So when you are in the mood for homemade pancakes take some of the stored mix and add egg, milk and butter. I used mini pancake maker Pancake mix 4 cups flour 1 tsp salt 3 Tbsp baking powder 40g caster sugar 2 tsp bicarbonate of soda Mix all the ingredients and store. To make pancake batter: For each cup of pancake mix add and whisk together: 1 egg 1 cup milk 1 Tbsp melted butter Heat a flat griddle or pan with no oil. Spoon drops of 11/2-2 of batter onto the hot griddle or into the pan and, when bubbles appear on the surface flip them over to make them golden brown on both sides.
