Rainbow Kettle Corn Total Time 40 minutes Prep Time 5 minutes Cook Time 30 minute for 10 cups
Ingredients
12 tablespoons sugar, divided red gel food coloring orange gel food coloring yellow gel food coloring green gel food coloring blue food coloring purple gel food coloring 6 teaspoons coconut oil, divided 12 tablespoons white popcorn kernels, divided, plus 12 kernels 1 ½ teaspoons kosher salt, divided
Preparation
Line a baking sheet with parchment paper. Divide the sugar evenly between 6 small bowls, 2 tablespoons per bowl. Dye each bowl of sugar a different color by adding 1-2 drops of red, orange, yellow, green, blue and purple food coloring. Stir each bowl with a clean fork until the sugars are sandy in texture. Note: We recommend gel food coloring, as the colors are more stable. Only use 1-2 drops; a little goes a long way. Add 1 teaspoon of coconut oil and 2 popcorn kernels to a medium nonstick saucepan with a lid. Cover and place over medium-high heat. Once the kernels pop, reduce the heat to medium and add 2 tablespoons of popcorn kernels and 1 bowl of colored sugar. Immediately cover the pan and shake to combine. Cook, shaking the pan constantly to ensure that the sugar doesn’t burn, while the popcorn pops. Once the pops are more than 3 seconds apart, remove the pot from heat. Carefully remove the lid away from your body and pour the popcorn onto the prepared baking sheet. Evenly sprinkle ¼ teaspoon salt over the hot kettle corn. Let the popcorn cool completely, transfer to a bowl. Repeat with the remaining colors, replacing the parchment paper as needed. Combine all of the popcorn in a large bowl. Toss to distribute the colors evenly. Serve immediately, or store in an airtight container for up to 2 days.

Kettle corn all the way. When I was growing up we had a farmers market and set up every Saturday where they made fresh kettle corn. I’m talking still warm in the bag. Nothing can beat that.

kidlet is home alone, making kettle corn
I sent detailed instructions, here's to hoping they don't end up with burned kettle corn
(the instructions i typed out are under the cut)
ingredients: 1 big pinch of salt 1/3 cup canola oil 1/3 cup popcorn kernels 1/3 cup white sugar
tools: glove, small towel, spatula, small bowl, measuring utensils, the biggest soup pot in the house with a lid
instructions
make sure everything is dry (your measuring cup, the bottom of the pot, the spatula you're using)
measure out your popcorn, sugar, and salt. Combine them in a dry small bowl
heat the oil in the bottom of the big pot with 3 popcorn kernels, lid closed
wait for all 3 kernels to pop.
as soon as all 3 have popped, dump the bowl of combined ingredients into the pot, and stir well with the spatula. Be quick.
put a lid on it and wait for the popping to start
as soon as popping starts, repeat [shake 3 seconds, stop 3 seconds] while holding the pot over the heat. put your thumbs over the lid or it'll fly off. (use your glove and towel)
when the popping slows down to 2-3 over 10 seconds, turn off the heat. Open the lid once you could count to 20 without hearing a single pop, and stir
dump it out into a metal bowl right away (if you keep it in there, the sugar will stick to the bottom) and wait 5 minutes before eating

Big UGH
I ate way WAY to many Whopper’s and caramel kettle corn last night before bed and now I am paying for it, I almost feel hung over?? Like I think I had far too much salt and sugar? I woke up with a nasty belly ache as well. Yuck, a good reminder though that you gotta be careful what you put in front of you by the computer while you are deep into YouTube.
