what it is: an instant pot recipe of chicken breast seasoned and then pressure cooked in an instant pot in salsa, then shredded with forks.
difficulty level: beginner to intermediate - there's garlic mincing, but that can be replaced/skipped.
clean up: minimal - just the pot, cutting board for the chicken, and forks for shredding.
accessibility considerations: mincing garlic is difficult, but a garlic press can be used or that step can be skipped (what i did). recipe specifies how many chicken breasts but not size/weight. recipe has images, however they lack descriptions and i believe lack alt text. shredding could be difficult/painful for some people.
time upright: less than 20 minutes.
ending thoughts/notes: has potential. definitely not the right amount of salsa; i found i didn't have enough so my chicken was very dry; i'd double it if i were to make it again. it was a lot to shred too, so i recommend having someone help or doing smaller portions. the chicken didn't have enough seasoning, and it'd make more sense to add the taco seasoning to the chicken itself than just the salsa. i would recommend using a medium or hot salsa, as the mild salsa i used lacked flavor. the chicken was kind of flavorless overall. i would add lime, too, i think, lots of it.
however it's great how quick it is and the clean up is really is. minus the shredding, there's basically no work. you can do a lot with the leftovers too. not sure if i'd make it again but i think it's a good base recipe and would be great for people who like texmex recipes.
