Here's how to deal with your eggs more profeggsionally. Eggveryday.

Translation
«If your wish is to achieve a perfect egg a la coq, place it in cold water and begin heating it up. Remove it once it starts boiling. Done.
Whip your egg whites when making scrambling eggs. They'll grow in volume.
When you have to mix an egg yolk into a boiling liquid, dissolve it first in a little bit of water, milk or even cream to prevent it from coagulating.
To make your omelettes and scrambled eggs fluffiier and taller, add in a spoon of milk per egg.
Both white and brown shelled eggs have the same nutritional value [I'd never thought about it, but it's interesting to know!]
You recognise how fresh your eggs are by dropping them in a saline solution (125g of salt for 1L of water). A very fresh egg will sink to the bottom, an egg with more than 2 days stays in the middle, an egg with more than 4 peaks into the surface, and an egg with more than 15 is completely afloat.
If the shell of a boiled egg dries immediately as you take it from the water, that means it's a very fresh egg.
If you add lemon juice to the water the eggs are boiling in, that will prevent the yolk from turning greenish if you end up leaving them for longer than is necessary.
If you don't digest eggs so easily (in an omelette, scrambled, fried, etc.), squeeze some lemon juice over them to make their digestion easier.»

if youre egg free but not vegan do i have some good news for you (from your neighbourhood lacto-vegetarian!): any recipe with fewer than four or five eggs (meaning the base recipe, dont worry abt doubling etc) will probably work if you substitute 1 egg=1 tblsp of plain yoghurt or sour cream. if thats not enough, also use custard powder.
this applies to cakes, muffins, pastries, honestly most baked goods — give it a try other places, it’ll probably be fine!
in most recipes egg is a binding agent, not a flavour, so yoghurt/sour cream will do the trick!
this makes finding recipes wayyy easier — most recipes are either completely normal or completely vegan which both have their faults, so its pretty useful to just modify an existing something!

Tip 2: to make mashed potatoes easy style get enough small potatoes, fill pot till like. A third the way up with potatoes, cover with water (make sure it barely covered the potatoes), then lightly season with salt. Boil for about 20-40 minutes so they're tender as hell. Pulverize those fucks in a bowl (strained). Add seasoning to your liking (added salt, pepper, onion powder because I wasn't assed to reach for garlic powder, agave syrup / maple, cheese, sour cream. Loosen with water and add half and half (or better cream but. Didn't have it) to liking. Microwave that fucker then rapidly mix so the cheese strings)

auuggghg wauughh im dying from a deadly diseas. its called ate pizza and macdonalds and soy all in one day disease an d symptoms include exploding. u mgiht want to step back brother

I don’t know I think one of my pet peeves is people on the Funny Vintage Recipe Man’s videos on here going “ugh this is so stupid of course it works do you know anything about how flavor profiles work 🙄” because like. Here’s the thing. No. Not everyone does. Not everyone even knows how to cook. Even those of us with extensive cooking knowlege sometimes see this shit and go “logically I know it makes sense, but there’s no fucking way”. Stop being condescending.

Egg Scramble

EGG SCRAMBLE FOR 2
INGREDIENTS
4-6 eggs
sausages
shredded cheese
salsa
seasoning salt
salt
pepper
Italian seasoning
parsley
garlic salt
onion salt
hint of nutmeg
milk (optional)
avocado oil
Verde salsa
PREPARATIONS
Crack the eggs into a large bowl. (I use a batter bowl for easy pouring. cook the sausages (I get them pre-cooked and just heat them in the microwave), dice them once finished, and add in the cheese, salsa, and dry spices. Beat until the ingredients are mixed.
COOKING
Heat the pan. sprinkle the avocado oil over it in cris crossing patterns. sprinkle in some garlic salt, minced onion (optional), and a dash of salsa. Simmer until you can smell the aroma of the salsa. Add in your egg mixture and cook until the eggs are no longer runny. Stir often to prevent sticking and getting a solid egg (Unless you'd like to make it into an omelet then you can flip it whole.)
SERVING
I usually add more chees over the top and melt it. Then sprinkle on some parsley for garnish, and add some verde salsa or red salsa. Mix and enjoy.

Just made a quick egg sandwich today and it was so good that I want to write down the instructions for myself for the next time I'm in a pinch, and by 'pinch' I mean 'so hungry oh my god, it's 10 pm and I haven't eaten since 1 because I was out and ran out of food I'd carried with me'. So it's a quick and filling snack.
Put eggs to boil (longest task, may take 12-15m on full heat so do this first)
I'm lucky that right now I get to use my housemate's air fryer, otherwise toaster it is.
In the air fryer, were buttering a bread, and for extra pizazz, I happened to have sesame seeds from the last time I went to the Japanese fast food plade downtown. Amazingly, that's a thing. Sprinkled those on too because they taste great toasted. It's also absolutely times like these I aspire to someday own a panini press. Start toaster/air fryer. I'm moving in a couple of weeks and I think the thing I'll miss the most of the air fryer. And having a bit of leg room, that too.
eggs done? Remove the shell, smash in a bowl with a spoon or fork. Add some Mayo, pepper, salt, mustard. Mix.
Breads done! The butter has set in, the seeds are toasted. Spread egg spread, eat!
Ideas for next time:
Maybe throwing in boiled chicken
Chilli powder? Makes everything nicer.
Slight chopped onion if energy, but honestly it already tastes great.
That's it! Quick and filling thing. Now to eat actual dinner...
