Blueberry Nice Cream
2-3 servings
To make this nice cream you need a food processor or high-speed blender. It might take several minutes to turn the frozen bananas and blueberries into the nice cream. There is no sweetener needed but you can add some if you want.
This Nice Cream can be served as soft serve or put in the freezer to get it firmer.
Ingredients:
3 frozen bananas, cut in coin shapes
½ cup frozen blueberries
1 teaspoon vanilla extract (optional)
1 teaspoon sugar or stevia (or another sweetener) (optional)
Directions:
Add to the food processor or high-speed blender the bananas, blueberries, vanilla extract, and a sweetener. Blend. This should take about 5-10 minutes. You may need to stop a couple of times to scrape down the sides of the food processor or blender
If you want soft serve nice cream serve immediately. Otherwise, put the nice cream in a freezer container and put in the freezer for a couple of hours. You will then be able to scoop out the nice cream into a bowl as it will be firmer. Take the nice cream out of the freezer for 30 minutes or more before scooping into a bowl.
Note:
Bananas need to be peeled and cut before freezing them as it is not possible to peel or cut them once they are frozen. Sweeten the nice cream to your taste

Oat Nice Cream (Vegan)
This soft and sweet Oat Nice Cream is a lovely, easy and light frozen treat on a hot afternoon! Happy Monday!
Ingredients (makes about 1 cup; serves 1):
1 large Frozen Banana
¼ teaspoon Homemade Vanilla Extract
2 tablespoons Oat Milk
a tablespoon toasted (unsalted) pistachios, for garnish (optional)
Place Frozen Banana slices in a food processor. Add Vanilla Extract and Almond Butter. Process on high speed, gradually adding Oat Milk, until mixture is paler, smooth, and the texture of just-churned ice cream.
Serve Oat Nice Cream immediately for a soft serve, sprinkled with chopped toasted pistachios, if desired; or freeze a couple of hours in a sealed container.

My favourite way to start the day lately / such a perfect breakfast on hot summer days. 😍 Healthy mango, pineapple and blueberry ‘ice cream’. I often add some walnuts on top as well to add a boost of healthy fats (it’s such a great source of omega 3 ALA).
What I use:
80g frozen mango
70g frozen pineapple
70g frozen blueberries
1-2 tsp sugar (or honey)
1 cup of whole milk (or 120g plain Greek-style yoghurt + a bit of water)

I know that originally ‘nice cream’ was made with just fruit (often frozen banana as a base) but I personally much prefer this version with milk or yoghurt. It’s so much more satisfying in my opinion, the macros are more balanced and it boosts the nutritional content (calcium, B12, iodine, etc). 👍

Mint Chip Shake
The Recipe
Raw Superfood Mint Chip ShakeServes 1Ingredients
1.5 frozen banana3/4 cup ice
1 cup plant milk
1 Tbs Dastony stone ground raw cashew butter
Handful baby spinach
1/2 tsp green powder - we used Amazing Grass Supergreens mix but use your fave!
1/4 tsp vanilla
1 drop therapeutic grade peppermint essential oil, or 1/8 tsp organic peppermint extract
1 Rawmio mint Essentials bar chopped
1 tsp Rawmio cacao nibs for extra crunch
Steps
1. Blend all ingredients except raw chocolate and cacao nibs until smooth.
2. Once blended, add in your cacao nibs and chocolate chunks and blend again briefly for a mint chip effect.
Enjoy!
The ingredients for this one are kind of expensive or hard to find, so think of it as inspiration. Fresh mint leaves would be cheaper and easier to find than essential oils.
