Homemade yogurt + granola + fruit
I've been making my own dairy yogurt for the past couple of months, following the kitchn's Instant Pot method. It's time-consuming and inconvenient, even with the Instant Pot, but the result is so much better and fresher than store-bought.
I usually start it in the morning by pouring a carton of whole milk into the pot and putting on the Yogurt > Boil setting. Once it finishes, I check the temperature with a meat thermometer. It's always 10 degrees short of where it needs to be (180 degrees F), so I turn on saute normal and stay close. It usually takes less than 5 minutes to get to 180, and then I take the inner pot out and let it cool on the counter. In the meantime I get out a clean measuring cup, ladle, and whisk. I take my few tablespoons of yogurt starter out of the fridge.
I check every 20-30 minutes until the temperature is back down to 110 degrees F. A skin forms, which you can either eat or discard. I put the inner pot back into the Instant Pot and the starter into the measuring cup. Then I ladle about a cup of warm milk into the starter, whisk, pour it into the pot, and then whisk there. Then I start the Yogurt > 8 hour setting.
After 8 hours I cover the pot and put it in the fridge overnight. The next morning, I use a Greek yogurt maker to strain the yogurt for a few hours, until it's thick and creamy.
I eat the yogurt with Cookie + Kate's homemade granola, which I add toasted coconut flakes to, and fruit. Amy Chaplin's fruit compotes (apple and blackberry pictured above) go great with fresh yogurt.

I’ve been trying to eat fewer carbs, which sucks because bread and potatoes are basically my two favorite things. Stupid middle age.
That change -- and Michaela skipping breakfast and eating crap at school -- has led to me trying to find different breakfast options. I’ve been making a lot of hard boiled eggs. They’re full of protein, easy to make in the IP, I can make a big(ish) batch, and Michaela loves them.
But I’d been wanting to try copycat sous vide egg bites, like the ones at Starbucks. We had some mushrooms in our fridge that are going bad, so I decided I’d give mushroom egg bites a try.
A lot of the recipes I found call for cottage cheese, which I didn’t have on hand, so I kept hunting. Eventually I found this one and one other; I sort of combined them for the final product. (Note: based on the other recipe, I cooked these on low pressure, not high as called for in this recipe. It seemed to be fine!)
I didn’t have any cooked bacon or sausage on hand, so I skipped that and made vegetarian egg bites using only the mushroom and cheese as filling.
When I make this again, I’ll add more salt (or use bacon or sausage, which are salty). I think it’d be nice to make these with spinach, bell peppers, ham, or gruyere. Not all together, mind you. But different combinations.
This recipe makes 14 egg bites.  They’re supposed to last up to three days in the fridge. They can also be frozen for up to three months.

He was clinging to you like a koala as you cook. When the ramen is done cooking, Chenle sneaks a kiss to you as a form of thank you. 
Park Jisung
You always love to do bento box, and Jisung is your number one victim. You know that it's rare for him have a proper meal at the right time, but you always make sure that if he sleeps over your place, he'll leave the next day with a bento box inside his bag. His hyungs do love teasing him about it but they coo about how sweet you are for making lunch, especially because the presentation looks cute! It was hard to destroy it it but Jisung eats it because you made an effort to make a bento box lunch for him.

Dump & Go meals are probably going to be some of the easiest meals for people who struggle with depression, anxiety, or other types of disabilities.
If you're preparing for surgery, giving birth, or just feel exhausted all the time please look into them.
There's a few different types of dump and go meals.
Instant pot : VERY fast and efficient, you typically throw shit in there with MINIMAL work and press a few buttons and wait.
Crock pot: SLOW. Very slow. Your food will take hours to be ready so if you're going to be at home all day, throw it in there in the morning and it'll be done for dinner. For breakfast and lunch you can have easy meals like premade lunchables or sandwiches.
Pan: You throw everything on a big sheet pan and into the oven! Less dishes, simple and easy to do.
Stove: This one requires the most ACTIVE cooking. You'll need to stir/add/etc occasionally to check on it. Unlike the others where you practically add a couple things and walk away.
This also promotes eating at home and EATING in general. I'm no stranger to forgetting to eat for an entire day and then not eating only because I didn't have enough spoons to cook.
"Okay but how do I find them?" Go online, whether tiktok, youtube, or google and look up instant pot recipes, crock pot recipes, dump & go recipes, and freezer meal recipes.
MAKE SURE you thaw these out in the fridge! Every night before bed just pull one out and put it in the fridge :)
Edit: I will also make note! You can often find freezer meals that work WONDERFULLY ! An example is pre seasoning + cutting some chicken, potatoes, and broccoli. Label it CLEARLY with directions !
That means you can freeze a batch of 15+ dinners/lunches AT ONCE and then not have to panic about cooking. If you’re a rice lover like myself you can buy a small rice cooker and turn it on while the other pot goes and that’s IT that’s all it takes for healthy yummy dinner
