Why do vegetables and fruits have different colours?
Specific 'phytonutrients' determine the hue of each plant. Phytonutrients are substances that protect plants from fungi, pests, and bacteria. Plants have specific chemicals to protect themselves and remove inflammation since they cannot escape when threatened.
Phytonutrients are not considered "essential" by the body. Unlike vitamins and minerals, deficits can cause the body to malfunction. However, research continues to demonstrate that vegetables and fruits, maybe due to their phytonutrients, may have a preventative impact against some diseases.
The body is subjected to increased oxidative stress due to obesity, low nutrition, high-calorie diets, or daily metabolism, breathing, exercise and ageing. When your body is 'over-oxidised' it can lead to cell death, which can cause chronic diseases such as cancer. Phytonutrients are powerful 'antioxidants', meaning they can fight oxidation in your body's cells and protect them from damage, thus preventing chronic diseases.
Although phytonutrients are thought to have a preventive effect against the disease, consuming phytonutrient supplements alone is not as effective as eating whole vegetables and fruits, and their safety is unclear. Many nutritionists and biologists believe that this is because the different nutrients in fruits and vegetables complement each other in the most precise proportions that nature has already provided for us. The main sources of phytonutrients are various plants. These include: grains, vegetables, fruits, nuts, legumes, etc. Over 25,000 phytonutrients have now been found in plants. A specific colour means that the vegetable/fruit contains a large amount of a specific nutrient.
White & Brown
White vegetables and fruits may not have colour, but they are still rich in phytonutrients and other vitamins and minerals!
Cauliflower is thought to be anti-cancer. Cruciferous vegetables are often high in carotenoid sulphur, which has been shown in many animal studies to be useful in the treatment of various cancers, particularly prostate, breast, colon, skin and oral cancers. It is considered to be a powerful anti-cancer agent because it increases the levels of enzymes in the liver that counteract the carcinogenic effects of chemicals in food and the environment.
The onion and garlic plants of the Allium genus also contain the cancer-fighting phytonutrients quercetin and allicin. Studies have shown that quercetin inhibits the proliferation of cancer cells by causing apoptosis and/or cell cycle arrest. For pregnant women, green leafy vegetables are particularly important as they contain folic acid (vitamin B9), which is essential for the foetus. Folic acid is involved in the formation of red blood cells, as well as maintaining normal cell growth and function. Adequate folic acid during pregnancy may prevent neural tube defects and incomplete spinal development in the foetus. Eating more green leafy vegetables may likewise help to slow the rate of cognitive decline in old age, possibly due to the neuroprotective effects of lutein, folic acid, B-carotene and vitamin k1. Adding a serving of leafy greens to your daily diet may be an easy way to help your brain health.
Green fruits also have a high nutritional value. For example, a kiwi contains antioxidants such as carotenoids, lutein, zeaxanthin, B-carotene, chlorophyll, caffeic acid sugar derivatives, B-sitosterol, chlorogenic acid and phenols. Studies have examined the antioxidant capacity of kiwi components by various in vitro chemical methods to monitor the bursting, scavenging or inhibiting effects of free radicals. Although there are no recommendations for the dietary intake of antioxidants, scientific data suggest that eating kiwifruit has the potential to inhibit oxidative and inflammatory processes (Morris et al., 2018).
Red
Red fruits and vegetables are rich in lycopene, ellagic acid and citrulline. Lycopene is the phytonutrient that gives them their "red" colour.
Several back epidemiological studies have shown that consumption of tomato products containing lycopene is associated with a reduced risk of prostate cancer. These studies are supported by numerous in vitro cell culture assays that have shown the beneficial effects of lycopene on many cells, including prostate cancer cells.
