Do you take lessons for anything? No. I’ve done so in the past, but not at the moment.
Has something really heavy ever fallen on you?  Other than siblings or cousins from when we played together as kids, I don’t think so.
If you wear makeup, what colors do you usually wear?  I never wear makeup but whenever my friends have used my face as a practice stage (lol) they’ve usually just used natural or nude-ish colors, which I find look okay on me.
Does your shower have curtains or a glass door/wall? It has a sliding door. I’m not sure what material it’s made out of, but I can tell you it’s at least not glass.
If you have more than one pet, do they ever get jealous of each other?  Cooper does tend to bark and/or whine when he sees me giving more attention to Kimi, but not always. Kimi couldn’t give less of a crap, but this is also because he is 13.
Is there a room in your house that you don’t like going in? I used to not like being inside my bedroom, especially after the breakup. For a long time it was a place I only associated with crying and breakdowns, so when I was doing the arduous task of starting over I haaaaated staying there because it only hurled me right back to square one. But I’m happy to say that I eventually got better, had enough strength to change the narrative for my room, and now I like being here again :)
Do you remember the last question you were asked? What did you answer? My mom just asked me to watch Cooper because he was having the zoomies.
Besides salt and butter, do you put anything on your popcorn?  Not a big fan of popcorn but if I had to pick a topping, I’d go with cheddar cheese.
Are you lonely?  I’ll feel it sometimes, but it only lasts for a moment or so.
What’s your favorite magazine to read?  Wow I haven’t read a magazine in years.
Do you like pineapple?  I hate it. In all forms. The pizza debate doesn’t even matter to me lmao, I just think pineapple downright sucks.
Have you ever seen fireflies? They used to be common in our village when we first moved in, back when there were only like 3 houses in the neighborhood (we were one of the first to move in here). As more houses were built and the place got more occupied the fireflies gradually lessened until they disappeared altogether.
Have you ever trespassed?  I very vividly remember taking multiple trips to the school cemetery back in grade school (I went to Catholic school and ours had a cemetery below our chapel, where all our deceased nuns were housed...I really shouldn’t be talking about this at 10 PM...). I am 100% sure that was an off-limits area but we went there anyway because we were a naughty group of kids and because no one was guarding the area.
Do you tell your parents where you are going? Yeah; if I live with them, they have the right to know. < Ooh, I’ve never even thought about it this way before but this is a very good point. I’ll second this, haha.
Do you agree with the notion that all people were created equal? Yes.
Do you raise your hand or participate in class? God never. I hid as much as I can and only recited if I was called on purpose.
Do you like visiting the mall? Why or why not?  I like the malls that we have. But then again, malls are the only decent public spaces we have - we don’t have public libraries, parks, playgrounds, etc. – so it’s not like I have a choice on where I can go if I want to go out. 
Have you ever purposely hurt an animal?  Yeah I kill bugs when I see them. Soz, I have no feelings for them whatsoever.
Would you ever see a therapist?  I planned to finally do this last year but it just fell through haha and eventually I was able to care for myself too. Now that I’m doing a lot better for the most part, I feel like I’d have no clue what to talk about once faced with one.
Are you afraid of heights?  Only if I had to jump all the way down. But if I ever found myself staying at an extreme height simply to enjoy the view, or if I was ever in one of those towers where the top floor’s floor is made out of glass, I think I would enjoy that.
Are you afraid of the dark?  I always say I’m usually not afraid of the dark, and will only be if I was in a situation that was intended to scare me. I would definitely be afraid of the dark if I was in like an abandoned cave or a haunted house, but I would also find the darkness in my room comforting.
Are you a jealous person?  When I am it’s mostly been in a playful sense and rarely serious.
When is your birthday? April 21st.
What are you listening to right now? My very very old aircon doing its very very loud whirring thing. It’s become a running joke in the family because it is literally SO FUCKING LOUD hahahaha Have you ever been caught doing something you weren’t supposed to be doing?  As a goody-goody, I can only ever do this to my mom; but yeah, she’s caught me many times.
Are you still friends with someone from kindergarten?  Sure, but I’m not ~close friends with any of them. Just chummy enough to like their photos on social media once in a while or greet them happy birthday. My oldest friend was from Grade 1.
What is the most important thing to you?  Being happy with myself and making sure I don’t miss out on life and opportunities.
Do you like whipped cream?  I can take it or leave it.
Are you close to your mother?  We get along but not close.
Are you close to your father? I’m closer to him in the sense that I would be more comfortable around him, but we’re also not physically or emotionally close. 
Do you walk around bare foot when you're at home? Or do you wear socks?  I am Asian hahaha what do you think?
Do you like chocolate popsicles?  Sure! One would sound lovely right now, actually.
Would you ever be your school’s mascot who wears that costume?  Both of the schools I’ve attended don’t have mascots.
Would you rather see the Great Wall of China or Big Ben?  Great Wall for sure. Sorry but I can’t see myself getting excited over a giant clock, and I’m sure there are other lovely spots in London I’d much rather visit. 
Have you ever written a poem?  Always unsuccessfully. It’s never been my forte.
Would you ever be a tornado chaser?  That’s a thing? Uh...no way??
What is your favorite thing to eat with bbq sauce, if you even like that stuff?  Pizza. And anything, I guess. Barbecue sauce is the bomb.
Your parents tell you that this summer, you get to pick the vacation. Where do you plan to go?  Covid notwithstanding and budget permitting, probably New York City.
What do you think is a good theme for a prom?  I could not care less.
Have you ever had to do a class in summer school? Thankfully, never.
Do you get nervous when you go to the doctor? About what?  You know, I’ve always thought going to the doctor was no sweat until I realized just how nervous I was when I had to book a telemedicine consultation once as part of my job (PR can make you do the most random, out of context things sometimes, I swear haha). I surprised even myself with the reaction I had when I found out I had to do it, and how I felt like declining the offer...I guess I was scared about the possibility of underlying health issues suddenly being unearthed. Your whole life can always get turned upside down in the blink of an eye with just one diagnosis.
Have you ever been to the rainforest?  I’m pretty sure the climate I live in is called tropical rainforest, so I guess yeah.
Have you ever created a website?  Not from scratch. I had always made it under an umbrella website, like Blogspot.
Ever thought about writing a book?  Sure, as a kid.
Have you ever had a dream where you killed someone?  No. Whenever I have dreams of that nature it’s always me or a loved one being killed, but never me doing the killing.
Do you ever make up stories in your head and wish they come true? Yes.
Which is worse: stuffy nose or runny nose?  Stuffy. It sucks not being able to breathe freely.
Which is worse: Sick to your stomach or sore throat?  I super hate sore throat. I already get stomachaches frequently, so even though I know how sucky it can be I feel like the discomfort would be bigger with a sore throat.
Do you think your last relationship was a disaster?  The way it ended was, but it wouldn’t be fair to myself to invalidate the genuine happiness I felt when I was in it.

How do you mark through your word search puzzles?  Depends on my mood. Sometimes I’ll strike through and sometimes I’ll go ahead and encircle the entire word altogether.

What did you eat for dinner last night?  We had breakfast for dinner, actually hahaha so my dad made an omelette, hotdogs, and tapa.
Ever been grounded? If so, for what?  Continued from last night. Yes, I was caught cursing all over Twitter when I was like 11 so my parents cut off my access to all my gadgets for a year or so. Which, in retrospect, is an acceptable consequence for my actions, but we’re also talking about a time when schools were starting to view the internet as a necessity in doing homework and research. I missed out on nearly all my homework for a while, and my mom didn’t buy it when I kept telling her I needed to do my research over the internet. At the same time, she kept demanding why my grades weren’t doing so well when she was the reason they kept being pulled down...so yep, not a very fun time.
Have you seen all of the Jaws movies?  No and I don’t really have the desire to. Doesn’t seem like my kind of movie.
When was the last time you played cards? (not on the computer)  Maybe 2 or 3 years ago.
Have you ever drank Cherry Coke? No, I don’t drink any soda.
Have you ever had a black eye?  Nope.
Have you ever eaten a bug?  Not to my recollection, but I would love to try cooked crickets and whatever bug can be prepared and eaten.
Do you like pranking people?  Never; the idea makes me cringe since I never know when it’s considered going too far. I’d rather watch people prank other people.
Did you ever take a cooking class in school?  Yeah, but we were required to take it. We also had some baking sessions, which to me was a lot more fun. I remember having to make macarons and rainbow cake which are both right up my alley, heehee.
Do you celebrate St. Patrick’s Day?  No, idk what that is. I just know people turn everything green on that day lol.
Do you use Skype?  I’ve never used Skype on my own. That’s where I used to talk to my dad for video calls maybe around a decade ago, whenever he was abroad; but I never had my own account. These days I alternate among Microsoft Teams, Google  Meet, or Zoom.
Have you ever participated in local magazine cover girl searches?  I don’t think so, but I did join a few contests on some of those kid’s magazines we used to have...none of which I won.
Have you ever been called a skank/slut because of the way you dress?  No.
Is your ex sexually attractive to you still?  I haven’t seen her in 5 months, which helps...that said, I simply feel nothing. I’m neither sexually attracted nor not sexually attracted to her.
Describe the most romantic moment you’ve ever had.  I can think of one but I don’t see the point in still raising it, considering where I am in life right now.
Have you ever cheated on a test?  Yes, once. I hated it.
Have you ever been to couple’s counseling? Nope.
How often does your employer ask you to work overtime?  A few times a week. Sometimes I’ll do it willingly as well just to get the task over with or to save myself some deliverables the next morning. I’m fine with OT-ing tbh; since I work from home, I feel like my time is a lot more flexible.
Did you often read for fun when you were a kid? I read A LOOOOOT as a kid. I was a total bookworm. < Yeah, same. You could always find me bringing a book to school and reading during breaks, even though they technically didn’t allow us to bring any non-academic book. My spark for reading died when I was around 12, same time as when my depression started to kick in, and it never really came back.
When was the last time you were scared?  Someone from the media called me up yesterday VIA LANDLINE to ask a question about a press release I had sent out that day. I usually read up on the materials we have, but I honestly didn’t give a shit about that particular story and didn’t really make an effort to know more about it, so I found myself stumped when he dropped the question. I ended up stalling for a bit before I was able to stutter an answer, so that was scary, but at least he was nice. Also, I hate phone calls.

Can you speak binary?  No, I never understood it.
Would you rather live somewhere that had hurricanes or tornadoes?  I already do, at least for hurricanes. I imagine I’d be terrified of tornadoes.
Have you ever had a pet that you disliked?  Nooooooo, never. I was never close to Arlee but I still did my best for her to like me, and always fed her whenever my sister would be in her dorm.
When was the last time you saw hail?  Never. Doesn’t happen all that often here, and when it does it’s always in the provinces.
What is on your mind right this second:  I want to spend my remaining time awake reading fanfic (I’m into them again, omg) but I also wanna finish surveys...so I’m doing my best to breeze through this so I can finally look for something to read hahahahaha.
Have you ever given a nickname to your pet(s)?  Cooper is Cooperino to me. Sometimes I’ll call him Cooperino Cappuccino. Kimi is Kimchi, Kimmerl, Kimberly, The Kimster, and sometimes Lolo, which is grandpa in Filipino heheh.
When was the last time you shaved your legs?  Like 3 or 4 days ago.
Do you ever try free samples at the store?  Nope.
Do you like boys with long hair?  Physical traits don’t matter much to me.
Do you like rootbeer?  I’ve never tried it but I don’t really want to either haha. It smells weird.
What is the best fast food place, in your opinion?  KFC or Taco Bell. Or Jollibee.

Burger Week 2017
2017 was an epic year for Burger Week in Portland. With over 40 restaurants participating, the decision of which establishments would receive our hard earned burger dollars was not an easy one.
TJ and I knew we had to meet up to hash out a game plan. Pulling up our Google calendars and the Portland Mercury’s official Burger Week map, we realized right away that we would be limited to places we could get to at a reasonable hour on a weeknight. Due to a pre-scheduled camping trip, we would sadly not be able to extend the burger celebration through the weekend. That meant we would have only three precious nights of burger bliss. We had to be efficient. We had to be strategic.
First, I ruled out the only donut burger on the list because the thought of it “made me want to vom.” TJ then quickly ruled out Biwa’s “Instagram Burger” on account of he really hated the name. We were on a roll. We picked places we had never gone to during Burger Week in previous years and we stayed away from the most historically crowded places where burger waits were known to exceed 30, even 45 minutes. Sauces and crazy toppings were important in our decision making. After nearly 40 minutes of intense burger negotiations. We finally had our three locations. We were ready to burger.
Monday: Kells - Ballycastle Sausage Roll Burger A ground pork sausage roll with a demi-glace and melted cheese on a ciabatta bun with lettuce, tomatoes, and red onions.

T: Have you ever had a sausage roll before?
K: No. My first thought is that this just looks like a pool of cheese. It’s wiggly.
T: I think the sausage roll is shaped into a donut. We’re getting baked meat in pastry dough, covered in cheese, inside bread.
K: I kinda want to cut it in half just to see its structure. I know it’s against our burger rules, but…
T: I’ll allow it.
[Karen cuts her burger in half]
K: Oh, this is juicy… it kind of looks like a pot pie got squished into a burger.
[First bites]
K: It’s really delicious.
T: I ate a lot of sausage rolls when I lived in New Zealand. It was amazing. You could get them everywhere. In America we have the gas station hot dogs that spin forever in warmers, but in New Zealand it was sausage rolls and meat pies sitting out under heat lamps.
K: New Zealand sounds very advanced.
T: The juice that came out...It’s not grease. It’s more like a stew. It might be the demi... fancy brown sauce.
K: I wonder if this is a burger people will overlook because it’s so unusual.
T: Well… is it technically a burger?
K: I don’t care what it is! It’s so good.
T: I’ve had a couple bites and I think that the plain burger toppings are a good choice, just lettuce, tomato and onion. The sausage roll is so rich I don’t want much else.
K: Nothing else needed. Even if you don’t get sausage in a bite you still get the flavor from the pastry dough. It soaked up all the flavor.
T: I was talking to someone earlier this week and they were all, “Kells isn’t known for great food,” and I was like, “IT’S A SAUSAGE ROLL IN A BUN HOW CAN YOU GO WRONG?”
K: Did you have the problem of people knowing you like burgers and asking you to go to Burger Week with them?
T: No.
K: I had a friend ask if I wanted to do Burger Week with them and I was like, “Hello! I have a burger husband.” It’s like a friend asking you to hang out with them on your wedding anniversary or something.
T: I could totally eat another one of these.
K: I’m slowing down but I’m not done.
T: Don’t you quit on me. What’s your rating?
K: I’d say an 8, by Burger Week standards.
Tuesday: Noraneko - Nacho Burger A cheeseburger with guacamole and a habanero and cumin crema. TJ ordered a homemade grapefruit soda and Karen got a homemade genmai cream soda, guessing that genmai was a type of tea, but not sure.

K: Ok, Noraneko. Here we go!
T: Let’s do it.
K: My initial reaction: this looks like a cafeteria Sloppy Joe.
T: Yes, the fact that it’s served in a tiny paper tray reinforces that.
[First bites]
K: I got some guacamole in that bite.
T: It’s nice.
K: I can taste the tangy cheese and something kind of chili-esque. I don’t know how well it goes with my genmai cream soda...but I don’t really know anything that would go with this soda.
T: My burger is pretty well done, which is a little disappointing. It’s obviously a pressed patty.
K: I have a little bit of pink in mine, but it’s a really thin patty with no taste, so it doesn’t really matter much.
T: I do like all these sauces on it though, particularly the spicy sour cream sauce.
K: It tastes like a chip dip. Sour cream taco mix dip.
T: The whole effect really tastes like a nacho, so I guess they succeeded at what they set out to do.
K: I like that it’s easy to eat and not falling apart.
T: I wish there were chips on it to give it a crunch.
K: The other Burger Week “nacho” burger has chips on it.
T: Maybe we chose wrong. Also, the guacamole is doing all the heavy lifting on this burger.
K: It’s not bad, for a $5 burger.
T: Yeah, although the Kell’s burger was only $5 and it was incredible. Also, I just ate this burger in like seven bites. It was too small.
K: Good thing you ordered chicken karaage before.That stuff was delicious.
T: So, what’s your rating?
K: I would say a 6. I really don’t like the thin patties. It’s hard to make those taste good.
T: I don’t think that burger is going to make me feel full. If I spend money on a burger I want to be full. I think I’m going to be hungry again in an hour.
K: I get that. But that’s a TJ problem. That’s never really a Karen problem.
T: Hashtag “TJ Problems.”

T: Is there a schism in Burger Team Go?!
K: There might be! Usually this works so well because I always have leftovers that you eat and we each get the right amount. Now I won’t have leftovers and you’ll be unsatisfied.
T: It’s a travesty.

T: I would give it a 6. But everyone should come to Noraneko for the karaage.
Wednesday: New Seasons – The 84
Originally slated as a break day, Karen and TJ each ended up getting the New Season burger separately on their lunch breaks. They both agreed it was simple but well done with high quality ingredients. The Beeler’s bacon and Walla Walla caramelized onions were particularly delightful, and the thick, medium rare patty was burger perfection. A surprise 8 ranking from both.

Thursday: Las Primas – Tangy Peruvian Cheeseburger A fire-grilled beef burger with chili-pepper mayo and Peruvian chili-pepper sauces. Served with house-made pickles and Peruvian-style slaw with cabbage and jalapeño, with pepperjack on top.

T: Did you try the pepper sauce with the fries?
K: The pepper sauce is delicious!
T: SO GOOD. When I used to live around the corner I came here often. God, Williams is so different now.
K: I like skinny shoestring fries like this. I’m excited for this burger cause it said it had a lot of sauces, which is usually a good thing for an inexpensive burger.
[First bites]
T: I actually like the cucumbers on this. They’re bright, like pickles.
K: But not quite pickles. So far I’m not getting a lot of flavor from the sauces.
T: It’s uneven. Some bites are spicy and some are just ‘grilled burger flavor’.
K: Did I mention I love these fries through?
T: Unlike this burger, the fries will still be here after Burger Week.
K: This patty is pretty bland. Another thin pressed patty.
T: I don’t think burgers are part of the regular fare here. Oh, that bite had some kick. I think you get all the heat from this burger after the bite.
K: There’s jalapeno.
T: The sauce is too runny and runs down the burger. My last bites were the spiciest.
K: I’m kinda disappointed with the flavor of this burger.
T: I expected more. I wish the flavors were stronger. This is just a plain burger that’s a little spicy.
K: It’s not very distinct. I give it a 5.
T: Agreed. It was out-shined by all the regular menu items. The empanada and churro we had were excellent.
K: Not the best burger to end on.
T: We’ll always have the sausage roll burger though.
K: God, now that was a good burger...kind of.

FEATURE: Cooking With Anime - Roulette Cream Puffs from "Gabriel DropOut"
You know, for me, it's been a rough week. I was in the hospital with my friend last Tuesday, then I had a crisis at work, and then I had to reconcile my very existance as a functioning human adult, which is never a pleasant task. So, this week I wanted to make something simple and fun.
  What did I choose? Cream puffs. Again. I hate cream puffs. Have I said that before? I'm not a huge fan of their eggy flavor, I don't really like the cream in the middle, and, though the recipe is simple, it requires filling a piping bag which is always messy, even when it should be simple. I chose them because I thought the recipe would be a fun challenge to do with my friends, but then that fell through when it became clear my steadfast roommate was now unable to sample my delicious food creations until the doctors had diagnosed her health problem. Making a dish that didn't excite me now lacked even the fun of sharing it with my best friend. Truly, this week was not going well for me (or her, to be honest).
  And yet, when I made the puffs this time, a miracle happened and I seem to have achieved cream puff perfecion. The puffs were crispy on the outside but soft and custardy within. The strawberry and vanilla creams were both delicious. And while, yes, it did take a long time to whip everything up, each recipe in itself is pretty simple. I'm convinced the puffs have been a turning point for me. I remembered that my favorite author's third book is coming out in a little more than a week. I realized Valentine's day was coming up, the one day of the year I find it appropriate to make raspberry and white chocolate mousse and eat it all by myself (my SO doesn't like it). And I got some awesome K-Pop swag in the mail. My life has been more care-free since these puffs, so no longer will i spurn them. But, what brought on the idea of cream puffs??
  Satania is invited to try some humungous cream puffs. However, Satania from the show Gabriel DropOut seems to have no tastebuds to speak of (Which makes me think that she actually wouldn't appriciate my award-winning cream puffs, but she might at least appreciate the bubbly inner structure of the puff).
    There are 3 puffs. One strawberry filled, one vanilla custard filled, and one.... one filled with a super spicy sauce!!! 
    Do I even need to say which puff Satania gets? She is remarkably un-swayed by the puff she is handed, which is frankly amazing. I've heard of this kind of game before; rice balls that are regular, and balls that are filled with wasabi. The game is played with friends- everyone chooses a rice ball and eats it together. The person who gets the wasabi ball is the loser and, at the end, the person who ate the most wasabi has to complete a challenge, or something similar. In this case, the girl who got the super-spicy cream puff was supposed to pay the bill. 
  Since I've heard of this challenge done before with wasabi, I decided to make the third puff filled with straight wasabi. Nothing fancy to it, really, but it's super effective. I invited many of my friends to try it, but strangely, no one was willing to take a bite. This recipe is long- it takes a bit of time to make the different fillings. If I had to choose one, I would go with the traditional vanilla cream filling. I decided to add more vanilla than normal, which really improved the flavor, in my opinion. The strawberry one is good too, but I found it a little stiff for my tastes. In hindsight, I would only add half the gelatin packet for a looser cream filling. IF you plan to serve these to friends, though, the strawberry cream with the full packet of gelatin will hold up really well for travel purposes, better than the vanilla cream. With puffs, it's best to fill them right before you eat them but, of course, sometimes it can't be helped. 
  A note about the video- I'm not sure what happened, probably my bad week coming back to haunt me, but I lost some of the footage. There are three parts specifically you should be aware of that aren't in the video. I mention them, and they are in the instructions below, but I apologize for the missing footage. Please read below for a clarificiation of this lost footage.

  Strawberry Filling:
8 oz Strawberries, chopped roughly
2 tbs sugar
1 tsp lemon juice
1 packet gelatin
2 tbs water
1 cup heavy cream
  Vanilla Pastry Cream:
  3/4 cup whole milk
1/4 cup sugar
1/8 cup flour
1/4 tsp salt
2 egg yolks 
1 tsp vanilla extract
  Choux Pastry:
8 tbsp butter
1/2 cup whole milk
1/2 cup water
1 tbsp sugar
1/4 tsp salt
1 cup flour
4 large eggs, at room temperature
  **You may also need Wasabi, if you want to make it a true cream puff roulette.**
     To Make: 
1. Let's start with the vanilla pastry cream. Begin by steaming the milk on the stove. Do not let it boil. While it's heating up, combine sugar, flour, and salt with the eggs. Whisk until everything is saturated- it's ok if it's crumbly. 
  2. When the milk is steaming gently- not boiling- remove from stove and mix into the egg mixture a little at a time. After each addition stir quickly and vigorously to incorporate it all together. You must whisk in quickly, or the hot milk will cook the eggs. The act of stirring quickly both cools the milk down, and brings the eggs up in temperature to the right amount so they don't make scrambled eggs when you return everything to the stove. 
  3. When the milk and egg mixture are completely mixed together, return the liquid to the stove over medium-high heat. Stir constantly, about 4-5 minutes, until the mixture thickens to a pudding consistency. This will happen all at once after several minutes of stirring- don't leave the mixture along.
  4. Remove from heat and stir the vanilla through the mixture. Then, strain immediately to remove any lumps of accidental cooked egg. 
  5. Cover with plastic wrap to prevent a skin forming, and refridgerate at least 2 hours, overnight is best. 
   6. Then, let's work on the strawberry filling. Pour the gelatin into the water, mix together, and set aside.
   7. Then, put the strawberries, lemon juice, and sugar into a pot and heat over high heat. While on the stove, mash/ liquify with some kind of mashing implement (potato masher) or a stick blender to bring out the juices. You want a relatively lump-free concoction. Let the whole mixture come to a boil, and then let simmer on medium heat for about 10 minutes. (THIS DIDN'T MAKE IT INTO THE VIDEO- DON'T FORGET IT!!)
  8. Then, remove from heat. Strain to remove any seeds/lumps. 
  9. Stir the gelatin mixture into the hot liquid. The heat from the strawberries will melt the gelatin. Continue stirring until completely melted, and then set aside to come to room temperature. If at any point it begins to harden up, simply put in the microwave to gently melt in on 10 second intervals, or until mixture is liquid, but not hot. 
  10. Beat the cream to medium peaks and fold into the cooled strawberry mixture. Once folded in, prepare the piping bags and place the strawberry and vanilla creams into them. Filling the piping bags- turn the top over to create a lip and fill the bags that way. Then, just fold the top back up to leave any mess inside the piping bag. You will need a circle or star tip of moderate size- not too big, as it will leave a hole in the side of the puff. (THIS DIDN'T MAKE IT INTO THE VIDEO- DON'T FORGET IT!!)
  11. And now for the cream puffs! Preheat oven to 425 Fahrenheit. Place water, milk, butter, sugar, and salt into a pan and heat over high heat. When it's boiling, and butter is melted, turn the heat to medium and dump in the flour all at once. 
  12. Stir vigorously with a wooden spoon, about 5 minutes over medium heat, until a ball forms nicely (for me, this happens pretty quickly. Nonetheless, keep stirring for the 5 minutes) and liquid has had a chance to steam off. There should be some dough residue on the pan- this will indicate it's ready. When in doubt, keep it moving over the heat, at least 5 minutes. The goal is to cook some of the liquid out, which will produce and airy puff later. 
  13. Take dough off the heat, and put into bowl or the bowl of a stand mixer. Allow to cool about ten minutes, and then start beating in the eggs, one at a time. Wait until each egg is fully incorporated before mixing the next one in, ~4-5 minutes overall. (THIS DIDN'T MAKE IT INTO THE VIDEO- DON'T FORGET IT!!)
  14. Prepare a baking tray with parchment paper. Prepare a plastic bag or a piping bag for the choux pastry. 
  15. Pastry is done when it is glossy, slightly sticky, and holds its shape well. It should not be runny. Put the pastry into a piping bag/ ziploc bag, and snip off about 3/4 inch of a tip.
  16. Pipe puffs by starting in a big circle that draws up into a point. The bigger you pipe, the bigger the final puff. These will rise upwards, not outwards. 
  17. Tap down the tips- if it's sticking, dip your finger in a bit of water to tap down the points, so they don't burn in the oven.
  18. Reduce heat of oven to 375 Fahrenheit and then place in the middle of the oven for 30-45 minutes, depending on your oven. Do not open until at least 30 minutes have passed. If your oven burns hot (mine does- it's a gas stove), err on the side of caution and check at 30 minutes. If your oven isn't as hot, check after 40 minutes. Puffs should be golden brown and nice and tall. 
  19. While puffs are cooking, prepare fillings. Place into piping bags or plastic bags fitted with piping tips. I'd recommend a round or star tip, but whatever you have will work. You could even try it without a tip, if you're accustomed to living on the wild side. 
  20. When puffs are done, allow to cool completely before filling. Use a knife to create a hole in the bottom of a puff. Then, fill with the filling of your choice. 
  21. To make a wasabi puff, put some wasabi in a plastic bag, snip the tip, and pipe it in like the others. 
  22. And now it's done!
