Healthy White Bean Dip
As you know I am a huge fan of hummus. I love veggies and dip. With summer coming I can’t wait to get some fresh local veggies and try this new dip recipe I found! Thought I’d share <3

Ingredients 
2 15 oz. Cans Cannellini Beans drained and rinsed well
1/2 Onion roughly chopped
1/2 Teaspoon Cumin
Salt and Pepper to taste
1/2 Cup Olive Oil
1 Lemon juiced
2 Garlic Cloves
Directions 
1. Start by heating a pan over medium heat and add in your oil of choice.
2. Next, once the oil is hot, add in your diced onion, salt, pepper, and cumin and sauté for about 4-5 minutes, or until the onion starts to soften.
3. Then, remove the onion from the heat and add it to a high-speed blender or food processor along with the drained and rinsed cannellini beans, olive oil, lemon juice, and garlic cloves.
4. Blend / process for about 4 minutes, or until your desired consistency is achieved. If you desire a smoother consistency, you can blend for longer, or stop it earlier if you like a thicker texture.
5. Once done, serve with chips, veggies, or crackers, and enjoy! Store any leftovers in an airtight container in the fridge for up to one week.

I'm a big fan of trying things that scare you culinarily. It's how I learned that marshmallows are actually not as scary as you think.
This year, I decided to make a gluten free dairy free Buche de Noel. The frosting was made from the solids of chilled coconut milk, and it was a little soft for my liking. But it was good! And the sponge itself was really delicious, and the recipe wasn't overly sweet. So you could feel good about the slice you had and still reach for a Christmas cookie.
It was the process of rolling the sponge that scared me. You have to pull it from the pan, put it face down on a (non-terry) dish towel that's dusted with powdered sugar, and roll it while it's still warm. You let it cool while rolled up, then un-roll it, frost the inside and then re-roll it and place on the platter. And it was a fragile cake. So I was worried it was going to fall apart. But it didn't, and it was delicious.
Make sure you're using a coconut milk that's pretty fatty (so go with the full fat ones you can only get at Asian markets) and that you do indeed chill it overnight. I also chilled my mixing bowl to help, since it was warm in LA this weekend. And don't be afraid to add a little more sugar to the frosting if you think it isn't sweet enough.

I stumbled on this recipe and am 100% addicted! These cookies are so so so good!! 
I fully believe in the 80/20 rule, everything in moderation, and as Gigi Hadid once said “Eat clean to stay fit, have a burger to stay sane.” ;) Having said that, I always try to treat myself when I feel I need to or when I want to. 
I love love love this recipe because it’s so easy and it’s single serve meaning they’re always fresh and no left overs haunting me in the cupboard, lol. 
I love whipping this up and having it warm or storing it in the refrigerator to crumble on my morning oatmeal :) 
Like I said, so so so good! If you’re looking for a fun, feel good treat, I highly recommend trying this recipe. You’ll be so glad you did <3 
Single Serve Salted Tahini Cookie
Ingredients 
2 tbsp Tahini   1 Tbsp Milk   1 Tbsp Gluten Free Oats   1 Tbsp Honey   2 Tbsp Gluten Free Flour   Drop of vanilla   Pinch of baking soda and sea salt   2 Tbsp Chocolate Chips
Directions 
1. Mix together all ingredients in a small bowl. 
2. Line a small baking sheet with parchment paper and bake at 350 degrees for 10-12 minutes.
