booze, partying with fresh faces, I can’t help but notice this gaping hole in Adelaide’s dining/nightlife culture.
First off the bat: this is not a skewering of Adelaide; I adore this town. Is there fantastic places to go eat and drink? Absolutely, some of the finest bars and restaurants in the country are on our doorstep (and of course it doesn’t hurt that if you call yourself an “Adelaidian”, you’re about 20 minutes from some of the best wine and produce in the world). Hains & Co., Pink Moon Saloon, The Wheatsheaf and NOLA are some of the great watering holes in Australia. Without a doubt eating at Africola on my father’s birthday was the best dining experience i’ve had in recent memory. There are plenty of great little pubs around town to sit back and sink pint after pint of Coopers Pale. Billy Bob’s BBQ jam at The Grace Emily is the best thing you can do on a Monday night, one of the best things you can do all week even. Wednesday night beers at the beloved Crown & Anchor (long live the Cranka) is a time honoured tradition. I’ve had too many (a.k.a not enough) knock-offs turned club nights at The Exeter Hotel. And my own haunt Biggies is the best place in town you can have a pretentious free boogie whilst enjoying some of South Australia’s best beer and wine. There is certainly no lack in the quality of our bar and restaurant scene. Quantity is another thing entirely.
It’s amazing in Melbourne and Sydney how easy it is to find a phenomenal place to drink or eat without even trying. You can walk down a street in St. Kilda on a Monday night and drink have cocktails until 1am, on a public holiday even! After a recent trip to Melbourne with some friends, walking down Chapel St. on the New Years Day public holiday, we were able to enjoy some amazing craft beer at The Local Taphouse, and then stumbled on Holy Grail, a fantastic little cocktail haunt, and were able to drink until it struck 1am and had to close up shop (shout outs to the bartender who let us close up with him and hang around to 3:30am though). In Adelaide, the streets would be completely empty, and for us hospo folk, the venues that stay open (pokies rooms and casino’s excluded) are look upon like Gods. Even food! Whilst at Holy Grail, we asked where we could get some food at that hour, and the barman just pointed out the door to a great pizza spot. The same thing happened 2 nights later at The Rook’s Return, great pizza just across the road (okay, we like pizza when we’re drinking, sue us). In Adelaide, it’s a scavenger hunt to find great pizza. You know your nearest pizza spot sucks. We’ve got very few and far between great local watering holes if you live outside the CBD, only pubs and pokies rooms with all your favourite lagers on tap. Again, nothing wrong with a pub and a pokies room, i’ll sit and drink beers in a pokies room bar till the day I die, but you can’t deny Melbourne has got us beat in the outer suburbs. Not a TKO, a full first round knock-out loss. As far as our restaurants go, Sydney wipes the floor with us just the same. To every really great restaurant in Adelaide, there is probably 10 of the same caliber in Sydney. From the upper echelon of places like Quay and Sepia, to the fringe, casual but experimental joints like ACME and 10 William St, there is just an enormous bag of brilliant places to go eat. You look at the most recent Top 100 Australian Restaurants list, it is littered with Victorian and New South Wales restaurants, South Australia’s first placing is at 47 (Africola) with only 5 in total (Orana 48, Peel St. 95, Hentley Farm 96, and Fino 98 rounding us off). And it’s not like Adelaide’s population is too small, it’s about 1.2 million at the moment, and I can’t stress this enough, our produce is incredible! It’s all in our basket, but more often than not, we don’t take the opportunity.
What I really think it stems down to, is that for the most part, the general population are extremely unwilling to go out and spend their money on a great meal, they’d rather stash their pennies and travel. And again, there is nothing wrong with that at all, it’s a fantastic thing to do with your hard earned cash, I do the same thing myself. But when we go and travel, we go out and we eat fantastic food, we drink amazing beer, wine and spirits, and we come home and tell everybody how amazing the food is in such and such is, we document it all on Instagram, and we miss out on the brilliant things going on just around the corner. In contrast, in Melbourne I like to ask the local single 20-somethings how often they go out for a drink or some food. The general response is about 3-4 times a week. For us Adelaide folk, it’s generally once, twice on a good week, only on weekends. There is very little of a midweek night out if you work the traditional 9-5 hours, the city generally teems with hospo folk. Maybe the binge drinking culture is a bit more prevalent in Adelaide. There has always been the culture of rocking up to a venue and asking “what’s the cheapest drink?” so you can smash back as many as you can. There’s a time and a place for that, and for us Adelaide heads, that means Saturday, when we don’t have to go to work the next day. Having a few glasses of wine with an amazing meal is an underrated experience in this town. Adelaidians are very unwilling to part with their cash if they’re not drunk by the end of it.
What I think contributes to this is the lack of understanding of why it costs to go out, and an under appreciation of hospitality workers. When you ask why it costs $20 for your breakfast and a coffee, you’re forgetting about the cook who made it, and the barista who enables your caffeine addiction. The food and drink in front of you is the cheapest part of the transaction, everything else costs far more than some smashed avocado and eggs on toast, you’re paying for someone to make it for you, and better. What i’ve noticed more in Melbourne and Sydney, is a higher amount of respect and admiration for a hospitality professional. There is an understanding that they are good at what they do and make a mighty fine cocktail. They know they put up with a lot of slack. They know without them, they would have a far less vibrant and fun city. They know they are the people that make their lives better. Of course there are people in Adelaide that understand this plight, but the next time you complain it being $9 for a pint of beer, you can go to the bottle shop down the road, buy a carton cheaper, go home, hang out with the same group of friends you’ve known since high school, get pissed, make yourself steak and veg for dinner and complain about being bored, then you might understand what you’re paying for.
I’m now at the age where a large portion of my friends are now moving to Melbourne, and i’d be lying if i haven’t had the same fantasy. Every time I visit I say I will move. But then I get back home and I see the potential of this city, and all I want to do is be a part of the collective of people who could make this city into a new tourist destination. But every year, I see more and more cool and interesting people with fresh ideas and a brilliant work ethic move to Melbourne. There’s far more opportunities available and there is more money for them, it’s a no brainer. This town has this old white liberal air about it. The State government will quickly spend tax payer money on infrastructure preparing for population development, rather than create ways to increase tourism and coerce people to make the move to South Australia. And look, i get that, infrastructure is an important aspect of how cities progress and makes day to day living more comfortable and easy (side note: Melbourne is again far superior in this aspect. But we’ve got Sydney covered no worries). But comfortable and easy is not on the radar of an under 30 year old, career opportunities and things to do are their priorities, and that demographic, the young people with bright minds are how Adelaide as a city is going to move forward, rather than making the people who are moving towards retirement more comfortable. It’s why people make fun of this city, using phrases like “Great place to raise your kids” and follow it up with “I went to Adelaide once. It was closed”. But then I look at Duncan Welgemoed. He’s a chef from South Africa who has worked at The Fat Duck under Heston Blumenthal and at Restaurant Gordon Ramsay. But he’s made Adelaide his home, winning Chef of the Year at Bistro Dom in 2013, and opening the oft mentioned in this piece Africola. He’s been one of these people who has made this town more vibrant and exciting, but he also moved here with his wife to start a family. But he opened an amazing restaurant, using the phenomenal produce that is around us, and has been reaping the rewards ever since. Unfortunately the youth of this town aren’t doing the same kind of thing.
In saying all this, I have to concede that we are getting better. I remember the days when Peel Street was a dank alleyway of our infamous nightclub strip Hindley Street. Now it is occupied by brilliant bars like Clever Little Tailor and Maybe Mae, and fantastic restaurants like Gondola Gondola and Peel St. It’s teeming with the kind of people that need to stick around. And I can’t stress this point enough: Mad March in Adelaide, with the Fringe and the Adelaide Festival going on, during that time of year, Adelaide is the greatest city in this country hands down. But around the country, there are cities that can keep that kind of vibrance pumping all year round. Being a part of Biggies of Bertram, I feel like one of those people who have added something to the city, and I think there are better days for Adelaide yet. There is a wealth of under utilised opportunities. But i’m holding on to the hope that this will happen before all my friends and people I admire ex-communicate to Melbourne. So for those of you playing at home in Adelaide: go out and eat, it’s only money. Drink less and drink better. Respect your hospitality workers, it’s not advisable to piss off the people making your coffee/food/drink. Make this city as fun as it could be. Give back and send forth positivity.
But at least we can get a beer at 2am. Sorry Sydney.

East coast Oahu, Hawaii
Following on from our trip to Kauai, we ventured back over to Oahu, which is home of the state capital, Honolulu. We opted to stay in Waikiki, in a very well situated hotel, Alohilani Resort. The hotel was recently refurbished, and was a two minute walk to Waikiki beach.

Where we went
We hired a Mustang convertible because it’s the American thing to do, right? It was actually a lot of fun! If you love the adrenaline rush, I highly recommend you do this. It was the best way to see the island as well, particularly as the weather was magnificent. The first afternoon we drove all up the East coast of the island and took in the beautiful scenery. In fact, those beaches were some of my favourite.
The next day we had planned to go up to the North Shore and spend most of the day up there, but we got a little side-tracked…shopping! When visiting Hawaii, you have to check out Waikele Premium Outlets. Now, I am not a huge believer in buying bulk outlet items, but it is worth it for basics such as Levi’s, Calvin Klein, and Tommy Hilfiger, etc. Tip: register with the website prior to going so you can collect the extra discounts, and always have a plan as to what you want to buy. Too often than not, people get sucked into buying unnecessary items because it’s cheap. Only buy what you love!
After that stopover, we drove up the North Shore and checked out the food trucks. They’re a bit of an institution in Hawaii, so definitely give it a go. We had garlic shrimp (the most popular) from the famous Giovanni’s Shrimp Truck, and it was pretty good! The food trucks are situated in the town of Kahuku, along the Main Street (near the McDonald’s). We struggled finding it at first! Because our shopping expedition took so long, we ran out of time in the North, so we actually went up again on a separate day. If we had known this beforehand, we would have allocated a full day for shopping, and a full day for the North.
The second time with drove up north, we spent some time at Banzai Pipeline, most famous for the Pipeline surf competitions. Unfortunately, that was the only day we received rain, so we couldn’t actually hang out on the beach. But we did spend some time checking out the surfers…they were pretty incredible. And I had to drop in for a coffee at the gorgeous Sunrise Shack. They even had coconut milk with their coffee!
If you’re up for a nice, busy walk up Diamond Head, then definitely squeeze this into your itinerary. We actually walked from our hotel, right up to the top, and then back again. This was a little ambitious in the heat of the day, but it’s doable. I think we clocked up about 14kms. We definitely deserved our açai bowl after that workout!
The rest of our time was spent wandering around Waikiki, relaxing by the beach and the pool, or walking around the shops. Waikiki is quite touristy, but it’s a great place to base yourself, as everything is so accessible.

  Where to shop
As mentioned earlier, it’s worth going to Waikele Premium Outlets. There’s all the main American brands, at reasonable prices. But do set aside at least half a day for that, so you can take your time and avoid impulse shopping.
Along the Waikiki strip there are hundreds of stores sprawled across the street, and hidden in side streets, as well as inside various arcades. For an Australian, it wasn’t cost effective to buy most brands. I did, however, buy items from Intermix. I have been receiving their emails for years, but never had the opportunity to walk into a bricks and mortar store. I also purchased some Tom Ford make-up in the duty free store. It was marginally cheaper, and by that I mean $10-20 cheaper at best. It was more so an opportunity to have a play with some of the products, as life doesn’t always permit this.
Ala Moana shopping mall is worth a visit. It’s pretty big, so if you’re a serious shopper, make sure you set aside enough time to stroll through. Again, the prices weren’t justifiable for me, but the variety was most definitely there!
What to eat
Coffee – first things first. So you may or may not know that I am an avid coffee drinker! I drink on average 4 cups a day. So when I travel, it’s imperative that I find the right place to fulfil my caffeine requirements! And as you may be aware, the U.S isn’t so good at making a good cup of coffee, so I knew this was going to be difficult. Most coffees I tried were either burnt, watered down or downright horrible. But I found a couple of places that were pretty good. Not far from our hotel, in the Hyatt Regency building, there was a little place called Kai Coffee Hawaii. I had an espresso there most days, and they did a pretty good job. And Kona had pretty good coffee as well.
Açai bowl (pronounced “ah-sa-EE” roughly) – these Portuguese gems are kind of a big deal in Hawaii. Most places in Hawaii prepare them correctly by using the actual açai fruit, not the powdered versions you can get in other western establishments. The image on the left was delicious! The real deal. We actually stumbled across this place whilst heading back from our Diamond Head walk at da Cove. There’s also a couple of other cafes in that group of shops that do reasonably good breakfasts’ too.

Poke bowl (pronounced “POH-keh”) – If you live in Sydney, you’d be aware of the poke bowl craze at the moment. But in Hawaii, this has been a staple for many years. It’s essentially raw fish marinated in different flavours. In Hawaii, you can buy them almost anywhere, and most supermarkets have quite good quality poke’s too. We were directed by our hotel staff to go to the place where the locals like to eat, Hawaii’s Favorite Kitchen. It’s pretty authentic, and great value for money – the bowl’s are huge! They also sell shaved ice there as well, if you’re into that.

Japanese – if you like Japanese and a fan of the show The Iron Chef, then check out Morimoto. It was conveniently located in our hotel, and was buzzing with atmosphere. It’s definitely worth it.
Pizza – we were told about Flour and Barley by a friend, and it was a great place to get a casual pizza and enjoy a few mai tai’s. They have happy hour from 2pm-6pm every day, so if that’s not enough of a reason to go, I don’t know what is!
Ramen – because what do you feel like on a beach holiday…a hot bowl of ramen? Sure! It was actually pretty, bloody good. Check out Marukame Udon in Waikiki. There’s a usually a long line up, so get there early. But it’s worth the wait!
Happy hour – most hotels and restaurants within the Waikiki Beach area do happy hour anywhere from 4pm onwards. Try a few different places to ensure you sip the best Mai Tai’s whilst on vacay.
Malasadas – these little sugary gems are basically the Portuguese version of a doughnut, without the hole! And the most famous place to try these, are at Leonard’s Bakery. Go early so you miss the crowds. We bought one original and one with cream/custard in the middle, but I much preferred the original. The bakery isn’t too far from Waikiki, but not within walking distance from memory.

In Oahu, make sure you take the time to see the whole island as there are so many hidden gems. Take in all the beauty and the culture, as it is quite unique.
We thoroughly enjoyed our stay in Hawaii. There are so many other things to do on the island/s, that we didn’t get time to do, such as surfing, SUP-ing, Luau show, lei making, etc. But there’s always next time!
