Simple Carrot and Coconut Curry Soup
Healthy, hearty and delicious carrot soup. This is a perfect bring to work lunch that will fill you up and get you through the rest of your day.

I have proclaimed many times my love of soup and my dedication to meal prep. I’ve been making lunches for my family since, well the beginning. Even before I had a family I would meal prep my lunches. And that's why I’m happy that TAVVA Kitchen sent me these snack containers to try out. They are stainless steel containers with silicone lids that are the healthy alternative to plastic. My kids use stainless steel containers when they bring a hot lunch and my husband uses glass. So we as a family are trying to get away from plastic. These snack containers were the logical choice for this carrot soup I meal prepped for lunches. It is a quick recipe that you can put together on Sunday night in under 30 minutes. Place the toppings in your snack containers and you’re eating a healthy lunch at your desk on Monday afternoon. 
Carrots and Coconut milk pair great with the crunch of pepitas. The yogurt has a slight tang and as for cilantro, you gotta like it. Do you know some people think it tastes like soap? I personally think it gives a lovely flavor to this soup. If you’re new to meal prep this is a great starter recipe. It really comes together so quickly.

Makes about 5-6 servings
INGREDIENTS
2 (16-ounce) bags of baby carrots
32-ounce container vegetable broth
2 tablespoons cashew butter
1 13-ounce can coconut milk
1 tablespoon yellow curry powder
1 teaspoon ground ginger
Salt and pepper to taste
Optional and highly recommended toppings ( quinoa, chickpeas, pepitas, plain Greek yogurt, cilantro, and lime wedges)
DIRECTIONS
Add baby carrots to a steamer or steam bag. I used my stasher bag and each bag of carrots took 5-6 minutes to steam. 
Place steamed carrots in a blender with half of the container and vegetable broth. Blend until smooth. 
 To a soup pot add blended carrots, the rest of the vegetable broth, cashew butter, coconut milk, curry powder, ground ginger, salt, and pepper. Stir to combine. I used a whisk to thoroughly combine the coconut milk with the carrots. Heat through and serve with toppings. I used some quinoa, chickpeas, pepitas, a little plain Greek yogurt, a few sprigs of cilantro and a squirt of lime.
