Cauliflower Broccoli Cheeseballs with Tomato Bulgur and Yogurt Dip
This is an easy and filling one that I mostly created myself.
If you don't like cauliflower/Broccoli, I derived that recipe off of this (German) one for zucchini cheeseballs (also very good, just didn't have zucchinis at home this Sunday)

Cauliflower Broccoli cheeseballs:
Ingredients:
110g of Broccoli florets (appr. 1 American cup)
110g of cauliflower florets (appr. 1 American cup)
100g of grated cheese (use your favorite, I used mountain cheese)
3 eggs
100g of Panko bread crumbs (regular breadcrumbs work, but they won't get as crispy)
1 tsp paprika
1/2 tsp salt (1 tsp if youre used to more salt)
Herbs to taste (e.g. Parsley works well)
How to:
Preheat the oven to 180°C/350F.
Pour the broccoli and cauliflower florets in a food processor and blend them to crumbs. Add the rest of the ingredients and mix until it becomes a soft dough that you can loosely form into balls. If it's too wet, add some Panko, if it's too dry add a little water (not too much). Remember that the cheese will melt in the oven and the eggs will do their thing so they will stick together well after baking.
Form into balls of 1 inch/2,5cm diameter and put on a sheet lined with baking paper, then bake for 8-10 minutes, turn them and bake again for 8-10 min until they're nice and crispy. It probably works in an air fryer, too but I don't have one of those.
Tomato bulgur:
Ingredients:
1 onion
1 garlic clove
1/2 cup of bulgur (any grain would work, you'll just have to figure out the ratio of fluid to grain)
1 can of diced tomatos
Italian herbs or herbs de Provence
How to
Dice the onions and mince the garlic. Heat some olive oil or butter in a pot. Fry onions and garlic until glossy, then add the bulgur/grain. Pour in the canned tomatoes and fill the empty can with water. Add about half a can of water to the pot. Now just let it cook, but keep an eye on it. If it thickens too much and threatens to burn, pour in a little more water and stir on occasion. When the grain is almost soft enough, remove the heat and let it sit, the rest of the fluid should be absorbed in the process.
Yogurt dip
Ingredients
Greek yogurt (any thickened dairy product works)
Olive oil
Lemon or lime juice
Maple syrup
Salt and pepper
How to:
This is my dip base that I use for a lot of meals. It's very versatile as you can add in spices and other ingredients to change it. Sometimes I just leave it at this, though.
I can't give you exact amounts since I just stir it together to taste. Maybe one cup of Greek Joghurt (or sour cream, curd, skyr, cream cheese, whatever you got. You could also combine multiple.) with 1 tbsp of olive oil, a tsp of lime juice and then salt and pepper to taste. I like to add a little maple syrup (about a tsp) for an additional taste component. If you don't mind smelling afterwards, add in a minced garlic clove. Another alternative is to chop an onion really small, fry it in olive oil and add that. (You will also smell.) Another option would be to take some frozen herbs, thaw/'activate' them with a miniscule amount of boiling water (a tbsp) and then add that. Let the dip sit in the fridge for at least 30 minutes before eating because then the taste will have blended together. Go wild, it usually works out!

Here is a quick and easy recipe for a deliciously creamy, hearty, and cheesy Broccoli Cheddar Soup!

1 - Medium White Onion; Diced
1 - Garlic Clove; Minced (or use pre-minced garlic)
1 or 2 - Large Broccoli Heads
1 or 2 - Packages of Frozen Broccoli Florets
3 or 4/5 or 6 - Lg/Md Carrots; Julienne Cut, then cut into small straws. (Use a grater if you want to save time)

1 - Stick of Salted Butter
1 - Bottle of Heavy Whipping Cream
1 - Block of Extra Sharp Cheddar Cheese (substitute for whatever cheese you like, I like Extra Sharp)

5 - Slices of Bacon

MISC:
1 - Package of All-purpose Flour
1 - Package of Chicken Stock

SEASONINGS:
Basil Leaves, Black Pepper, Cajun Seasoning, Chicken Bouillon, Garlic Salt, Onion Powder, and White Pepper

2 - Large Pots
1 - Strainer
1 - Immersion Blender
1 - Food Processor

STEP 1:
In one pot put your two broccoli heads and immerse them in water; bring to a boil on High Heat and once boiling, turn down to a Medium Heat.
As your broccoli boils, take your 5 slices of bacon and chop them up into 1 inch pieces.
Heat your other pot on a Medium flame and put it in.
You want to this bacon to become as crispy as it can be without burning.

STEP 2:
Once your bacon has crisped up perfectly, remove it from the pot and dump in your onions.
You want to caramelize these onions in the bacon fat.
By this time your broccoli should be fork tender.
Check on it, and once cooked through, turn off the heat and leave it for now.
Before your onions are almost fully caramelized, add in 2 Tbsps of Minced Garlic and stir around until the onions are finished.
Add in 2 Tbsps of Salted Butter and let melt.
Then add 1 Cup of All-Purpose Flour and stir until the onions, garlic, and butter all become one thick jam.

STEP 3:
De-glaze the pot by adding in 4 Cups of Chicken Stock (or the whole package since 4 Cups = 1 Package of Stock).
Stir vigorously and let it simmer.
Next we will be adding our broccoli heads to the stock, as well as the broccoli water.
We do not need to season the water or the stock at this moment, that will come later.
Turn off the heat to both pots, take out the broccoli heads, and pour 2 cups equivalent of the broccoli water into the soup pot.
Afterwards add in the broccoli heads after cutting them up into large chunks.
Break out the Immersion Blender and blend the broccoli heads until a smooth and lump free sea of green appears!

STEP 4:
Bringing our attention back to the pot we boiled our broccoli in…
Add all packages of our frozen broccoli florets into the pot!
Immerse in water and then bring to a boil on High Heat; once boiling, lower the heat to Medium and let it simmer.
Back to our Soup Pot:
Add in 1 Cup of Heavy Whipping Cream
Then season with 4 Tbsps of Basil Leaves, 3 Tbsps of Black Pepper, 3 Tbsp of Cajun Seasoning (Optional), 2 Tbsps of Chicken Bouillon, 1 Tbsp of Onion Powder, 2 Tbsps of White Pepper, and Garlic Salt to Taste
Mix and blend thoroughly!
OPTIONAL:
It is at this point, that you can control how thin or thick you want this soup.
I didn't add any more flour because I like my broccoli cheddar thin, but if you want a thicker soup, keep adding in flour gradually and blending until you've reached your desired level.

STEP 5:
It is now time to add our carrots and brocolli florets (when ready) into the soup and let everything simmer down.
But as we do, let us turn our attention to our crispy bacon for a moment.
Bring out a food processor and dump in all that crispy goodness and then pulse until everything is bits!
It is up to you how you use the bits.
You can use them as a topping, or you can dump them in and add extra flavor to your pot.
I am doing the latter.

FINAL STEP:
Get out your block of cheese and a fine grater.
You're going to grate the entire block of cheese and then add it into the soup.
Let it all simmer down and melt into the soup; stirring occasionally until all the cheese is melted in, and then kill the heat.

It's Sweet Corn Season: Notes on Sweet Corn and American Kindness

Hooray! Sweet corn season has arrived in Iowa! Tim, our Facilities Manager, invited me over to pick up some sweet corn from his friend’s field. An invitation I gladly accepted, as I have been developing a deep fascination of the crop’s cultural and economic importance here in the heart of the Iowan corn belt. Actually, sweet corn was originally grown by several Native American tribes. The Iroquois gave the first recorded sweet corn to European settlers in 1779 and it soon became a popular food item in the southern and central regions of the United States - and has been so ever since.
Tim's invitation was a delicious chance to try some of that stuff everybody keeps talking about, so I was more than happy to spend a few hours learning some new stuff about corn.
After driving to Audubon, passing the gigantic Albert the Bull statue along the way, we went out in the cornfield with blue skies above and that powerful July sun shining down on us. Field corn can typically grow 7 – 10 feet tall, while sweet corn plants are several feet shorter, Tim told me.
We quickly managed to fill up a wagon with fresh sweet corn and Tim introduced me to his drone, so I could see the cornfield from above - you sure don't want to get lost around here! We returned afterwards and made the harvest ready for our dinner. Tim turned on his grill, and made some of the best cheeseburgers I have had in a long in time, while his friend, Michelle, and I, prepared the sweet corn for our meal.
Iowans take their corn seriously, and I was surprised to see how efficient one can indulge sweet corn with two corn holders and then simply coat it in butter. The dish we made is called ‘corn on the cob,’ which means that it has been boiled (but can also be steamed, or grilled) whole and the kernels are then eaten directly off the cob or cut off.
It was a funny night and I truly enjoyed expanding my knowledge on sweet corn and eating some all-Iowan food in great company.
And great company is what it is all about.
From day one, I have enjoyed the friendliness of my colleagues at the Museum of Danish America. Recently, Shelli from our development team invited me to the Shelby County Fair, where we enjoyed a country music concert and saw a lot of new farm equipment and different animals. Most importantly, her sweet husband introduced me to the mighty brats straight from his grill and Shelli had bought icecream from Dairy Queen and mixed it up with her awesome homemade brownies. Julia, our Registrar, planned a whole day of fun activities in Winterset, Iowa, where we visited a variety of cool museums (who knew quilting would be so interesting!), and Deb, our Development Manager, invited me to my first Fourth of July celebration and made the day a perfect memory for the scrapbook. And Nan, our Design Store Manager, invited me over to the cinema where she volunteers in the weekends to watch the new "Elvis" film.
Furthermore, the first day I arrived, Diya, the Albert Ravenholt Curator of Danish-American Culture, invited me to the Farmer’s Market in Des Moines, which is among some of the finest in the nation. And tomorrow Diya has invited me to join her and other colleagues for some paletas in Des Moines, which I look very much forward to.
I am lucky to be surrounded by so many sweet people and I really cherish the friendly and kind gestures like that. It makes you feel welcome, which is really important when you’re so far away from home. But it also gives you a great chance to develop new friendships, while simply creating some amazing memories along the way. My experience with Americans has always been good, and I guess that’s part of the reason of why I am so fascinated by the United States.
Whenever I have been in this nation, I have been met with open arms, genuine curiosity, and I am so grateful for the friendliness I have encountered and the people I have met on my American journey: This is the land of the generous and home of the kind, both being important parts of what I consider American characteristics.

It probably would have been a smarter choice to pick a day when the supermarket was less busy, but the fridge was almost empty and in dire need of replenishing. Today marks Day 3 of you and Atsumu’s new diet, one that he needs since he’s starting an intense conditioning regimen. You decided to participate as well in order to support him, and to get into the habit of eating healthier yourself.
You leave Atsumu’s side to take a basket, but he beats you to it, wheeling out a shopping cart instead. You tilt your head in puzzlement. “Atsumu, we’re not going to buy that much food, we’ll never finish it all.” He takes your wrist in one hand and starts steering the cart with the other. “You’ll see”
You stop at the fresh produce section, tossing an assortment of fruit and veggies in your trolley as Atsumu perks up beside you, getting an idea. “____, let’s get steak today so I can cook for you.” You raise an eyebrow, skeptical of his abilities. And for good reason. “‘Tsumu, you tried to make me breakfast two weeks ago and I don’t think those eggs were even edible.” He puts a hand on his hip and fakes a pout. “Babe, have some faith in me. ‘Samu might be the chef of the family, but trust me on this, I promise I’m not going to poison you.” Despite still being slightly suspicious, you decide not to question him.
You grab a few salad kits for good measure then pull out your phone to tick off your grocery list. “Bread, check, energy bars, check, produce, check, salad mix, check…okay, I think all that’s left is meat and dairy, let’s go get your steak.” You glance up when he didn’t answer. “‘Tsumu?” Your boyfriend has disappeared and so has the grocery cart.
You look for him in the meat aisle. Nothing. You look in the next aisle. Nothing. You’re about to send him a text when you suddenly feel a pair of hands seize you by waist, taking you away from the secure ground beneath your feet. Your life flashes before your eyes. Headlines of “Missing person, last seen at XX Mart” fills your mind. No way is this happening right now. I am NOT getting abducted in broad daylight, in the middle of a crowded grocery store! I have to get help; I can’t go down without a fight.
You yelp while struggling in the hold of your attacker, furiously kicking at empty space. You see an old woman a little farther down the aisle. There’s hope. “Help! Somebod- ” you shriek in panic before a hand comes up to muffle your words. “____! Chill out, it’s me!” You still at the sound of your boyfriend. Too late. The elderly woman approaches you, swinging her cane and nearly whacks Atsumu in the shoulder. “Ma’am, ma’am! This is a misunderstanding, I’m her boyfriend,” he explains, fending her off. She slowly withdraws her cane and stares at you. “Is that true?” You meet her eyes, then mumble an affirmation, ducking your head shamefully. “Young women nowadays… back in my youth, I never would have dared to cause such a scene,” she tsks, glaring at you disapprovingly before she walks away. Oops.
Atsumu sets you down, eyeing you with furrowed brows. “____. Bro, what the fuck?” You can only smile sheepishly. “Sorry that I freaked out on you. I thought I was about to fall victim to human trafficking. But you know how scared I get when my mom sends me articles about girls getting kidnapped,” you point out, attempting to defend yourself. He sighs and pinches the bridge of his nose. “I told you before, nothing will happen when you’re with me. Did you forget who you were? You’re ____, Miya Atsumu’s girl, and no one gets to mess with you.”
You instantly soften at his words but puff your cheeks out afterwards. “Hmph, well something could have happened just now, and it’d be all your fault for leaving me,” you accuse, pretending to sulk. He gestures at the security cameras. “There are cameras everywhere, not to mention this whole place is crawling with people. Besides, even if something were to happen, I would come for you. No one can touch Miya Atsumu’s girlfriend and get away with it.” He taps the handle of the cart. “Anyways, get in. This is why I insisted on taking this thing.”
“ You’re not serious. We’re too old for this, we can’t be doing things like riding shopping carts,” you reasoned. He rolls his eyes. “Bullshit, me and ‘Samu used to do this a lot and still do sometimes. And don’t lie to me, I know you want to, so get in before people come into aisle.” You bite your lip. He was right, so you don’t protest when he picks you up again and places you inside with your legs over the front. “Hold on tight.”
He puts one foot on the metal bar and pushes off the ground with the other, then hops on, propelling you forward, riding off the momentum. You clutch at the sides of the cart, feeling the air whip at your face, wind running through your hair. The two of you laugh in glee like children.
All was well until a woman’s back comes into view. Your eyes widen. “Baby, stop, we’re going to hit her!” He curses and immediately steps down, reducing the speed until the wheels squeak to a stop, just in time. You turn towards him to scold him. “I knew this was a bad idea; that was so dangerous! We could have hit this lady or even gotten hurt ourselves trying to avoid her!”
“Very fortunate that you didn’t, Miss ____,” says a voice. A very familiar voice. You twist your body back around, looking directly into the stern eyes of your manager. You take a moment, becoming conscious of your current state: hair disheveled, clothes in disarray, legs dangling over the edge of a shopping cart to top it all off. Is there a worse way to encounter your boss outside of work? You hastily straighten up. Well, straighten up the best you could in the situation. You smile nervously. “Ms. Wright! Wow, hi! What a coincidence seeing you here!” You notice a young man standing beside her. “Oh, I didn’t know you had a son. He’s really handsome, you must be proud,” you added. She purses her lips, clearly displeased. “Actually, Miss ____, he’s not my son, he’s my boyfriend. We have a busy agenda today. If there’s nothing else, I’ll see you at work on Monday.”
Your face turns white as you process what just happened. The atmosphere is silent. Atsumu starts to push the cart, waiting until you make it to another aisle before bursting into laughter. “Miya! That was so not funny. I can’t believe that happened. First, she sees me in this state. Then, I mistake her boyfriend for her son? I even called him handsome! Oh my god, it’s really over for me.”
“Calm down, she said to see you at work, it’s fine. Plus, it’s not your fault you didn’t know she was a cougar. That sugar baby must be living the lif- ” You gasp and reach up to cover his mouth before he says anything else. “Shush, Atsumu! What if she’s still around? Yeah, I’m definitely going to see her on Monday…so she can fire me!” you groan. “Just get me out of this stupid cart so we can finish buying what we need, I just want to go home so I can curl up and scream into the blankets.” He smirks. “Oh, you want to scream in bed? No problem, leave that to me.” You slap his arm, and he feigns hurt.
While at the cash register, you realize that you forgot a few items. “Shit, ‘Tsumu, I forgot the butter and yoghurt. Can you quickly go grab those?” He nods. “Wait here, I’ll be fast.” A couple minutes pass and you grow worried, watching the employee scan the last of your groceries.
You finally see your boyfriend return with his arms full. Except, what he’s carrying are massive pints of ice cream. You cross your arms. “Atsumu. What did I just say? This doesn’t look like butter and yoghurt.”
He peers at you with puppy eyes. “Babe, you can’t blame me. They were calling out to me and begging to be picked up! Besides, I got both your favourite flavour and mine. We need this for movie night.”
“What about the diet?”
“It’s not a big deal. Also, you seem like you need this after what happened. And I feel like I might have been responsible for some of it. Just a bit.”
You sigh and pay for the ice cream. He’s got a point. Guess you’ll have to make another trip to the store tomorrow.

If You're Not Eating, But Need To:
So, I've recently been going through a pretty long depressive episode, and one of my biggest problems (besides the obvious) is that I tend to avoid eating when I'm experiencing this. Obviously, this is kinda not a good thing, so if you're going through something similar, I put together some of the tips I've been using to help myself out - in the hope I can help someone else.
General Tips!
Keep snacks on hand. Small snacks, like granola bars or a pack of trail mix. Munch when you have a spare moment
Keep food close by - if you can't get out if bed some days, keep a stocked cooler or a box of non-perishables in your bedroom
For the days you can get out of bed - easy food. Microwaveables, five-minute dinners, sandwiches, finger food. Boxed mixes work well for this, or prepackaged meals that you can heat up
If you're feeling good one day - take the time to make a few extra lunches for the future. Use things that won't spoil easily.
Keep favorite foods on hand. For me, that's hot cocoa and Funyuns. Is it healthy? Hell no. Is it better than nothing? Hell yes.
Reward yourself for eating a full meal, especially if it's well-balanced. If you sit down and eat, treat yourself to a sweet afterward. (Dark chocolate, in my case)
Eating food > healthy choices. First, get the hang of putting food in your body regularly, then you can start worrying about what it is.
College Tricks!
Keep food in your dorm room for when the cafeteria is too far away. Ramen is unhealthy, but it's easy to make with a friend's Keurig.
Oatmeal also works really well for this purpose, and is my personal favorite.
Ask a friend/roommate to bring something back for you if you can't get out of bed
Better yet, schedule a mandatory dinner/lunch meet-up with a friend or roommate every week, if you can.
If you can, put aside a few bucks a week when you're feeling okay, so you can have a little stash when/if you need to order food.
Keep a schedule. Know when you're going to be close to the cafeteria for your classes, and schedule in mealtimes. Work homework and etc around them
Starting Again (after a period of not eating)
The nausea is real, and it gets me really hard after I have to try and start eating again, so here's what helps me there.
Start with liquids - not water, something with calories. For me, that's Gatorade or juice. If it's too sweet, cut it with water.
Bland foods work best. Saltine crackers/soda crackers are a good choice. So is plain bread or toast with butter.
Also, soup. Anything with a chicken-broth base usually works well for me (and yes, this can include ramen). Cream-based soups are heavier - I avoid them at first.
Applesauce is another that works for me. Fresh fruit in general works for me, in small amounts. Especially apples, for whatever reason.
Plain pasta. With butter or olive oil, usually, and in small quantities.
If you're craving something (for me, usually olives or pickles, probably because the salt) indulge. Not too much, just in case, but eat it.
Smoothies. I do use protein powder, because I don't eat much meat. Usually I toss a banana, rice milk, ice, and my protein powder in a blender and drink that slowly.
Milk and soymilk are heavy liquids, in my opinion - rice milk isn't. I'm lucky that my school has rice milk, but otherwise try to avoid dairy.
Sorbet over ice cream. It has the added bonus of you rewarding yourself for eating!
Again, for right now- Eating food > Eating healthy. Eat your favorite foods and use them to coax yourself back onto a routine. Once you get a routine down, you can start injecting healthier options
Anyway, this is just some stuff that's helped me in the past and recently, so I thought I'd share! Feel free to add things I've missed.
(note: this isn't about anorexia - it's about me not having the energy to force myself to eat, even when I'm hungry. I have no idea if this will work for folks with eating disorders, though I hope that it might be able to)

Chicken Enchiladerole with Sour Cream Sauce
Every year, Tamesr and I make each other food for our birthdays. Worked great when we lived together, still works while we are many states apart. She usually makes me cakes. I tend to be a little more..untraditional.
Yesterday was her birthday. I made her a chicken enchiladerole.
What is an enchiladerole? Well, technically it’s an enchilada. In a casserole dish. I used to be able to roll the enchiladas like a normal person, but as my hands have slowly stopped cooperating over time, I find it much easier to just tear up the tortillas and layer them like a casserole.
But! What’s so interesting about my enchiladerole that I’m making a post about it? It’s...bland. Not spicy, not acidic. I make the chicken, and I make the sauce. Nothing premade here! I’ve got medical restrictions, placing me on a bland diet, so I modify recipes to fit.

First off, lemme say, normally I do this in a casserole dish. Yesterday, I did not. I did this in a disposable aluminum pan. The result was a little different than I expected, but not bad. Thusly, do not worry if you do not have a casserole dish (I never had one before I moved back with my parents to help them). Disposable aluminum pans are pretty cheap at the store (I think my 2 pack was maybe a dollar or two.) so even if you don’t want to casserole it and want to roll them like normal, these pans will still fit the bill.

2 pounds of chicken meat. Breast fillets or strips or ones that have been cut up for stir fries all work. They’ll all be cut up in the end. Frozen or fresh, no difference (but ya gotta thaw em, silly).
Mayonnaise. 
Garlic (I use minced).
Lemon juice.
Seasonings/spices. I am a weh weh baby and use only rosemary, salt and a dash of cayenne pepper. You can change these to suit your tastes.
Shredded cheese, your choice. 
I picked up this bit from my sister. She uses it when she makes spinach chicken. I like cooked spinach, but it has no place in my enchiladerole. 
My parents use canned chicken chunks when they make their enchiladas. Le yuck. No flavor and it stinks worse than canned tuna, tbh. It’s ok for chicken and dumplings, but not in a dish where chicken is top of the bill.

What we’re going is basically making a paste to dredge the chicken in. The mayo coats it and keeps it from drying out. The lemon juice is to help break down the meat and tenderize it a little. The spices flavor the meat. The cheese makes a happy crust. 
I don’t do fancy measurements. See that spoon? You need 2.5 spoonfuls of mayo. A 5-6 second squeeze of lemon juice. Pinch of salt, dash of cayenne, and two shakes of rosemary. For the garlic, your choice. I use the other end of the spoon and take a dip out of the jar.

Handful of cheese. Add it a little at a time if you need to, to keep the balance. Remember, you’re going for a paste. Mix it up, should look something like this.
Prep your chicken. You can leave it in the big fillets or chop em into smaller pieces to bake. I find it easier to piece them, since they take less time to cook.
Stick em in the bowl, mush them around with your hand. Don’t worry about them being completely coated, just make sure they’re covered into the mayo. When they’re all coated, you can put the extra cheese on top to make the crust.

Like that. You definitely want to use foil on your pan for this, because there will be liquids. Cheese oil, chicken juice, all that good stuff. Make a little wall around it so it doesn’t get everywhere when you take it out later. Save the crunchy bits that end up around the chicken when they’re done. They’re still good and you can put them in the enchiladerole for extra flavor.

Now, I put mine in the oven for 45 minutes. However, that is for THIS oven. In the past, I’ve had to cook them for longer, and for shorter. It all depends on your oven. You know it, I don’t. It’s better to underestimate and have to add time than to overdo it and burn the yums.

Unless you have a fancy stick thermometer, you’re probably not going to be able to tell. Here’s what you do: cut the biggest piece open and see if its raw inside. If it’s raw, they aren’t done. You want it to look like the inside of a chicken nugget (white), not what it looked like going in (pink and gooey looking).

So now that they’re out of the oven, let em sit. One, they’re hot and you don’t want to handle bitchin hot chicken. Two, whenever you cook meat, you want to let it rest afterwards. This lets it reabsorb some of the liquid that cooked out and other fun culinary stuff.

Milk (I use whole milk because that’s how I am. Fairlife is lactose free, though. Whether you use regular or lactose free doesn’t matter. Just don’t use like...nut milk. Use the moo juice.)
Butter (I used what was already opened, which was unsalted. If you use salted butter, watch how you add salt in other parts of recipes. It can throw off your groove.)
Sour cream. 
Not pictured here, the same spices as the chicken paste (Cayenne, Rosemary, Salt. No garlic this time, but you can if you want to.)
Also not pictures, more shredded cheese. Haha.
I use about 2 tablespoons of butter. Melt it in your pan, mix in the flour slowly. Probably about a cup of it. You’re the judge of how thick you want your sauce to  be, so adjust to your liking. What we’re doing is helping the flour not be a little bastard and clump when it encounters the fat (the butter), so the sauce can be smooth. Nobody likes lumpy sauce. If you need to, you can add a little bit of the chicken stock to help smooth things out. 
When things are looking pretty well mixed, add in the stock and the milk. Eyeball it, my dudes. Fill the pan a little under halfway with the stock, then the other half with milk. Keep about an inch to the top, otherwise things will get messy when you add in the sour cream later.

When it reaches a simmer, add in your spices and sour cream. Stir stir stir. Don’t let it boil, though. Sour cream doesn’t like to be boiled. Keep stirring. Add in a handful of cheese. Don’t let the flour or the cheese settle on the bottom and burn. That will taste very bad.

It will eventually look like this. Smooth. Taste it. Taste flour-y? Not done yet. Keep going til it doesn’t taste like flour. You should be able to taste the sour cream and the spices. Need more spice? Add it now. By now, it should reach your desired thickness. At the least, you want it to coat the spoon when you remove it from the sauce.

To me, they were too mushy and lacked good flavor. The consistency was not my favorite to begin with, so I never tried to incorporate it into anything to make myself like it. I think the first time I remember trying avocados was when I tried homemade guacamole for the first time. I did not hate the taste, but if it was in front of me with five other dips, I was not going for that green stuff. Fast forward to my late teens—I ate avocado toast for breakfast like it was going out of style and made homemade guacamole any chance I could. My taste buds fluctuated to say the least.
When I saw this recipe while scrolling through my Instagram, I immediately saved it. “How interesting?!” I thought to myself, slightly doubting it could taste anything like a real brownie. I love a good healthy alternative though, so I clearly cannot knock it until I try it. Which leaves me here-- the perfect opportunity to test out this gluten and dairy free friendly dessert that will leave me feeling less guilty, and my stomach will gladly thank me afterwards.  
The first step is to mash up one avocado in a big bowl. Warning, the consistency looks a little bit like green cottage cheese but trust the process. Before pouring the batter into the pan, the recipe recommends adding parchment paper to avoid sticking. I did not have parchment paper, but I used the old baking method that works like a charm every time-- a little oil and some almond flour to coat the bottom of the pan to prevent it from sticking. The last step is to sprinkle some additional dairy free chocolate chips on top and bam, ready to go into the oven.
One of my favorite memories of baking when I was little was always licking the bowl and spoon that was coated with left over batter. The brownie batter usually came from the box mix instead of homemade, but regardless I was always in charge of mixing everything together with a whisk. I usually got the spoon while my brothers shared the bowl. I remember the batter always tasting so good. Nothing but chocolate, fudgy goodness. I blame this for my chocolate addition today and the need for a piece of dark chocolate after every savory meal. Since it was just me whipping up this batch of “healthy” brownies, I could enjoy both while the brownies were cooking in the oven. I truly felt like an impatient little girl waiting for the brownies to be finished. I could not wait to dig into them.
After the brownies had cooled for a few minutes, I cut them and tasted a corner piece, of course. I could immediately taste the slight flavor of avocado. Being an ultimate dessert lover, I can tell an impostor when I taste one. Right off the bat, without spicing them up, I would rate them a seven out of ten. Considering they were healthy gave some bonus points for not feeling guilty consuming them. They were a little dense and had a fudgy consistency, which I like. They could have been a little sweeter with more of a chocolate flavor. Alone, they were not awful, but they were not super delicious either. So, I experimented a little bit with them. I tossed some in the freezer to let them freeze slightly. Later, I topped my dairy free ice cream with broken up avocado brownie pieces, and surprisingly, it went together perfectly! I would not eat them alone, but they make the perfect ice cream topping. I think these would also work well as a yogurt topping too! Overall, not the best brownie I have ever tasted. As a topping or spiced up though, they were a great alternative! I would make them again if I planned on freezing them, but I might just have to hunt a little harder for the perfect healthy brownie recipe.

Breakfast is probably the most important meal of the day, and even if it's difficult for you to cook in the morning before work, then at least make sure you have a decent breakfast such as a bowl of porridge or some toast with jam.

Then exhale deeply, breathe in properly through your nostrils and hold it for a couple of seconds until you feel like you can't hold it in anymore. Then breathe out slowly again through your mouth.
This will help you relax properly and fall asleep with ease as well as relieving any stress you have from the day!
