Tumblr media
INGREDIENTS
2 boneless, skinless chicken breasts
2 cups broccoli florets
1 cup chicken broth
1 cup heavy cream
1/2 cup grated Parmesan cheese
2 tablespoons butter
2 tablespoons all-purpose flour
Salt and pepper to taste
Olive oil for cooking
INSTRUCTIONS
Preheat your oven to 375°F (190°C) and grease a baking dish with olive oil.
Season the chicken breasts with salt and pepper, then heat olive oil in a pan over medium-high heat.
Cook the chicken breasts until golden brown on both sides, then transfer them to the prepared baking dish.
In the same pan, melt butter and whisk in flour to create a roux.
Gradually pour in chicken broth and heavy cream, stirring constantly until the sauce thickens.
Add grated Parmesan cheese to the sauce, stirring until smooth and creamy.
Arrange broccoli florets around the chicken breasts in the baking dish.
Pour the creamy sauce over the chicken and broccoli, ensuring everything is evenly coated.
Cover the baking dish with foil and bake for 25-30 minutes, or until the chicken is cooked through and the sauce is bubbly.
Remove the foil and broil for an additional 2-3 minutes to brown the top.
Serve your Chicken Divan hot with your choice of sides.

How to make a Perfect Gravy
Introduction
Welcome to our definitive guide on making gravy! Whether you're a novice in the kitchen or a seasoned chef, mastering the art of gravy-making is essential for elevating your dishes to new heights. In this guide, we'll walk you through the step-by-step process of creating rich, flavorful gravy that will leave your guests asking for seconds.
Understanding the Basics
Before we dive into the recipe, let's take a moment to understand the fundamentals of gravy. At its core, gravy is a savory sauce made from pan drippings, broth, and thickening agents such as flour or cornstarch. It serves as the perfect accompaniment to roasted meats, mashed potatoes, and more.
Ingredients You'll Need
To whip up a batch of delicious gravy, gather the following ingredients:
Pan drippings from your roasted meat
Broth (chicken, beef, or vegetable)
All-purpose flour or cornstarch
Butter or oil (optional)
Seasonings (salt, pepper, herbs)
Step-by-Step Instructions
1. Prepare the Pan Drippings
After removing your roasted meat from the oven, transfer it to a serving platter and tent it with foil to rest. Meanwhile, place the roasting pan over medium heat on the stovetop.
2. Deglaze the Pan
Pour broth into the roasting pan, using a spatula to scrape up any browned bits stuck to the bottom. This process, known as deglazing, adds depth of flavor to your gravy.
3. Make a Roux
In a separate saucepan, melt butter or heat oil over medium heat. Gradually whisk in flour until a smooth paste, or roux, forms. Cook the roux, stirring constantly, until it turns a golden brown color.
4. Combine Ingredients
Slowly pour the pan drippings and deglazed liquid into the saucepan with the roux, whisking continuously to prevent lumps from forming. Allow the mixture to simmer and thicken to your desired consistency.
5. Season to Taste
Season the gravy with salt, pepper, and any additional herbs or spices of your choice. Taste and adjust the seasoning as needed.
Tips for Success
Use homemade broth for the best flavor, but store-bought broth works in a pinch.
For a richer gravy, incorporate cream or milk into the mixture.
If your gravy is too thick, thin it out with additional broth or water. Conversely, if it's too thin, simmer it longer to reduce and concentrate the flavors.
Conclusion
Congratulations! You've now mastered the art of making perfect gravy from scratch. Whether you're serving it alongside a holiday feast or weeknight dinner, your homemade gravy is sure to impress even the most discerning palate. Experiment with different herbs, spices, and flavorings to customize your gravy to suit any dish. Happy cooking!
