I wanted to try making pesto from my mortar and pestle, and while it was an interesting experience, it’s definitely not big enough to make the quantity of pesto I’m generally used to. I do want to look into some best practices because I’d like to get better at it, but in the meantime I won’t be giving up my immersion blender anytime soon.
The basil is all home-grown, and I supplemented it with some parsley because I like the flavor and it helps bulk up a pesto sauce nicely.

Pasta, pasta, pasta 🍝
How I was raised, food was important of course but never the main focus of the life or our days. We had nice meals together, mostly Sundays' lunches with soup, main dish and some sweet. During the week people were busy and children were at school were they ahd lunch themselves, so mothers didn't need to worry about every day cooking. 👩‍🍳
However, Italians think about it totally differently. They take cooking very seriously and take as a main event of their day. It is so amazing, these habit brings all families and friends together regularly. This is why I believe, pasta is one of the best meal option. Just take a big bowl of pasta, some delicious home made sauce and veggie if you want or meat and it is done. Easy to make a big amount of food with few ingredients and all of your many, many friends and family members can sit down and enjoy this meal. 😋 If there is some nice vine with it. 🍷

For a very long time, I was a bit wary of ravioli makers because I was dubious of how well they worked, and then I was served this video from Not Another Cooking Show (an excellent YouTube channel for food content, especially if you like pasta) in which the host makes ravioli de dauphine, which was having a moment because it appears on the dinner appetizer menu at Cafe Chelsea in the newly-reopened Chelsea Hotel in New York City. I used an Amazon gift card to treat myself to one of these molds, and I have to say: while the process of ravioli-making is still kind of tedious, I really like the results. You can either try to do them as sheets, like I did here, or you could press on the mold with the included pin to get 48 teeny-little ravioli. 
I’m still experimenting with this, specifically with doing a sort of Italian-Spanish fusion of ravioli and gambas al ajillo. I make a shrimp filling for the ravioli itself, and then finish the cooked pasta in a white wine and garlic sauce, finished with a flurry of parsley. It has possibilities, but I need more practice to get really good at it.
