Exactly what i said! it depends on what you consider 100% canon material, but if you take the light novels into account (which are at least canon to Baruto) Kiri had a caste system according to "Kakashi Hiden: Lightning in the Icy Sky"
According to Kahyo, from that novel, Kiri has had a class system since its founding. in chapter 10 she talks about how the graduation ceremony, that we know from Zabuza, is only forced on the lowest class of ninja and how she and her husband left Kiri all together because even when you passed the graduation ceremony, if youre in the lower class they still assigned you the most dangerous jobs because your life is expendable. I'm gonna pull some direct quotes starting from page 117, so spoilers for the novel obviously!
" It's not well known, but there's been a kind of class system in Kirigakure since olden times. At the top, those people from families whose ancestors, and their ancestors, were born and raised in Kirigakure. Next, those people from families who allied with Kirigakure in the long history of war. And then at the very bottom are families who fell to Kirigakure and had no choice but to be swallowed up by them. " From the above quote we can see that there's at least 3 castes that you can fall into in Kiri which I personally just call High, Middle, and Lower for the sake of brevity. High class families have been there since the founding of the village or founded the village themselves. Middle are the ones who joined Kiri voluntarily by becoming their allies once the village was already founded. Lower as the ones who stood in opposition to Kiri and had "no choice", so things like colonies and annexation, right? Now how do we know that theyre castes and not just a like how konoha treats clan vs non-clan ninja vs civilians? Because individuals can't move into different classes. It's a fixed social group based on how your ancestors joined Kiri! Kahyo can't become someone from a high class clan because its not based on what she's done, but on the family she was born into. She cant change the status of her clan or how her clan joined Kiri outside of literal time travel. The only thing she might be able to do is marry into a higher class, but there's no canon information on if that was allowed.
Taking the context at face value, what she describes in Kiri is a caste system.
So what about all that stuff I said about Zabuza?
" I'm sure you've heard the name Zabuza Momochi. The man they called the demon of Kirigakure. He is one of the people who got out of the village as soon as he could. I heard he was such a gentle boy when he was a child.
Did you know? In the past, Kirigakure was called the Village of bloody mist.' In order to become ninja, we had to pass a certain test: students at the academy were forced to kill one another.
You probably already know all this. But what you don't know is that the only ones forced to take this test were us, the shinobi in the lowest class. In this graduation exam, Zabuza Momochi, who was still a child, slaughtered over a hundred would-be ninjas.
And that's where it comes from, you see? Calling him a demon. "
From this we can assume a few things! Firstly Zabuza was from a Lower class family, because he wouldn't have been required to take the final exam otherwise. He was considered a gentle boy and thus probably wants to preserve some of that innocence and gentleness in Haku where he can as it's no longer afforded to him.
Secondly, there's a possibility that Kisame was a Middle or High class family, because we never encounter a point where he speaks about his own graduation ceremony. However, given the way that Shizuma talks about his clan no longer being in memorials (Boruto ep 28), that does skew my belief to think the Hoshigaki's are a High Class, though I feel that's much more circumstantial.
Thirdly, as the 2nd Mizukage is a Hozuki, which means we can assume that they're a High Class clan. Which means that Suigetsu and Mangetsu are both High Class as well. This makes sense as Mangetsu is the only one in the series that we've ever met to learn to wield all 7 of the 7 swordsmans of the mist's weapons. No one outside of a high class family would ever have the trust required from the village to learn those skills.
Fourthly, and again, spoilers for Kakashi Hiden, because Kahyo, her son, and her brother all have ice release and Haku has ice release, which we know for fact is a Kekkei genkai, that means that Kahyo and Haku are part of the same clan. Which then in turn means that Haku was part of a Low Class clan, just like Zabuza.
As for supporting evidence about about the missions:
"In Konoha, any mission accepted is given out according to the actual abilities of the shinobi. Not so in Kirigakure, however. The most dangerous and dirty work is always passed along to those of us in the very lowest social class. It has nothing to do with ability. From the village's perspective, we are so-called dangerous elements, liable to betray Kirigakure at any time. So we are assigned dangerous missions. We can do nothing but successfully complete our mission. But it's also fine if our mission ends unsuccessfully and we lose our lives, never to return home."
At the very least, under Mei the system seems to have changed!
" With the current Mizukage, the situation seems to have gotten much better, but at the very least, this is how it was in our time. There were rumors among us that the former Mizukage was being controlled by Madara. At any rate, many people find their love for Kirigakure exhausted and abandon the village. "
So this was a reason why at least some people defected from Kiri. And you know how Kiri has the Hunter Nin as a sect in their Anbu corps who are just devoted to hunting down missing nin from Kiri as we first learned when Haku showed up in his mask? Some of the people actual Hunter Nin are hunting down left for these reasons.

Gender Expectations in Kirigakure

The role of women in Kirigakure
Generally speaking, it used to be rather uncommon for women to become kunoichi. One of the women who did was Ameyuri Ringo, who quickly became an idol to many young girls in her time. The idea of a woman swordsman was ridiculous - yet she fought her way up to the top. The shinobi affilitation was a very men-oriented field and those women who did became fully fledged shinobi were battle hardened and didn't take shit from anyone.
However, it was very common for women to be part of the workforce, since many citizens are on the poorer side, women from higher ranked families being the exception. The most common jobs taken on by women used to be rice and fruit farmers, seamstresses or business (co-)owners.
This has changed, however, once the fifth mizukage, Mei Terumi, rose to power. She encouraged young women and girls to fight for their dreams and become shinobi as well.
Women of the middle and higher classes are expected to take care of themselves, look pretty and be gracious, elegant and soft-spoken. Arranged marriages were nothing uncommon, often leaving the women with no choice in the matter.
Men's role in Kirigakure
Men are expected to be hard workers, providers for the family, but the image of the ideal man does differ from other cultures. Men in Kirigakure are rather comfortable in their femininity and it is not uncommon for men to wear makeup, do skincare and sleep with silken bonnets to take care of their hair. This often leads to Kiri men being seen as effeminate or flamboyant.
The exception to this are Kiri fishermen and sailors, who have adopted a more 'westernized' view of masculinity. Often foul mouthed and abrasive, they have formed their own subculture of 'new masculinity'.
Gender outside of woman and man
It is not uncommon for youngsters and teens in Kirigakure to reject the idea of being either a woman or a man, however it does lead to scrutiny and condemnation of Kirigakure's older population. People assigned female at birth are more often scruitinized than people assigned male at birth.
The beauty ideals in Kirigakure
Fair, pale skin Fair skin is seen as a sign of wealth and beauty in Kirigakure and a very desirable trait to many people. Skin bleaching creams are widely available and there are many problems with colorism in Kirigakure.
Long, luscious hair Another sign of wealth, long, open hair is seen as the beauty ideal because it means not having to work a tedious job where long hair would be seen as tedious.
Brown eyes In a country where people with kekkei genkai were frequently hunted down and killed, it is to be expected that anyone with a rare or unnatural eye color would automatically be seen as a freak, leading to brown eyes being the beauty ideal in Kirigakure.
A plump, well fed looking body This is pretty much self explanatory, as more plump bodies are seen as a sign of being well fed and able to afford leisure time.

There have been several attempts on Mei’s life; I think. Constantly stamping down resurrectionists and whatnot. She took down the caste-system, so I imagine it was many who previously benefited who wanted to see her dead.
Terumi Mei, the Godaime Mizukage is many things, merciful, kind, intelligent, deemed the strongest in her village. None of these traits apply to those who endanger her home, and her people.
There are rumors of how Mei handles traitors, and none of them are pleasant.
