Basque Gambas with Creamy Tomato Sauce

I made these mouth-watering Basque Gambas with Creamy Tomato Sauce on Bastille Day as Jules was home for a few days, and it brought back recent but very fond memories of our holiday in the Basque Country. I attempted to recreate a dish I ate in Saint-Jean-de-Luz. I believe they make a creamy pepper sauce at La Diva restaurant, but this was just as tasty! Happy Tuesday!
Ingredients (serves 3):
1 tablespoon Chili and Herb Oil
15 to 18 fresh gambas (King prawns) (about 500 grams/1.10 pound)
1/4 teaspoon Piment d’Espelette (a hot chili from the Basque Country) (or Cayenne pepper)
1/2 tablespoon olive oil
1 large shallot
a good bunch Garden Parsley
1 large, ripe tomato
1 garlic clove, minced
1/2 teaspoon fleur de sel or sea salt flakes
1/4 teaspoon Piment d’Espelette (or Cayenne pepper)
1 lemon
1/2 tablespoon caster sugar
1/3 cup double cream
In a large, deep skillet, heat Chili and Herb Oil over a high flame. Once hot, add the gambas, and cook, stirring often, until they turned bright pink, and just start browning. Sprinkle with Piment d’Espelette and cook, another minute or two.  Transfer gambas to a plate; set aside.
Add olive oil in the skillet. Reduce heat to medium-high.
Peel and finely chop shallot, and stir into the skillet. Cook, a couple of minutes. Finely chop most of the Garden Parsley, saving some for garnish, and stir into the skillet. Cook, 1 minute more.
Dice tomato, and add, along with its juice, to the skillet. Cook, stirring, often, a few minutes, until tomato collapses into a sauce. Add garlic, cook 1 minute more. Season with fleur de sel and Piment d’Espelette.
Thoroughly squeeze in the juice of the lemon. Cook, another couple of minutes. Then, stir in sugar until dissolved. 
Add double cream, and return reserved gambas to the skillet. Give a good stir, coating generously in the sauce.
Finely chop remaining Parsley.
Serve Basque Gambas with Creamy Tomato Sauce hot, sprinkled with chopped Parsley, rice, and a glass of well-chilled white or rosé Irouléguy.

My love of food extends to my love of cooking.
I’m not very organised so just for ease I have been using hello fresh for about a year now. I switched over to gousto just purely because they had an offer on 😊.
The first thing I noticed was how much cuter the packaging was than hello fresh. Also the recipe cards are a much better size for me personally.
The first recipe I tried was the classic king prawn korma. The instructions were easy to follow and made a good enough amount as both me and my partner have big appetites.
I was very excited for this meal as it had quite a few big flavoured ingredients. It did not disappoint. Would give this recipe a 4/5

King prawns with tomatoes and garlic 🍤
Sauté diced red onion, chilli and garlic in olive oil.
Add cherry plum tomatoes, chopped in half or left whole (but cruelly stabbed with a knife if so- to prevent popping!), a few large spoonfuls of tomato passata and a vegetable stock cube.
Simmer gently until thickened (about 10 minutes), then throw in your prawns and allow to cook (another 5 minutes or so)
Enjoy!

help i can't stop making these
it's important to note that while some are in the same category, their motivations are different:
•pepe is being annoying on purpose but bean bunny is just a lil shithead
•piggy thinks sweetums is annoying, stat+wal just want more space in the car and sweetums is the biggest, and also the bit of sweetums always getting left behind on road trips was too perfect for this
•rizzo has the good snacks but refuses to share. swedish chef has... food? and is very enthusiastically offering it to his friends but nobody has taken him up on it
•electric mayhem only plays bangers, don't get me wrong, but in my head sgt pepper was playing "Fugue for Frog" (muppet show S1 last episode i think) on repeat to annoy kermit and the rest of the band was vibing until kermit flipped

Muppet Casting Rules
Because you can't just do whatever you want when you're casting the muppets.
Rule #1:You get ONE Human celebrity actor to play a character. This can be a main protagonist, a villain, a joke character, whoever fits best, but you only get one TRUE "celebrity" guest.
Rule #2: You may have multiple celebrity cameos, but their characters must appear only once and then never again, otherwise the celebrity counts as your one true celebrity role.
Rule #3: You may have two additional non-celebrity human actors to play roles where necessary. Generally this should be one man/boy and one woman/girl, but gender is a construct and this rule can be flexible depending on the roles in question.
Rule #4: Muppets should not be cast as multiple characters unless it is a story where two roles are traditionally played by the same actor (ie, the wolf and the prince in Into the Woods). Each muppet should only have one character in the story that they play.
Rule #5: The exception to rule number 4 is Miss Piggy, who may play multiple roles (as she does in Muppet Wizard of Oz) if the roles all make sense for her to play. This is both because she is really the only female muppet of note, and because, let's face it darling, she has the range.
Rule #6: You get ONE Unique Muppet per show. This should only be used once all other possible casting options have been exhausted, but an original muppet may be designed in order to fill a role that's particularly difficult to cast with current existing muppets and the One Celebrity and Additional Humans have already been used.
Rule #7: Background characters can be a mix of human and muppets, the ratio is dependent on the story itself. However, background characters are only really worth mentioning in the case of musicals, when discussing ensemble pieces.
Rule #8: Finally, any and all of these rules are in fact breakable if the end result is funny enough to justify it.
