As someone with celiac who legit needs a gluten free diet, I sympathize with epileptics who legit need a keto diet, because it's fucking annoying and downright dangerous when people treat a medically-needed diet as a dieting trend that only out of touch yuppies partake in (see: that one boomer comic of trick or treaters demanding "woke" candy like gluten free or allergen free).
Also specialized diets are fucking expensive and sick people are overwhelming poor. And because people treat it as a fad diet you've got companies slapping useless and unverified claims on their overpriced food that aren't actually gf or keto (see: that "gluten free" ramen with a "celiac certified" stamp where the noodles were made of fucking barley)

DAY 1:
I don’t normally do a f00d log, but since I’m trying k3to I thought this would be a good way to keep consistent.
It’s hard to f@st or eat below 500 c@l now that my family has voiced concern. “I’m worried you don’t e@t.”
I think I played it off— but for a while imma need to e@t my meals in front of them. That’s what I did today and I feel so f@t having to eat so many grams of f@t but that’s part of k3to apparently? I’m going to m3al prep when I have extra time this week, but I’m going to eat all my f00d in front of family to offset any w0rries or suspicions then I’ll be able to e@t less and keep my f@ts without them worrying.
I went on a 3 mile walk today— but my watch died so it didn’t count my steps or c@lories burned!!!! But I’m going to guess around 150cals burned on the walk or so. I also worked all day so I was up and moving 10 hours straight so I don’t know how much I truly burned. ˙◠˙

Not good. REALLY not good.
I've never had such awful numbers.
Have to clench my fists, listen to the diabetes team and keep doing what I'm doing. But ugh.....feel rough.
Hmm....where are those three reasons to smile -
1. Out in the fresh air twice today. Two short walks. Plus a HIIT workout and pilates.
2. Excellent macros. I'm going for the keto principle now. Maximum of 30g NET carbs, plus high fat. I need to think about the protein element. Only focusing on carbs and fat right now.
3. The decision to take on a challenge through March to walk/jog/run 100 miles to raise money for the mental health charity "MIND".
Might as well help out a very worthy cause doing something I'm able to fit into my daily routine!

Baked Caprese Chicken Recipe
Trim chicken breasts and slice a large pocket horizontally in the center of the breast, making sure not to cut all the way through. Season chicken all over with salt and pepper.
In a saucepan, over medium heat whisk together the balsamic, garlic and brown sugar. Bring to a boil, and cook until it has reduced by half, about 15 minutes. Set aside.
Preheat oven to 375℉. Place 1 tbsp of pesto into the pocket of each breast and spread evenly. Stuff each chicken breast with 2 halves of the mozzarella, 2 slices of tomato and 1 to 2 basil leaves. Secure with toothpicks.
In a large oven safe skillet over medium heat, thinly coat the pan with olive oil. Sear the chicken breasts until the outside is golden brown.
Bake in the oven for 8-12 minutes until the chicken’s inside temperature reaches 165℉.
Remove from the oven and let rest for 5 minutes. Serve with a drizzle of the balsamic glaze and fresh basil for garnish.
