Joy of Cooking - Fresh Cherry Pie
*Simplified*
Ingredients
1 package of refrigerated Pillsbury™ All Ready Pie Crust (2 crusts), or another store-bought brand that is at least 9 inches, thawed
4 cups frozen sour cherries, thawed and drained
2-2/3 tablespoons quick-cooking tapioca
1-1/2 cups sugar
1 teaspoon almond flavoring or 2 tablespoons kirsch (Note: Kirsch is a cherry and almond flavored brandy, while almond flavoring is a synthetic almond flavor imitation. Each will provide a slightly different taste to your pie.)
2 tablespoons butter, cut into small pieces
Step-by-Step Instructions:
1. Preheat the oven to 450°F.
2. On a lightly floured surface, roll out one of the crusts to a 12-inch circle.
3. Place the crust in a 9-inch pie plate and trim the edges.
4. In a large bowl, combine the frozen cherries, tapioca, sugar, and almond flavoring or kirsch.
5. Let the fruit mixture stand for 15 minutes.
6. Pour the cherry mixture into the pie crust.
7. Dot the cherry mixture with the butter.
8. Roll out the remaining crust to a 12-inch circle.
9A. If you intend to use a lattice top for your pie, cut the dough into strips and weave them together over the top of the cherry mixture.
9B. Otherwise, place the second crust over the cherry mixture and use a fork to prick holes in the top.
10. Trim the edges, then crimp the edges of the crust together to seal the pie.
11. Bake the pie at 450°F for 10 minutes.
12. Reduce the oven temperature to 350°F and continue to bake for 40 minutes longer, or until the crust is golden brown.
Tips:
To give your crust a flaky crust, handle the dough as little as possible and refrigerate it after every step.
Brush the top of your pie with an egg wash before baking to help in getting a golden brown color. You can also sprinkle sugar over the top for texture.
If you don't have any almond flavoring or kirsch on hand, you can use 1 teaspoon of vanilla extract instead.
Adding a handful of fresh raspberries or blueberries to the cherry mixture can add extra flavor, color, and texture.
If you want to make a lattice crust, there are many instructional videos and tutorials available online.
Allow the pie to cool for at least 30 minutes before serving and serve with vanilla ice cream.

Pozole variant #1 (Daily Soup)
Pozole variant #2 (The Joy of Cooking)
I thought this one was really interesting, since the Daily Soup recipe used pig feet. Then I did more research... and most recipes don't use pig feet. What.
The Daily Soup is an oddity: 1) it adds tomatoes 2) it uses chipotle pepper in adobo instead of processed dried peppers 3) it mixes in some toppings instead of adding them fresh, like shredded kale and lime juice. The Joy of Cooking recipe proved to be much closer to other recipes I saw online, but I wish I'd been able to find canned hominy for it.
Despite the oddities (ingredients probably due to the restaurant being located in NYC in the 90s/early 00s. And to be fair, they do say in the introduction to their book that they put their own twists on many soups they made), the Daily Soup posole was actually good. I'd make it again but with the peppers used in actual posole instead of the chipotles. The texture of the pork was amazing in it too.

It was delightfully absurd! I love a movie that is off-kilter at every turn!!! The stakes are escalating but rather than suspenseful, it is snappy and spirited
If you have ever wanted to watch a crime movie where the criminals are so incredibly inept at committing crimes that they have to keep pleading with lesbians they've just met to help them, this could be the movie for you
If you have ever wanted to watch a movie where for every scene involving violence there is also a longer lesbian sex scene, this could be the movie for you
Curlie, the Drive-Away Rental Dealer, who is decidedly in a different genre of movie, and who doesn't like people calling him Curlie (his actual name) because it's too familiar, deserves his own shout-out
This movie was exactly the right length!! It didn't drag, it told the story exactly in as much time as it needed (1h24min)
There is only one character in this movie who is based on a real person, and while I could not have predicted who that would be, they were once described with the phrase, "Someone like [them] should be in the Smithsonian."
Ethan Coen and Tricia Cooke, who are married, in a polymarous relationship and the latter of whom is a lesbian, directed and wrote this self-described B movie and have been trying to get it made for almost 20 years, which is incredible dedication
Quotes like: "Take the wall dildo." "It's your dildo, Suzanne."
