Recipe for Lembas Bread!

2 1/2 cups flour - 1 tablespoon baking powder

1/4 teaspoon salt - 1/2 cup butter (room temp!)

1/3 cup brown sugar - 1/2 teaspoon honey

1 teaspoon cinnamon - 1/2 teaspoon vanilla

2/3 cup heavy cream

*pinch of nutmeg

Pre-heat oven 425 degrees fahrenheit/ 220 degrees celsius, line pan with parchment.

Sift flour, baking powder, salt. Add cubed butter. Beat on low (stand mixer). Once combined, add sugar and cinnamon (and nutmeg) and mix well.

Pour cream and honey and vanilla into bowl mix with fork. Mix until dough ball.

Roll the dough onto floured surface cut into 1/2 inch thick squares about 3 inches long. *use fork to carve diagonal lines

Bake 12 minutes - cool and serve.

My months of rest and relaxation // day 96

Today is the final day of my months of rest and relaxation, and I am slightly bothered by the fact that I didn't manage to get to 100 days. Jokes aside these months have been fundamental for me and I did a bit of reflection on a specific post. I am excited and a bit nervous to go back to uni, but my goal is to do anything in my power to enjoy myself as uch as I can. So from tomorrow a new chapter starts and I can't wait to share it and recond it here.
