Pasta Made from Beans🌱

Ingredients: (makes 1-1.5 servings) 
3/4 cup Red Lentil Strozzapreti Pasta
1 chopped zucchini
1/2 diced onion
*olive oil
*vodka sauce
*cumin
*salt
*pepper
1/2 chopped tomato (optional)
things with an * means that the amount you want to add is up to you!
Steps:
1) Put water with a sprinkle of salt in a pot and heat over medium flame until boiling vigorously 
2) Pour in the pasta. cook for about 3 minutes and drain (pasta should NOT be soft but be cooked)
3) Pour some oil oil into the same pot, toss in the zucchini, tomato, cumin, onion, and pepper. Sauté them for a bit until onions are a bit translucent
4) Lower the heat and add the pasta and then vodka sauce, mix until incorporated, simmer for a few seconds
5) Transfer to a bowl, sprinkle some more salt and pepper and maybe add some cheese
Enjoy!
I usually eat this pasta for lunch to gt my protein in for the day. It’s pretty heavy so I eat it on days when I don’t have a heavy breakfast and heavy dinner. Most times this keeps me full for the rest of the day!

So many different textures, but I figured out how to like them all with the right sauce! This recipe is delicious but you can play around with all kinds of veggies, nuts, & spices just throw them in the blender & taste as you go! This creamy sauce is full of fibre & protein. ROAST: 6 Carrots 1 Yellow Potato 1 Onion 5 Garlic PUT EVERYTHING IN BLENDER & ADD: 1/2 cup Coconut Cream 2 cups Cashews (soaked in water for 3hrs) 4 tbsp Nutritional yeast 1/4 tsp Turmeric Add to taste Salt & Pepper MIX INTO PASTA & ENJOY! 😋 I used quinoa pasta in this recipe it’s most like regular pasta & it cooks in a few mins.
